Step 1
Add milk, sugar and yeast to the mixing bowl and warm up 2 Min. / 37°C / Speed 2.
Step 2
If you don’t have a Thermomix, place ingredients into a saucepan and warm up until it is lukewarm.

Add butter in small chunks, flour, egg and salt (in this order!) and knead until smooth on setting 2 Min. / .
Step 4
If you don’t have a Thermomix, place the milk-yeast mixture in a large mixing bowl. Add the butter in small chunks, add flour, egg and salt (in this order!) and knead until smooth. This process might take up to 10 minutes depending on your flour consistency and butter temperature.
Step 5
Cover the dough and leave to rise for 1-2 hours until doubled in size. Once risen, take the dough out of the bowl and place it onto a floured surface.
Step 6
Divide the dough into equal pieces, weighing 40g. Form balls and place them on a baking tray lined with greaseproof paper and dusted with flour. Cover with a tea towel and leave to rise of another hour.
Step 7
Place the caster sugar on a large plate.
Step 8
Fill the raspberry jam in a piping bag fitted with a long nozzle or a syringe.
Step 9
Meanwhile, heat a deep fat fryer, filled with sunflower oil, or a large saucepan to 175-180°C.
Step 10
Take 2 doughnuts at the same time and place them with the top side down in the fryer. Cook for 2 minutes on each side, then remove with a slotted spoon and immediately coat in the sugar. Fill them with jam as desired.
Step 11
Repeat with the rest until you are done. Enjoy your Thermomix jam donuts warm!
