Step 1
Wash the zucchini. Slice the zucchini into small round circles. Get a pinch of salt and sprinkle on each slice (on both sides). Let it rest for 5 minutes - zucchini will release water. Use a paper-towel to dab off the extra-moisture.
Step 2
Place zucchini in a Ziploc bag. Place flour into the bag and shake vigorously to get each slice thoroughly coated. Take out a mixing bowl and whisk eggs to make an egg-wash. Then shake-off excess flour from each zucchini slice and dip into the egg-wash.
Step 3
Pour oil into frying pan and put on medium low heat. Fry zucchini on both sides until light brown.
Step 4
For dipping sauce, mix soy sauce, vinegar and lemon together. Enjoy!
