Breakfast is hugely important in Filipino culture, a legacy of the country’s rich agricultural past, when farmworkers ate large morning meals to get through the day. Accordingly, the morning after Thanksgiving, the brothers Chad and Chase Valencia — who own the Filipino restaurant Lasa in Los Angeles's Chinatown — make breakfast sandwiches for their family out of leftover <a href="https://cooking.nytimes.com/recipes/1019757-asado">asado</a> (a salty-sour pork dish), ham or turkey. The sandwiches are endlessly customizable: Chase mixes the asado and its accompanying sauce into the eggs, like a scramble, to become the base of the sandwich, while Chad crowns his with a fried egg. But the constants are the queso de bola, a nutty Filipino cheese (similar to Edam cheese) served during the holidays that melts elegantly atop the meat, and pan de sal, a slightly squishy, yeasted roll whose sweetness stands up to all the savory components of the sandwich. Both the cheese and the pan de sal are readily available at many Asian grocery stores, and well worth getting to make superior sandwiches.

Heat a large cast-iron pan over medium heat. Slice the pan de sal in half and slather mayonnaise on both cut sides of the rolls.

Place cut sides down on the heated pan and toast until golden brown, about 2 to 3 minutes. (You may need to do this in batches.) Remove from pan and set aside.

In a small sauce pan over medium-low heat, reheat asado with enough sauce to bring to a simmer. Alternatively, if using ham or turkey, add 1 tablespoon butter and cook ham or turkey slices until brown on both sides, about 2 minutes each side. (You may need to do this in batches, adding more butter if necessary.)

When the asado comes to a simmer or while the ham or turkey is heating, fry the eggs in a separate pan: Heat a large nonstick pan on medium-low and add 1 tablespoon butter. Break eggs into pan and cook just until egg whites are fully set. Season with salt.

Assemble the sandwich: Place the meat on the bottom half of the roll and top with a slice of cheese, a fried egg and the top bun. Repeat with remaining sandwiches and serve.

An asado is a traditional barbecue that is popular in Paraguay, Argentina, Chile and Uruguay, which consists of beef, sausages, and other meats that are slow cooked on a grill, called a parrilla.

Season the meat with rock salt.

Slow cook the meat on a barbecue for a few hours.&nbsp;The meat must first be placed with the fat side down, and must be flipped only once.

Add the dried chiles to a large saucepan and add enough water to cover them by an inch. Bring to a boil, place lid on pan, turn heat to simmer and steam for 10 minutes. Drain and place in a blender along with the onion, garlic, oregano, cumin and allspice. Puree with 1 cup of water. Set aside.

In a bowl, toss the pork with salt. Preheat oven to 350°F (if baking).

In a large oven safe pot or Dutch oven heat the bacon fat or oil over medium high heat. Add the pork and brown on all sides, in batches if needed. Pour the chili puree over and stir to coat and mix thoroughly.

Cover the pot and either simmer on low for 2 hours or bake in oven at 350°F for 1 1/2 hours. Season to taste with salt if needed.

Serve garnished with cotija cheese crumbles and cilantro along with warm tortillas.

Filipino chicken asado is a dish that is both sweet and salty, using soy sauce, brown sugar and other spices. This version was slowly cooked to get that tender melt-in-your mouth goodness.

Sweet Chicken Asado

garlic (- minced)

onion (- chopped finely)

chicken thigh fillet

water

soy sauce

brown sugar

bay leaf

Hoisin sauce

In a deep pan or pot, heat oil over medium heat.  Add chicken, skin side down, and sear both sides until cooked and lightly browned. Remove from oil and cut into small cubes.

In the same pot with oil, saute garlic and onion until aromatic and lightly browned. Add back the cut chicken pieces.

Pour in soy sauce and add brown sugar and bay leaves. Cook until the sugar has slightly caramelized, then add water. Once it starts to boil, turn down the heat and simmer for 30-40 minutes or until the meat becomes tender--add more water if needed.

Once the liquids is reduced to a thick sauce and the meat is fork-tender. Add Hoisin sauce and season with pepper. Stir.

Transfer into a serving dish and serve with steaming hot rice.

SWEET CHICKEN ASADO

Schalotte

Koblauchzehen

Esslöffel Olivenöl

Handvoll Thymianblätter

Handvoll Oreganoblätter

Lorbeerblatt

Die Blätter der Petersilie abzupfen. Knoblauch und Schalotte abziehen und grob durchhacken. Alles mit der Hand im Mörser oder im Mixer zerstoßen. Mit dem Olivenöl auffüllen und nochmals kurz mixen. 

Die Limette halbieren und eine Hälfte reinpressen. Mit Salz und Pfeffer abschmecken. Dann die anderen Zutaten einmal grob durch hacken, mit den anderen Zutaten vermengen und nochmals aufmixen. 

Du kannst Chimichurri als Dip oder aber als Marinade für Ofenkartoffeln oder Steaks verwenden. Viel Vergnügen!

Lomo asado con naranja

kg cinta de lomo (fresca)

cebolla

diente de ajo

cda mostaza

cda miel

naranja

175 ml vino de oporto

Pimienta

Aceite de oliva

Pon el horno a precalentar a 180ºC, calor arriba y abajo.

Sazona el lomo con sal y pimienta. Dóralo en una sartén con un poco de aceite de oliva. Reserva.

Pela y pica la cebolla y los dientes de ajo. Sofríelos en la misma sartén donde has sellado la carne, añadiendo un poco más de aceite si fuera necesario.

Reserva 4 láminas finas de naranja y extrae el zumo de las dos naranjas y ralladura de una de ellas.

Cuando la cebolla está dorada añade el vino, la mostaza, la miel, la ralladura de una de las naranjas, el zumo de dos naranjas y un pellizco de sal.

Cocina la salsa durante 2 minutos, moviendo hasta integrar los ingredientes.

Pasa la salsa a un vaso batidor y tritúrala.

Pon en una fuente apta para horno el lomo. Cubre con la salsa triturada y las láminas de naranja reservadas. Riega con un poco de aceite.

Hornea 50 minutos, 180ºC, calor arriba y abajo.

Deja reposar mínimo 15 minutos y filetea.

Sirve en una fuente los filetes de lomo sobre la salsa de naranja.
