This spicy, savory and cheesy Chicken Fajitas Casserole is a staple chicken dinner recipe. It&#039;s such an easy way to make chicken fajitas that will have everyone asking for the recipe!

Chicken Fajitas Casserole

chicken breasts, (shredded)

green bell pepper,

red bell pepper,

yellow onion, (thinly sliced)

salt

cream cheese,

cheddar cheese

fajita seasoning mix

salt and fresh ground pepper, (to taste)

Preheat oven to 350˚F.  Lightly grease a 9x13 baking dish with cooking spray; set aside.  Shred the baked chicken breasts and then transfer to a large mixing bowl; set aside.

Heat olive oil in a skillet set over medium-high heat.  Add strips of peppers and onions to the hot oil; sprinkle with salt and cook for 4 to 5 minutes, or until softened. Stir frequently.  Remove from heat and add to the chicken. Set aside.

In a large bowl combine cream cheese, HALF of shredded cheese, fajitas seasoning mix, salt, and pepper; mix until thoroughly combined.

Add sour cream mixture to the chicken and peppers; mix until everything is well combined.

Transfer chicken mixture to previously prepared baking dish and sprinkle with remaining shredded cheddar cheese.

Bake for 25 to 30 minutes, or until hot and bubbly, and cheese is melted.  Remove from oven and garnish with chopped cilantro or parsley. Serve and enjoy!

Preheat oven to 350F and move the rack to the middle position. Grease a 9x13&quot; baking dish (I used Pam spray).

Add the rice, broth, ranch seasoning, and sour cream to the baking dish. Whisk it all together until smooth.

Place the chicken breasts on top and rotate them so they&#x27;re coated in the liquid. If you want, add some pepper on the top of each chicken breast.

Tightly wrap the baking dish with foil and place it in the oven.

Heat the oil in a large non-stick frying pan. Tip in the prosciutto and fry for about 2 mins until crisp. Remove with a slotted spoon, letting any fat drain back into the pan, and set aside. Put the onion, garlic and herbs in the pan and fry for 3-4 mins.

Spread the onion out in the pan, then lay the chicken breasts on top. Season with pepper and fry for 5 mins over a medium heat, turning the chicken once, until starting to brown on both sides and the onion is caramelising on the bottom of the pan. Remove the chicken and set aside on a plate. Raise the heat, give it a quick stir and, when sizzling, pour in the wine and let it bubble for 2 mins to reduce slightly.

Lower the heat to medium, return the prosciutto to the pan, then stir in the tomatoes (breaking them up with your spoon), tomato purée and mushrooms. Spoon 4 tbsp of water into the empty tomato can, swirl it around, then pour it into the pan. Cover and simmer for 15-20 mins or until the sauce has thickened and reduced slightly, then return the chicken to the pan and cook, uncovered, for about 15 mins or until the chicken is cooked through. Season and scatter over the parsley to serve.

8 oz herb-seasoned stuffing mix

Prepare Ingredients

Prepare all of the ingredients. Cut meat into small pieces, which will help you to cook the beef fully tender. Slice the cabbage into the thinnest possible slices. Mushrooms should also be cut into small, tiny pieces so they are easily spread over the dish. Add spices all into a bowl for easier cooking. And remember to grain the mozzarella or your favorite cheese with a grater. 

Brown Onions

Heat the skillet and add oil. Once the oil is hot, add onions and let them caramelize.

Add Beef

Once the onions are cooked, add pieces of meat and cook for approximately 10 minutes until all of the sides of the pieces are cooked. 

Add Mushrooms

Once the meat is brown from all sides, add mushrooms cut into small pieces and cook for another 5-10 minutes. 

Spices

When it is time to add spices, switch off the cooking process for this step. Some spices, especially sweet paprika, tend to burn very fast, and when added to cooking meat, they can change the taste. They become bitter. Once you add all the spices, mix them thoroughly into the meat and mushrooms.

Tomato Sauce and Mix

At the same time, add the tomato sauce and mix thoroughly. There is no need to add any of the liquid, be it water of broth, since cooking this casserole dish for longer, meat and cabbage will add more moisture, which will be enough for the dish. 

Add Cabbage and Cook

Now is the time to switch the heat on again. When the meat, spices, and sauce are thoroughly mixed, add top sliced cabbage, cover with the lid, set the cooking to medium-low and let it cook for approximately one hour. Depending on your beef size, you can adjust the cooking time accordingly. 

Fully Mix

Cheese and Bake

Once all the cabbage is fully mixed with beef, top it up with grated mozzarella and place it into the oven for 10 – 15 minutes. Here, you only need the mozzarella to melt and brown a bit. Watch out; baking cheese can turn beautifully melted to burned in minutes.
