Baked ‘boiled’ eggs recipe

Scrunch up 12 squares (about 15cm x 15cm) of foil and place one piece in each hole of a 12-hole (1/3 cup capacity) muffin pan to create nests.

Place one egg in each hole. Bake for 25 minutes. Transfer to a bowl filled with iced water and stand for 5 minutes. Serve.

225 g self-raising flour

quinoa flour

40.00 gm coconut sugar

40.00 ml flaxseeds (linseeds)

82.50 ml seed mix (pepitas & sunflower)

bananas, mashed (you need about 1 cup)

eggs, lightly beaten

Preheat oven to moderate 180C. Line a large hole (Texas) muffin tin with 8 paper cases.

Combine self raising flour and quinoa flour, sugar, 1 tbs flaxseeds (linseeds) and 4 tbs seed mix in a large bowl. Make a well in the centre. Add the banana, eggs, Jalna and oil and mix until almost combined.

Stir through the blueberries. Spoon the mixture evenly between the muffin cases. Scatter with the remaining flaxseeds (linseed) and seed mix. Bake for 25-30 minutes or until lightly golden. Serve warm or cold.

Italy’s answer to the humble cream bun and Rome’s most iconic pastry, maritozzi are soft, sweet, brioche-style buns filled with a generously thick wedge of whipped cream.

Maritozzi (Italian cream buns) recipe

milliliters (1 cup) milk

(3 1/3 cups) fine Italian ‘00’ flour or bread flour

(1/4 cup) caster sugar

yeast

orange

milliliters (1/4 cup) extra virgin olive oil

honey

egg, separated

20.00 gm cold water

ctn thickened cream

(1/2 cup) icing sugar

Icing sugar, extra, to dust

Gently heat milk in a heatproof jug in the microwave until just lukewarm. Combine 100g (2/3 cup) flour, 1 1/2 tbsp caster sugar and yeast in a bowl. Add warmed milk and stir until combined. Cover with a clean tea towel and set aside in a warm, draught-free place for 20 minutes or until frothy.

Combine remaining flour, remaining caster sugar, salt and orange rind in a stand mixer fitted with a dough hook attachment. Add the milk mixture, oil, honey and egg yolk. Mix until just combined, then knead for 10 minutes or until smooth and dough pulls away from the side of the bowl. Transfer dough to a lightly greased bowl. Cover with a clean tea towel. Set aside in a warm, draught-free place for 1 hour or until doubled in size.

Line 2 large baking trays with baking paper. Punch back the dough and divide into 12 equal portions (approximately 75g each). Roll each portion into a ball. Place balls on the prepared trays, ensuring they are well spaced apart. Cover with a clean tea towel and set aside in a warm, draught-free place for 30 minutes or until doubled in size.

Step 4

Preheat oven to 200C/180C fan forced. Whisk egg white and water in a small bowl until combined. Gently brush dough balls with the egg white mixture. Bake for 15 minutes or until fully risen and golden. Leave buns to cool completely on the trays.

Step 5

Use electric beaters to beat cream, icing sugar and vanilla in a bowl until stiff peaks just form. Transfer to a piping bag and snip off the end.

Step 6

Use a serrated knife to cut down the middle of each bun, being careful not to cut all the way through. One at a time, open a bun slightly, being careful not to break the base. Fill the bun with the cream mixture. Use a palette knife or flat-bladed knife to scrape away any excess cream and achieve a smooth finish. Dust buns with extra icing sugar. Serve immediately. (1 cup) cornmeal (polenta)

30.00 gm caster sugar

Preheat oven to 220C or 200C fan-forced. Brush an 11 x 22cm (base measurement) (1.25L/5-cup) loaf pan with the olive oil to lightly grease. Lightly dust with flour and shake out the excess.

Sift flour, baking powder and salt into a bowl. Add the cornmeal and sugar. Stir until combined. Make a well in the centre. Add the milk, vegetable oil and egg. Use a wooden spoon to stir until well combined.

Pour the mixture into the prepared pan. Bake in preheated oven for 25-30 minutes or until a skewer inserted into the centre comes out clean. Set aside for 5 minutes before turning onto a wire rack. Serve warm or at room temperature drizzled with the honey.

Creating a sweet and speedy brekky is possible! Better yet, it starts with the humble crumpet.

(2/3 cup) bought vanilla custard

Golden syrup, to serve

Pour 2 tbsp vanilla custard onto the top of each crumpet. Use a knife to spread and slowly press the custard into the crumpet holes.

Place 2 stuffed crumpets in the air fryer basket. Cook at 180C for 10 minutes or until the crumpets are golden. Repeat with the remaining crumpets and custard.
