Pour the balsamic vinegar, olive oil, 2 tablespoons honey, Dijon mustard, dried thyme, and garlic clove in a jar. Season with 1/2 teaspoon salt and 1/2 teaspoon ground black pepper.

Arugula Salad With My Favorite Balsamic Vinaigrette

baby arugula

Make the vinaigrette by combining the olive oil, mustard, balsamic vinegar, honey, salt &amp; pepper in the bottom of your salad bowl. Stir to combine.

Add in the arugula and toss to combine.

Balsamic vinaigrette is the perfect dressing for almost every salad. This balsamic vinaigrette recipe is easy to make and strikes the perfect balance between tangy and sweet. Recipe yields just over 3/4 cup.

Favorite Balsamic Vinaigrette

In a liquid measuring cup or bowl, combine everything but the oil (the vinegar, mustard, maple syrup, garlic, salt and several twists of black pepper). 

Stir the mixture well with a small whisk or a fork until the ingredients are completely mixed together. While whisking, drizzle in the oil until it’s thoroughly combined. 

Taste, and adjust as necessary. If the mixture is too acidic, thin it out with a bit more olive oil or balance the flavors with a little more maple syrup or honey. If the mixture is a little blah, add another pinch or two of salt. If it doesn’t have enough zing, add vinegar by the teaspoon.

Serve immediately, or cover and refrigerate for future use. Homemade vinaigrette keeps well for 7 to 10 days. If your vinaigrette solidifies somewhat in the fridge, don’t worry about it—real olive oil tends to do that. Simply let it rest at room temperature for 5 to 10 minutes or microwave very briefly (about 20 seconds) to liquify the olive oil again. Whisk to blend and serve.

If you add some pomegranate juice to this it will be fantastic.

This is REALLY good!  Advice: Honey over maple syrup.  Pressed garlic over minced. Use the best extra-virgin olive oil you can afford. Give it a day for the flavors to meld.

I made this dressing and used 1 tblsp of black vinegar with 2 of balsamic it was excellent

Quick and easy strawberry goat cheese arugula salad recipe made with strawberry slices, crumbled goat cheese, arugula, red onions, spicy pecans, balsamic vinegar and olive oil.

¼ medium sized red onion (sliced)

Soak the red onion slices in cold lightly salted water until ready to use – this will help remove the bitterness.

Mix the balsamic vinegar with the olive oil and salt. The easiest way to do this is to put them in an airtight container and shake them until the ingredients are blended.

Strain the onions and mix them with the arugula and the balsamic olive oil dressing.

Layer the strawberry slices, goat cheese and spicy pecans on top.

Toss table-side and serve immediately.

Made with a handful of ingredients, this recipe for Balsamic Vinaigrette is slightly sweet, perfectly tangy, and exceptionally delicious. Perfect as a salad dressing, a dip, or marinade.

In a mini food processor or blender, combine all the ingredients. Blend or process until well combined and emulsified.

Store

Transfer the dressing to a sealed container and store for up to 2 weeks in the refrigerator.

Balsamic Green Bean Salad

green beans

cherry tomatoes

red onion

Make the dressing: in a small bowl, whisk together all dressing ingredients.

Trim ends off green beans and rinse. Steam (or boil) for about 3-4 minutes until crisp-tender. In a colander, rinse well with cold water to stop cooking, then pat dry. Cut green beans into 1 to 2 inch pieces.

Finely dice red onion.

Place onion and green beans in a bowl. Drizzle dressing over top and toss to coat.

Cover and refrigerate for at least an hour to marinate for best flavor.

When ready to serve, add diced tomatoes, vegan feta (optional) and lightly toss.

Roasted Pear Salad With Arugula, Walnuts & Gorgonzola

farro, dry ((how to cook farro))

pears ((Bosc, Bartlett, or Anjou))

olive oil ((to toss pears))

baby arugula ((rocket))

garlic powder ((or 2-3 cloves fresh garlic, minced))

Bring a pot of water to a boil and cook farro. I have a post all about how to cook farro on the stovetop, if you need some tips!

Preheat oven to 400F. Line a large baking sheet with parchment paper.

Leaving the skin on, slice pears into 8 even pieces, removing the core, seeds, and stem. Place on the baking sheet, then toss in 1 Tbsp of olive oil, salt, and pepper.

Spread pears out evenly on the baking sheet, then transfer to the oven. Roast for 12-15 minutes, until pears are lightly browned and tender enough to slide a fork through them easily. Remove from oven and allow to cool.

While the pears roast, make the balsamic dressing by adding all dressing ingredients into a jar with a lid. Shake together vigorously to mix. Alternatively, you could whisk the dressing together in a bowl.

To a large salad bowl, add arugula, cooked farro, baked pears, walnuts, and gorgonzola. Pour dressing overtop and toss to combine, seasoning with additional salt and pepper as needed. Serve + enjoy!

I cut back the maple syrup to 1 tbsp. Next time I make this I am also going cut the amount of oil because I found the 1/2 cup to be a little much. Otherwise this a good recipe.
