I just made this tonight for the first time, and it turned out so great!  I used the entire can of peppers, and it was intense!  Made queso, guacamole, and had sour cream for sides.  Awesome, thank you!

One Pot Burrito Bowls

Medium Thick n’ Chunky Salsa

black beans

corn (, drained)

can diced tomatoes

can diced green chiles

jasmine rice

Tablespoon taco seasoning

chili powder

chicken stock (,

cheddar/jack cheese

S&P (to taste)

In a large pan, heat the olive oil over medium heat. Saute the onions and red peppers. Add in hamburger and cook until browned. Drain grease.&nbsp;

Stir in salsa, black beans, corn, tomatoes, green chiles, jasmine rice, taco seasoning and chili powder. Pour in chicken stock and then bring to a light boil. Cover the pan and reduce heat to low. Cook for an additional 15-20 minutes, or until the rice is all the way cooked.

When rice is done, S&amp;P to taste. Top with your favorite toppings. We like to serve over lettuce in a salad bowl and eat with tortilla chips. You can also use this mix to top over nachos or place in a tortilla to make burritos. We love using the leftovers to make stuffed bell peppers as well.

One pot Burrito Bowls

This Vegetarian Burrito Bowl is inspired by everyone&#039;s favorite Chipotle bowl. It&#039;s loaded with beans, rice, fresh produce, and Mexican toppings. This nutritious weekday lunch or dinner can be meal prepped on Sunday for the busy week.

Vegetarian Burrito Bowls

Cilantro Lime Rice (or plain cooked rice)

Beans (any kind)

Lettuce

Avocado (diced)

Salsa (or Pico de Gallo)

Fresh Cilantro (loosely packed)

Avocado Ranch Dressing

Lime

Place LETTUCE LEAVES into individual serving bowls.

Divide RICE, BEANS, AVOCADO, SALSA, CILANTRO, and LIME wedges over two bowls.Top with dressing, if desired.

Burrito Bowl Recipe 

Jasmine rice

(15 oz each) cans black beans,

corn

red onion, diced

red bell pepper,

both

cilantro leaves

tsp cumin

tsp kosher salt

tsp black pepper

semi-ripe avocado, chopped and sprinkled

salt and pepper

In a large serving bowl, combine all ingredients except for avocados. Gently toss ingredients together with a rubber spatula until well incorporated. Cover and chill in fridge for 30 minutes to 1 hour.

Add chopped avocados. If needed, add additional kosher salt and freshly ground black pepper to taste. Toss gently to mix well. Serve cold or at room temp. Leftovers can be chilled in airtight container for 1-2 days.

Enjoy zesty, perfectly seasoned ground beef and rice in a burrito bowl with avocado crema. Top with your favorite toppings such as Pico de Gallo, guacamole, Colby jack cheddar cheese, or sour cream. Ground chicken or chicken breast can also be used to make these burrito bowls.

Beef Burrito Bowl

½ pounds ground beef (Note 1)

onion powder

garlic powder

salt

½ teaspoon smoked paprika (Note 2)

can, fire-roasted diced tomatoes (Note 3)

can,chopped diced green chiles

can, black beans, drained and rinsed

frozen corn, thawed (Note 4)

avocado

plain Greek yogurt or sour cream

lime, juiced

cilantro

Tablespoons water (optional, if crema is thick)

Pico de Gallo

chopped cilantro

Colby jack and cheddar cheese

salsa

chopped green onions

Cook rice according to manufacturers instructions.

Heat a skilllet over medium heat, add ground beef to brown, about 5 minutes. Break up beef untill cooked through, there will be no pink will be in the meat.

Remove and discard any excess oil in pan.

Add to the cooked beef, dried oregano, onion powder, garlic powder, chili powder,salt, and black pepper, and smoked paprika. Stir to combine.

Mix in fire-roasted diced tomatoes, chopped green chiles, black beans, and corn. Increase heat to high, bring mixture to a boil.

Cover pot with a lid, reduce heat to a low.Simmer for 15 minutes to blend flavors and throroughly cook meat. Note: The meat is not incredibly spicy. If you prefer more spice, feel free to add a bit more chili powder.

After the meat simmers, taste for seasoning. Re-season if needed.

Serve in bowls with rice and your favorite toppings, avocado wedges, shredded cheese, sour cream, lime wedges, fresh chopped cilantro. Drizzle with avocado crema.

Burrito Bowl

In a blender, add avocado, Greek yogurt, lime juice, fresh cilantro, garlic, salt, and pepper. Blend to combine.

If mixture is very thick, add 1 Tablespoon of water and blend.

Taste for seasoning. Re-seaason if needed.

Refrigerate until ready to use. Serve drizzled on burrito bowls.

One-Pot Chicken Burrito Bowls

chicken breast

extra-long grain rice (uncooked)

14.5 oz can diced tomatoes (drained)

15 oz can black beans

smoked paprika

chicken broth

colby jack cheese (monterey jack or cheddar cheese)

kosher salt and pepper

tomatoes

green onions

sour cream

guacamole

Start by sautéing onions in 2 tablespoons of olive oil until they start to soften.

Season diced chicken with 1 teaspoon of kosher salt and 1/2 teaspoon of black pepper.

Add chicken to pan and cook over medium high heat until chicken has started to brown.

Move chicken to one side of pan. On the other side of the pan, add an additional tablespoon of olive oil and sauté uncooked rice for about 2 minutes, or just until some grains start to turn golden brown.

Stir in drained black beans, drained canned tomatoes, chicken broth, garlic powder, onion powder, chili powder, smoked paprika and cumin.

Bring to a simmer, cover and reduce heat to low.

Cook about 20 minutes, or until rice is tender.

Season with additional salt and pepper as needed.

Squeeze juice from lime over mixture and sprinkle with cheese, recover and let set for 2-3 minutes off heat to melt cheese.

Garnish with fresh tomatoes, green onions, sour cream and guacamole.

Cover with cling wrap and marinate at least 2 hours. Remove from fridge 30 minutes prior to cooking.

The healthy ground turkey burrito bowls are so easy to make and perfect for meal prep! They come together quickly and are great for a simple weeknight dinner!

Heat a large skillet over medium-high heat.

Once hot, add the avocado oil and then add the ground turkey. Brown the meat, breaking it up as it cooks.

Once the meat has started to brown, add the garlic and diced onion. Continue to brown the meat until it is no longer pink.

Next, lower the heat to medium and add the tomato paste, apple cider vinegar, ground cumin, chili powder, paprika, oregano, crushed red pepper flakes, salt, and arrowroot starch to ground meat. Cook for 1 minute until the spices are fragrant.

Add in the chicken broth and stir until well combined. Let the ground turkey simmer a bit in the broth until thickened and then remove from the heat.

Next, assemble the burrito bowls. Start with a bed of rice and then top with the ground turkey mixture, black beans, shredded lettuce, avocado, pico, sour cream, etc.

I completely underestimated this recipe - IT IS SO DAMN GOOD!! I used to always throw spices into meat and hope for the best but this recipe makes the meat taste out of this world good. I've used ground beef, ground pork AND ground turkey and they all turn out delicious. The cilantro rice is always a winner!

The seasonings on the meat tastes exactly like taco seasoning that you would buy pre-made … except BETTER!

The only thing that I didn't like about this recipe was that it made too much rice. Would make half a batch of the rice next time. Really good substitute for Chipotle.
