This creamy broccoli slaw is irresistibly tasty! It's easy to make using fresh broccoli or the packaged mix you can find in most grocery stores.

Classic Broccoli Slaw

carrots

mayonnaise (or vegan mayo)

apple cider vinegar

sugar

dill

celery seed

salt

Fresh black ground pepper

sunflower seeds (optional)

cranberries (optional)

For fresh broccoli &amp; carrots

Fit a food processor with the slicing blade. Cut the florets off of the broccoli, then feed them into the food processor to thinly slice them. Peel the stems of the broccoli and the carrots, then cut them into pieces to fit into the food processor. Change the blade to the grating blade and feed them through the food processor. Alternate method: Thinly slice the florets with a knife. Then use a box grater to large grate the peeled broccoli stems and carrots. 

Place the sliced vegetables (or bags of broccoli slaw) into a large bowl. In a small bowl, mix together the mayonnaise, apple cider vinegar, sugar, dill, celery seed, kosher salt, and several grinds fresh ground pepper.

Add the dressing to the vegetables and stir until coated. If desired, stir in sunflower seeds or dried cranberries. Eat immediately or refrigerate up to 2 days. 

Shredded broccoli is mixed with tart granny smith apples, chewy dried cranberries and crunchy sunflower seeds tossed in a simple creamy dressing!

Creamy Broccoli Slaw

lemon juice

cranberries

sunflower seeds

mayonnaise

vinegar

salt & pepper

Cut granny smith apple in half and remove seeds. Cut into fine julienne slices and toss with lemon juice.

Mix all dressing ingredients and set aside.

Combine all ingredients in a large bowl. Add dressing and toss to combine.

Refrigerate at least 1 hour before serving.

This easy broccoli slaw recipe is a delicious side dish! We love packing it up for picnics and serving it at summer cookouts. To get 3 cups of julienned broccoli stems, you&#039;ll need 1 very large or 2 medium heads of broccoli.

almonds (reserve some for garnish)

cranberries (reserve some for garnish)

Coleslaw Dressing (omit the celery seed)

In a large bowl, combine the broccoli stems, florets, carrots, cabbage, onion, almonds, and cranberries.

Drizzle with about ¾ of the dressing and toss to coat. Add more dressing, if desired. Garnish with the reserved almonds and cranberries and serve.

This broccoli slaw and chicken stir fry recipe is the easiest dinner EVER! Minimal prep, less than 30 minutes of cooking time, and quick cleanup. It's great for meal prep too!

Broccoli Slaw and Chicken Stir Fry

chicken breast

c. shelled edamame, thawed

olive oil

sea salt

black pepper

Tablespoons warm water

Tablespoons lime juice

olive oil oil

Tablespoons almond butter

Tablespoons honey

Tablespoons tamari

Tablespoon sriracha

red pepper flakes

t ginger powder

¼ t. Cornstarch

Preheat the oven to 375º and line a baking sheet with foil. Lightly grease the foil. Cut chicken breasts in half and place on the baking sheet. Season both sides with salt and pepper – about 1/2 teaspoon of each in total. Place into the oven and bake for 6-8 minutes. Flip the chicken and return to the oven for another 6-8 minutes. My chicken breasts were on the smaller side so they cooked relatively quickly.

Once the chicken is done cooking, roughly shred it and set aside.

Add all of the ingredients for the sauce into a mason jar and shake until it's smooth and combined. You can also add everything to a bowl and whisk to combine if you prefer.

In a large skillet, bring 2 Tablespoons of oil to medium heat. Add broccoli slaw to the skillet and toss to coat with oil. Cook for 10-12 minutes, tossing every few minutes. 

Add edamame, chicken, and sauce and toss to combine. (I recommend saving back 2-ish Tablespoons of sauce to add once your meal is plated!)

This is brilliant!  I would not have thought to use broccoli slaw in a stir fry, but why not?  I can't wait to give this a try!

Yum!  This is such a great idea for weeknight dinner.  That sauce sounds like the perfect nutty, savory, combo.  The idea of adding cornstarch is great!  I wouldn't have thought of adding a thickener but it adds so much to the texture!

Dijon mustard

In a large bowl, combine the chopped broccoli florets, julienned carrot, broccoli slaw mix, red onion, dried cranberries, sunflower seeds and fresh parsley.

In a medium bowl, toss the apple matchsticks with the lemon juice until well coated. Add to the bowl with the other slaw ingredients.

In a medium bowl, combine all dressing ingredients: mayonnaise (or plain Greek yogurt), apple cider vinegar, honey, Dijon mustard, salt and pepper. Whisk until well combined.

Pour the dressing over the broccoli slaw ingredients and stir to combine. Taste and adjust the seasonings, if needed. Serve immediately or chill in the refrigerator for up to 2 hours before serving. Stir to recombine everything before serving.

Asian Sloppy Joes

ginger

garlic (minced)

hoisin sauce (*)

soy sauce (or gluten free alternative)

tomatoes

lime juice

brioche buns (toasted)

Raw broccoli slaw (for garnish)

Shredded Napa cabbage (for garnish)

In a large skillet preheated to medium-high heat, add the butter, followed by the onion, garlic sauce, ginger, garlic clove, salt, and pepper.

Saute the veggies, stirring often until they are softened, or about 5 minutes.

Next, add the ground pork to the skillet, breaking up the pork with a wooden spoon. Cook the pork until it is no longer pink, or for about 6 minutes.

Then stir in the hoisin, soy sauce, tomatoes and lime juice.

Bring the mixture to a boil and then a simmer over low heat for about 20 minutes, or until sauce has thickened.

Once the sauce is at your desired consistency, ladle some of the sloppy joe mixture on top of a brioche bun bottom.

To give the sloppy joe some crunch, top it with raw broccoli slaw and/or Napa cabbage and top it with the remaining bun.

Repeat the process until all the sloppy joes have been assembled.

Asian Style Sloppy Joes

This broccoli slaw is my favorite summer dish to bring to a cookout or potluck! You can prep the entire thing ahead of time, it is so super crunchy and refreshing. It's the perfect side dish!

ramen noodles, (2 packs, flavor packet discarded)

green onions, (thinly sliced)

sesame seeds

avocado oil

rice wine vinegar

sesame oil

kosher salt and pepper

Place the broccoli slaw in a bowl. Crush the ramen noodles into pieces and place them in with the broccoli slaw. Add the green onions and the sunflower seeds. Sprinkle in the sesame seeds.

Place the oil, vinegar, toasted sesame oil, honey and lime juice in a blender or bowl with a big pinch of salt and pepper. Blend or whisk together until it’s smooth and combined. Pour half of the dressing over the broccoli slaw and toss it together well. Refrigerate for 30 minutes before serving.
