Think of the Guacatillo sauce as a replacement for any classic creamy chicken salad sauce, but higher in fat and filled with tons of flavor. This simple recipe can be cross utilized as you see fit for your meal prep needs!

Keto Guacatillo Chicken

Preheat oven to 415F (215C). Dice the raw chicken into a medium bowl. Season with salt and pepper and mix with hands to evenly season chicken. Bake for 10 minutes and cool down completely.

Prepare the Guacatillo sauce as directed on the recipe.

In the same preheated oven, lightly toast the pistachios and slivered almonds for 5 minutes. Remove and let cool at room temp. Prep the Romaine hearts. Cut core, shock, and rinse. Halve the cherry tomatoes. Mix all ingredients in a bowl.

Divide the chicken in half and place it on top of two Romaine lettuce leaves. Sprinkle a small amount of paprika for color and garnish. Store in an airtight container.

For exact macros: Weigh 4 ounces of the diced chicken in a bowl, add 2 tablespoons of the Guacatillo sauce, 1 tablespoon of pistachios, 1 teaspoon of slivered almonds, and a few halved cherry tomatoes. Mix gently to fully incorporate the sauce into all ingredients. Top with 1 teaspoon of the crumbled cotija cheese. Sprinkle a pinch of paprika for color on top of each wrap.

Lettuce Asian salad

Whisk together sauce ingredients until well combined. If you use a firmer peanut butter you may need to microwave the mixture for 30-60 seconds in order to melt it and ensure everything is well-mixed.

Heat 2 TBS peanut oil in a frying pan. Once hot, add ground chicken.

Cook until some pieces are starting to brown. Add onion and cook for 5 minutes or until the onion is becoming translucent.

Add the peppers and water chestnuts and cook about 5 minutes or until peppers are becoming soft.

Add sauce and simmer on low heat until the chicken and veggies are evenly coated and everything is heated through.

Serve in lettuce leaves, on top of your favorite Asian salad, or over noodles or rice!

Make Sauce

Whisk together all the ingredients listed under sauce and set aside

Saute Aromatice

Heat oil in a pan and add ginger, garlic and onions. Saute for about two minutes and add the carrots. Cook the carrots for another two minutes.

Cook Chicken

Add bell peppers and cook for another minute on high heat and then add the ground chicken. Brown the chicken on high for 2 minutes. Add the sauce and mix and let this cook for 3-4 minutes till the liquid dries up and the chicken is cooked through

Serve

Spoon the filling on a lettuce , make a wrap, top it with spring onions and eat immediately!

Instant Pot Chicken Lettuce Wraps recipe

Make sure the stainless steel insert is in your Instant Pot. Press "saute" setting and wait 1 minute. Add vegetable and sesame oil to insert and let heat up.

Add ground chicken to Instant Pot and cook, breaking down with wooden spoon. Season with salt and pepper. Add onion and garlic. Cook until chicken is no longer pink. Press "cancel/off" button.

Add 1/4 cup of chicken broth and deglaze the bottom of the pot.

In a small mixing bowl or measuring cup, whisk together hoisin sauce, soy sauce, sesame oil, vinegar, ginger and sweet chili sauce. Pour mixture over chicken and stir well.

Close the lid, set valve to sealing position (newer models do it on their own). Make sure the IP is set to cook at HIGH pressure. Press "manual" setting and set timer to 4 minutes.

When the timer is done, let the pressure release naturally for at least 10 minutes.

Carefully open the lid away from your face. Stir chicken.

Add chopped water chestnuts to chicken and stir.

Place up to 1/4 cup of mixture onto each lettuce leaf. Serve immediately.

Place marinade ingredients in a bowl and mix well. Add chicken and stir to combine. Set aside.&nbsp;

For the Marinade:

Combine all of the sauce ingredients and mix until smooth.&nbsp;

Heat 1 Tbsp. of olive oil in a large skillet or wok.  Add the chicken mixture and stir fry 2-3 minutes.&nbsp;

Push the chicken to the side of the pan and add the bell pepper, ginger, green onions, and water chestnuts. Stir fry 1-2 minutes.

Add the sauce and cook over medium heat, stirring as needed, until thickened.&nbsp;

Serve in lettuce cups, topped with sriracha hot sauce, if desired.

Chicken Club Lettuce Wrap Sandwich

Place the parchment paper down on your work surface.

Layer 6 to 7 large leaves of lettuce in the middle of parchment paper so that you create a lettuce base about 9 inches by 10 inches.

Spread the mayo in the center of the lettuce wrap.

Layer with the chicken or turkey, bacon and tomato.

Starting with the end closest to you, roll the lettuce wraps jelly roll style using the parchment as your base as tight as possible.

Halfway through rolling, tuck the ends of the wraps towards the middle.

Continue to roll the lettuce wrap, keeping it as tight as possible and using the parchment paper to guide you.

When it is completely wrapped, roll the remainder of the parchment around the lettuce tightly.

Using a serrated knife, cut the lettuce wrap almost completely, leaving a small piece of the parchment intact to help hold it together.

Slow Cooker Asian Chicken Lettuce Wraps

Place ground chicken and garlic in a large microwave safe bowl. Microwave mixture, stirring occasionally, until chicken is no longer pink, about 5 - 6 minutes. Drain off liquid and pour mixture into a 5 - 7 quart slow cooker.

Add bell pepper, onion, hoisin sauce, soy sauce, 1/2 tsp salt and 1/2 tsp pepper and toss mixture. Cover and cook on low heat 2 - 3 hours until chicken is tender.

Stir in water chestnuts, cooked rice, green onions, rice vinegar, and sesame oil, cook until heated through 3 - 5 minutes. Season with additional salt as desired. Separate iceberg lettuce leaves and serve with chicken filling.
