Recipe from a book called Let the Kids Cook and put out by a local supermarket and distributed in a show bag at the royal agricultural show.  Cooking time is chill time.  Please feel free to use fruits that are seasonal at the time or what you like, after all the basis is the yogurt and mueslie and the fruit the decoration and for health when using fresh, use what is seasonal.

Muesli Sundaes

strawberries

pineapple (small, peeled and diced)

muesli (toasted)

vanilla yogurt

Using four glasses (parfait are great), distribute half of the fruit between the four glasses.

Add a layer of yoghurt over the fruit and another of muesli.

Repeat layers and chill, then serve and enjoy.

Mmm, this is such a great dessert style breakfast! LOVED it! The yogurt goes so well with the crunchy muesli and fruit. Mmmm! This is so easy and so delicious.  I love cream cheese and strawberries, so when I saw this I had to try it.  Instead of using store-bought jelly, I had made some sugar-free strawberry freezer jam earlier and that's what I used.  Deeelightful!  This would be great for a tea party or just a bunch of gals getting together to chat.

Strawberry Bruschetta

(8 ounce) baguette-style French bread

(8 ounce) container cream cheese

honey

strawberries, sliced

strawberry jelly

Cut bread into 24 slices about 1/4-inch thick. Place in a single layer on an ungreased cookie sheet. Bake about 10 minutes or until lightly brown, turning once.

Stir together cream cheese and honey; spread on one side of each bread slice.

Heat jelly in a custard cup in a microwave oven on high power for 30 seconds; stir (or heat and stir in a small saucepan until melted). Brush jelly over strawberries.

Serve with a few whole berries to decorate the tray.

The ultimate mall fruity shake at home! I modified this recipe one day from one i found online. I have sensitive teeth so I don't like ice much anyway. Guaranteed not to give you &quot;slushie headache&quot;.

Slice up fresh strawberries until you have enough to fill a one cup measure.

Add to a blender or food processor, or if you only have a stick mixer, just put it in a large pyrex jug.

You may want to try this a little bit cooler for summer days, omit the water and add a few ice cubes.

I only leave out the ice cubes because my food processor can't handle hard ice.

Also it does tend to separate if you leave it sitting around for a minute, Don't let this put you off, just stir it up a bit, it tastes the same, just tends to be more frothy at the top then.

I tried this recipe with strawberries I had frozen along with a cup of vanilla ice cream and a cup of small ice cubes in place of the water.  It turned out cold and thick and was delicious!  My teenagers loved it.  Next time I'll make it using "Nutrasweet" in place of some of the sugar for myself.

I created this one day when my 4yo was tired of the same old snacks. This was all I had on hand but I was able to put it together and give it a cutesy name so my daughter loved it! This would also make a fun breakfast. You could even substitute raisins for the blueberries. Personally, I am not sure about the blueberry/peanut butter combo but hey, my daughter loves it and that's what counts!

This is such a nice little treat. YUM! I truly enjoyed the combination of nut butter (I used a chocolate hazelnut one) and banana with the fruit bits (I used raisins). Lemon Ricotta Pancakes With Warm Blueberry Compote

For the blueberry compote, in a saute pan, combine the blueberries, cornstarch, 1 cup sugar, water, lemon curd, orange juice, and a pinch of salt. Gently cook over medium heat until the blueberries are tender but not broken down, and the mixture simmers and thickens. Remove from the heat; stir in the butter and vanilla. Set aside to cool slightly.

For the pancakes, in a medium bowl, sift the flour, baking powder, salt, and sugar. Stir in lemon zest. Set aside. In a large bowl, mix the egg yolks and the cheese. Fold in the dry ingredients alternately with the milk. In a separate bowl, whip the egg whites until medium-stiff peaks form. Fold into the batter.

To complete the recipe, heat a buttered nonstick skillet or griddle over medium-high heat or to 350&ordm;F (water drops on the skillet should skitter or sizzle when hot). For each pancake, pour 1/4 to 1/3 cup batter and cook until bubbles form on top. Turn and cook until the bottom is golden brown and the pancake is cooked through.

To serve, stack three pancakes on each plate with a dollop of the remaining prepared lemon curd between pancakes. Sprinkle with confectioner&rsquo;s sugar and pour compote over the pancakes.

Wow! This is probably the most decadent breakfast I've ever made! I almost missed the part about putting the leftover lemon curd between the pancakes. Thank goodness I didn't! The pancakes are so light and fluffy and the blueberry compote is amazing with the lemon. Loved it!

Yesterday I was feeling adventurous and so I pulled a duck from the freezer and thawed it for the evening. Here's the recipe I came up with, a combination of a general roast duck recipe with a version of a spicy (peach, but I substituted lingonberry) basting sauce recipe that I've enjoyed in the past. The resultant duck was absolutely wonderful! Prep time includes marination. This is a Pantry Challenge recipe.

Lingonberry Roast Duck

5 1/2-6 lbs ducklings

lingonberry preserves

soy sauce

sherry wine

apple cider

garlic,

dried ancho chile powder

lemon juice

Tabasco sauce,

onion

scallion (green onion)

Rinse/wash and dry the duckling, removing any giblets, etc, that are inside (use the giblets to make an excellent broth, another time*- you can freeze them for later use, if necessary).

In a bowl, combine the jam, soy sauce, sherry, hard cider, garlic, lemon juice, and Tabasco.

Pour 1/2 cup of the jam mixture into the inside of the duck and roll the duck around to coat the inside; place on roasting rack in the roasting pan.

A quarter of a cup at a time and making sure all of the skin becomes wet from the glaze (and a good number of lingonberries remain on the skin of the duck), pour most of the rest of the jam mixture onto the duck, reserving about 1/4 of a cup; let the duck sit for 1 hour.

Remove the outer skin from the onion half, then cut it into quarters; stuff the duck with the onion pieces.

Combine the reserved lingonberry sauce with the honey; pour the honey/sauce over the duck (get some inside, too, and try not to dislodge too many lingonberries), then drizzle with sprinkle with the chopped green onions.

Roast covered at 350 degrees F for 1 hour, basting occasionally with drippings, then add the hard cider to the bottom of the roasting pan; roast un-covered an additional hour, basting occasionally.

Serve with rice pilaf or wild rice, and vegetables.

*Tomake an excellent dark broth: take 4 cups water, the giblets from the duck (neck, heart, liver, kidney), the onion that was inside the roasted duck, and the roasting pan drippings (and any leftover bits of roasted duck you're willing to use, such as the wings) and put it all in a crockpot on low for 8 hours; strain well and refrigerate for use within 3 or 4 days, or put into ice cube trays and freeze.

Note: you can substitute other types of berry jam for the lingonberry.

I cooked this for my fiancee's birthday and it it was a hit. I had to cook the duck longer than in the recipe but it came frozen and must not have thawed all the way out over night. The lingon berries go great with the duck too, it reminded everyone of Thanksgiving dinner. If you like duck you should try this out.

Cranberry Cake

Preheat the oven to 350°F. Lightly grease a 10-inch springform pan. (Or a collection of smaller pans -- this make 10 to 12 cups batter.)

Use a stand mixer or hand beaters to beat the eggs and sugar until very smooth and increased in volume. If using a stand mixer, beat on medium speed for 4 to 7 minutes with the whisk attachment. If using an electric hand mixer, beat on high speed for 6 to 8 minutes. The egg and sugar mixture will double in volume and turn very pale yellow, leaving ribbons on top of the batter when you lift the beaters.

Beat in the butter, vanilla, and almond extract, if using. Beat for 2 minutes or until the butter is smoothly incorporated.

Use a spatula to fold in the flour, salt, and cranberries. The batter will be quite thick. Spread gently into the prepared pan(s).

To prepare the optional pecan topping, melt the butter in a large sauté pan over medium heat. Add the sugar and stir. Add the pecans and cook for about 2 minutes, stirring, until the butter and sugar mixture is shiny and smooth and the nuts are well-coated with the butter and sugar. Spread over the cake batter.

Bake 60 to 80 minutes for the springform. For smaller pans, start checking after 30 minutes, but expect small loaves to take at least 40 minutes. Tent the cake with foil in the last 30 minutes of baking to keep the top from browning (this is especially important for the pecan topping).

Cool for 20 minutes then run a knife around the inside edge of the pan and remove the cake. Cool for an hour before serving.

The flavor of this ultrabuttery layer cake, adapted from Odette Williams’s “Simple Cake” (Ten Speed Press, 2019), can be as mild or pronounced as you like, depending on the variety of honey you use. Clover honey will give you something gentle and mellow, while more assertive buckwheat or chestnut honey have more depth. You can serve the cake plain, with dollops of the whipped cream on the side, for a casual gathering, or frost and fill it, adding berries or other fruit, for a more celebratory affair. It makes an excellent birthday cake.

Milk and Honey Cake

Heat oven to 350 degrees. Grease two 8-inch round cake pans, line the bottoms with parchment paper and grease the parchment.

Sift flour, baking powder, baking soda and salt into a large bowl.

In a medium bowl, stir together buttermilk, honey and vanilla.

Using an electric mixer fitted with the paddle attachment, beat butter on medium speed to break it up, then gradually beat in sugar, continuing to beat until very light and fluffy, 2 to 3 minutes.

With the mixer on medium speed, add eggs, 1 tablespoon at a time. If the mixture looks curdled at any point, add 1 tablespoon of the flour mixture to bind it back together.

Reduce mixer to low and mix in a third of the flour mixture. Scrape down sides of bowl with a rubber spatula, then mix in half the buttermilk mixture. Mix in another third of the flour mixture, scraping down sides of bowl, then mix in remaining buttermilk mixture followed by remaining flour. Scrape down bowl.

Scrape batter evenly into prepared pans and smooth tops with a spatula. Bake until the cake springs back when lightly pressed, and a toothpick inserted into center of the cake comes out clean, 30 to 40 minutes.

Transfer to a wire rack to cool for 10 minutes. Run an offset spatula or butter knife around edges of pan to loosen cakes, then unmold onto the rack, remove parchment and allow to cool completely.

Just before serving, whip the cream with a drizzle or two of honey, to taste (up to 2 tablespoons if you like it sweet). Frost the top of one cake, top with the remaining cake then frost the top of the stacked cake. Drizzle with additional honey and garnish with berries, if you like.

A mix of cherries and berries are baked into this soft, tender, and very moist cake. Cream cheese is swirled into the batter, adding tanginess and extra creaminess to the springy and lightly sweetened cake. No mixer is needed for this easy cake batter, which is as simple as making muffins. A mix of fresh or frozen fruit can be used, perfect for using up what’s seasonal or what you have on hand.

If using frozen, add the fruit frozen and do not thaw because frozen fruit runs and bleeds less than if  thawed. If using fresh fruit, baking time will be significantly (possibly drastically) less because the fruit is much warmer and won’t chill down the batter overall, nor will it release any where near the water into the batter that frozen fruit does.

Bake until center is slightly domed and set, golden and rosy in color, and a toothpick inserted in the center comes out clean or with a few moist crumbs, but no batter. I estimate 50 to 55 minutes is a good range if using frozen fruit. At any time your cake is beginning to look a bit too golden brown before you suspect the center will set up, tent it with a sheet of foil laid across the top. I baked for 52 minutes total, and at the 45 minute mark, I tented with foil. Baking times will range dramatically based on if baking with fresh or frozen berries; ranging from 30 to 60 minutes depending on the temperature of the berries going into the batter and how much water they release.

Cranberry Crumb Pie

Place 1 1/4 cups all-purpose flour, 1 1/2 teaspoons granulated sugar,  1/2 teaspoon baking powder, and 1/2 teaspoon fine salt in a medium bowl and whisk to combine. Place 1/4 cup ice water and 1 1/2 teaspoons apple cider vinegar in a measuring cup or a small bowl and stir to combine.

Cut 1 stick cold unsalted butter into 1-inch cubes. Add to the flour mixture and toss to gently coat them. Use a pastry cutter or 2 knives to cut the butter into the flour. You should have various-sized pieces of butter, ranging from sandy patches to pea-sized chunks, with some larger bits as well.

Drizzle in about half of the ice water mixture and stir lightly with a fork until the flour is evenly moistened and the dough starts to come together. If the dough seems dry, add a little more ice water 1 to 2 tablespoons at a time. The dough will still look a bit shaggy at this point. If you grab a small piece of dough and press it slightly with your hand, it should mostly hold together. 

Dump the dough out onto an unfloured work surface and gather it together into a tight mound. Using the heel of your hand, smear the dough a little at a time, pushing it away from you and working your way down the mass of dough to create flat layers of flour and butter.

Gather the dough back together with a bench scraper, layering the clumps of dough on top of one another. Repeat the process once or twice more; the dough should still have some big pieces of butter visible. Shape the dough into a disk and flatten it. Wrap in plastic wrap and refrigerate at least 2 hours or up to overnight.

Lightly flour a work surface. Place the dough on it and roll with a rolling pin into a 12-inch round that is 1/8-inch thick. Transfer the dough into a 9-inch pie dish, and relax the dough into shape of the pie dish, leaving a 2-inch overhang around the edge of the dish.

Crimp the crust: Start by folding the extra dough under itself. Use your index finger and thumb of one hand to crimp to create a letter C and push the thumb of your opposite hand against it, pushing gently into the pie dish as you crimp, working your way all around the edges of the crust. Make sure that your crimp is resting on the outer edge of the pie plate.

Freeze the crust for 10 to 15 minutes, and then define your crimp again so that it will hold its shape when baked. Freeze the crust while you make the topping and filling.  

Make the pie dough:

Melt 1 stick unsalted butter. Place 1 cup all-purpose flour, 1 cup rolled oats, 1/2 cup packed dark brown sugar, 1 teaspoon fine salt, and 1/4 teaspoon grated nutmeg in a medium bowl and stir with a fork until completely blended.

Pour in the melted butter and toss with your hands until the butter is incorporated, creating a crumble texture from small to medium-sized clumps. Once the mixture will hold different sized clumps in your hand when squeezed, it’s ready! Scatter the mixture onto a rimmed baking sheet in a single layer. Refrigerate 10 to 15 minutes to ensure it will hold its texture when it bakes.

Arrange a rack in the middle of the oven and heat the oven to 375 °F.  Place a parchment paper-lined baking sheet on a lower rack to catch all the juices that fall when the pie bakes. 

Make the crumb topping:

Place 3 cups of the cranberries in a food processor fitted with the blade attachment or a blender. Pulse a few times until lightly crushed. Transfer to a large bowl. Add the remaining 1 cup whole cranberries, 1 1/4 cups granulated sugar, 1 tablespoons cornstarch, 1/2 teaspoon fine salt, 1/4 teaspoon ground coriander, 1 teaspoon grated orange zest, and 1 tablespoon orange juice. Gently toss until combined. 

Pour the filling into the chilled crust. Top pie with the crumble, making sure you have various sized chunks on top to create texture. Bake on the middle rack until the crust is a deep golden brown and the juices are bubbling, about 1 hour. Let the pie cool on a wire rack 2 to 3 hours before serving.

Whip the cream and sugar together until soft peaks form. Stir in the wine, most of the lemon zest and the juice. Spoon into glasses or bowls, sprinkle with the remaining zest and serve with almond thins or berries.
