This pretty salad - made with white, red and sweet potatoes - tastes as good as it looks. The mild dill dressing enhances the tender spuds and onion, especially if you refrigerate it overnight. Even those who don't like sweet potatoes like this salad.

Three Potato Salad

potatoes,

mayonnaise

white vinegar

I made this salad a few weeks ago and am happy to say that my wife wanted to know which restaurant her frequent take out ordering husband had ordered the potato salad from!!  :)

The only change I made is that I used the much stronger Surig German vinegar.

This is so good! I made it with absolutely no changes, a few hours ago and everytime I open the frig I have to take another bite and now I don't have enough for church potluck tomorrow dang it!Definitely a keeper!!

I made this potato salad for 2 pot lucks and a family gathering. Everyone loved it!  I will probably never make another kind.

This potato salad was a big hit at a family gathering. The only change I made was I roasted the potaatoes with olive oil and rosemary, then put together with dressing.

I have made this recipe numerous times!  When I take it to family gatherings or potlucks, I always get requests for the recipe!

I halved this and used one large sweet potato and several new potatoes (so it's only Two Potato Salad). I doubled the vinegar and added parsley. I made it a couple of hours ahead, but not the night before. Dad doesn't usually even eat potato salad, but he admitted it was good. The rest of us loved it.

<p>I used green onions instead of regular onions, and it was delicious! I'll be making this recipe over and over and over again!</p>
