Step 1
Add olive oil to a medium sized skillet and brown onions and garlic, stirring often.
Step 2
Meanwhile, place all remaining ingredients, with the exception of the shredded cheese and cilantro into your slow cooker and add onion/garlic mixture when browned.
Step 3
Cook over high heat for 7-8 hours or cook over low heat for 11-12 hours.
Step 4
Season to taste at the end of the cooking time and serve.
