If you don't have Aleppo pepper, a pinch of cayenne, though much spicier than Aleppo pepper, would be a nice touch here.

Blistered Shishito Peppers with Avocado Crema

avocado

Heat the broiler to high. Line a sheet pan with foil. 

Combine the avocado, yogurt, lime juice, pinch sea salt, and pinch Aleppo pepper, if using, in a food processor. Process until completely smooth, scraping down the sides of the processor as needed. Taste. Add more salt or lime juice to taste. Spread this avocado crema over a large platter.

Spread the shishito peppers over a sheet pan. Toss with the 2 teaspoons olive oil and a generous pinch of salt. Spread into an even layer. Transfer pan to the broiler. Broil 2 minutes. Check. If shishitos are looking nicely charred, remove pan. If not, cook for another minute or until peppers look charred to your liking. Remove pan. Flip peppers. Return pan to broiler, and broil another 1-2 minutes or until charred to your liking. Watch the entire time to ensure they don&#8217;t blister beyond repair. 

Remove pan and tumble the peppers over top of the platter smeared with avocado crema. Sprinkle with Aleppo pepper and sea salt to taste. Serve immediately, passing more lime on the side if you wish.

I made this last night, and it was so delicious! My husband and I sat around the platter and devoured each pepper, then finished off the avocado cream with tortilla chips. A winner of a recipe.

This is one of those dishes where simple meets spectactular. Here, you make a simple avocado, Greek yogurt, and fresh lime juice purée in the food processor. Learn how to broil hamburgers for a juicy, delicious burger. Cooking hamburgers in the oven is an easy and quick way to make them any time of year, without a grill. Add cheese, your favorite toppings, and enjoy!

Burgers in the Oven (How to Broil Hamburgers)

Heat oven to broil and set the oven rack to the upper-middle position.

Line a grill or sheet pan with foil.

Divide the meat into 4 (4 ouncportions. Very gently, and without overworking the meat, form each portion into 4 loose balls. Place one ball on a dessert plate or other flat surface and gently press it down to make a disc about ½-¾ inch thick (your personal choice). Now gently turn the disc around while slightly pressing an indentation around the edge (kind of like a moat right inside the burger’s edge). This will keep the burger from developing a mound in the middle and your burger will remain flat while cooking. Place the burger on the prepared pan and repeat the process with the remaining portions of beef.

Season both sides of each burger generously with kosher salt and freshly ground black pepper, and place the burgers in the oven.

Broil 4 minutes or until the top has browned and beginning to char.

Flip the burgers over and broil until the center reads 155°F internally, about 3-4 minutes longer.

Top each burger with a slice of your favorite cheese, if desired, and cook just until the cheese melts.

Transfer the burgers to a cooling rack and tent with foil to allow time for the internal temperature to reach 160°F.

Serve the burgers on toasted buns and top with the condiments of your choice.

How To Broil Hamburgers

This is a variation of a favorite Tamar Adler recipe. I made a variation of her sweet potato salad last year, which I also love, but I find this one with delicata squash to be so incredibly delicious.

Roasted Delicata Squash with Chilies, Lime &amp; Cilantro

delicata

extra-virgin olive oil,

salt

shallot,

jalapeno

Preheat the oven to 400ºF. Rub a small amount of olive oil over a rimmed sheet pan. Throw the squash slices onto the sheet pan, drizzle with the 3 tablespoons of olive oil, and season generously with salt — squash can handle it. (For a full sheet pan, I use 2 teaspoons of kosher salt.) Arrange the slices into a single layer. Place pan in the oven on the middle rack and cook for 15 minutes. Pick one up to check.  Continue roasting until the undersides of the squash slices are evenly browned, then stick the pan under the broiler for 3 to 4 minutes or until the top is evenly golden—keep an eye on it the entire time. Remove pan from the oven and set aside.

Meanwhile, place the sliced shallot and jalapeño in a small bowl. Juice half of the lime over top. Season with a pinch of salt. Let it macerate while the squash roasts.

Arrange the squash slices on a platter. Scatter the macerated shallots and jalapeño over top. Scatter the cilantro over top. Serve with more lime wedges on the side.

Just fantastic! I added some fresh spinach at the end of the roast then added roasted seeds from the squash. My favorite seed to roast. Super easy.

If it does start to brown too quickly, lower the rack even further or if possible, turn the temperature down on your broiler. If your broiler is temperature controlled I would set it at about 400 to 425 degrees F.

Melt 1-1/2 Tbsp. butter; mix with cracker crumbs, Parmesan and herbs.

Add 1/2 Tbsp. of the remaining butter to medium skillet; cook on medium-high heat until melted. Add half the scallops; cook 1 min. on each side or until lightly browned on both sides. Remove from skillet; cover to keep warm. Repeat with 1/2 Tbsp. of the remaining butter and remaining scallops.

Melt remaining butter in same skillet on medium-high heat. Add onions; cook and stir 3 min. Stir in mushrooms and garlic; cook 5 min. or until mushrooms are tender, stirring frequently. Add wine and any liquid released from the scallops; cook 3 min. or until most of the liquid is absorbed. Whisk Neufchatel and milk until smooth. Stir into skillet; cook and stir 1 min. on medium-low heat. Return scallops to skillet; cook 4 min., stirring occasionally. Spoon into 4 (8-oz.) ramekins or 9-inch pie plate; sprinkle with crumb mixture.

Heat broiler. Broil scallop mixture, 6 inches from heat, 2 min. or until golden brown.
