The simplest of desserts, this softly set pudding is prepared with only five ingredients: cream, milk, sugar, gelatin, and vanilla. Although the name translates as cooked cream, the dessert is actually only warmed, not cooked. Cream, milk, sugar, and vanilla are heated, but just as the cream is about to boil, it is removed from the stove, and the gelatin is whisked in. The panna cotta is then preferably strained to make it as smooth as possible and poured into, traditionally, caramel coated molds, which are then kept in the freezer for two to three hours until the puddings have set. For serving, panna cotte are unmolded, each onto an individual plate, and can be garnished with some fresh fruit.

Add your chocolate into a heatproof bowl and melt over a double boiler. Once it is melted, leave too cool until it is at room temperature.

While the chocolate is cooling, blow up the water balloons to the size you want your bowls to be and tie them off.

Line a flat baking tray with baking paper.

Once your chocolate has reached room temperature, hold a balloon at the top and begin to dip the bottom in chocolate. Swirling it around so it has a good layer of chocolate and the chocolate comes a third to halfway up the balloon (depending on how big you blew them up).

Gently move the balloon to the lined baking paper, holding it there until the chocolate slightly drips to create a base for the bowl.

Repeat until you have used all of your balloons.

You should have a little leftover chocolate and scattered space on your baking tray. With this, make little bunny faces and ears placing puffed quinoa as the eyes of the face.

Place the baking tray into the freezer for 20-30mins.

Once set, remove balloons from freezer. Press around the sides gently, breaking the seal between the balloon and the chocolate. Then lightly pierce the balloon with a knife and slowly release the air from the balloon, removing any excess balloon.

Fill balloons with ice cream and top with the little bunny faces. Serve immediately. (Leftover bowls will store in your freezer in an airtight container for up to 5 months.)

Shrimp Pasta Salad

salad shrimp (thawed and patted dry,

celery (about 2 stalks)

red bell pepper

peas (thawed)

green onions (finely chopped (about 1/4 cup))

dill

Greek yogurt

lemon juice (from about 1/2 lemon)

honey

white vinegar

Dijon mustard

salt

black pepper (plus additional to taste)

cayenne pepper

Cook the pasta to al dente according to the package instructions. Drain in a colander, then rinse with cold water to stop the cooking. Shake off as much water as possible. Let the colander with the pasta sit in the sink or on a towel to continue draining while you prepare the rest of the salad.

In a small bowl or large measuring cup, whisk together the dressing ingredients: Greek yogurt, lemon juice, honey, white vinegar, Dijon, salt, black pepper, and cayenne pepper.

In a large serving bowl, place the shrimp, celery, bell pepper, peas, green onion, and dill. Shake the pasta once more, then add it to the bowl. Drizzle with the dressing and stir gently to combine. Taste and adjust the seasoning as desired.

If time allows, place the pasta in the refrigerator and chill for 1 hour prior to serving. Enjoy directly from the fridge or at room temperature.

This easy, no bake cheesecake is traditionally served during Easter in Russia and other Slavic countries. It is quick to make but takes a few days to mold in the refrigerator. It is definitely worth it!

Paskha (Russian Easter Cheesecake)

(100 g) soft butter

(0.5 dl) sugar ((or more to taste))

lb (400 - 500 g) fresh cheese, homemade or store-bought ricotta

(0.5 dl) sour cream

Strain

If the cheese is wet, strain overnight in the refrigerator using a cheese cloth, kitchen towel or coffee filter.

Beat

Beat butter and sugar until light and fluffy.

Process

Push the egg yolks and cheese through a strainer placed over the bowl (not really necessary when using store-bought ricotta).

Add sour cream and vanilla, then beat until combined.

Mold

Fold in raisins and lemon zest, adjust the flavor with sugar or lemon as needed, then transfer to a cloth-lined mold (anything with holes or open bottom works, as well as a paper towel or coffee filter if you lack an appropriate piece of fabric).

Leave to strain in the refrigerator with a light weight on top for 2 - 3 days.

Decorate

Decorate with colorful sprinkles, candies or edible flowers and serve, preferably with Kulich bread (my recipe here).

This recipe was adapted from cuisine.larousse.fr and shows how to make a traditional &icirc;le flottante which consists of one large piece of ring-shaped meringue floating in a bowl of vanilla custard.

Mandarin Quinoa and Kale Salad

oz chickpeas drained (15 ounce can)

butternut squash

mandarin orange (juiced)

kale (stemmed chopped)

Cook quinoa according to the package. When quinoa is cooked, spread it onto a large platter or sheet pan and place it in the refrigerator to cool.

Preheat oven to 400 degrees F. Roast butternut squash by tossing in 1 teaspoon olive oil, sprinkling with salt and smoked paprika, and roasting for 20 minutes on a sheet pan, turning once halfway. Let cool as you prepare the other ingredients.

Make dressing by combing 2tbsp olive oil, juice of 1 mandarin and two limes. Add a pinch of salt and fresh ground black pepper to your liking.

In a large bowl add the kale, 1 pinch of salt and 1 tsp olive oil and massage through the leaves for 2-3 minutes until tender and relaxed.

In the large bowl with the massaged kale, put chilled cooked quinoa, chickpeas, bell peppers, roasted and cooled butternut, avocado and mint or cilantro.

Pour dressing over the top and mix well.

Enjoy within 3 days when covered tightly and stored in the refrigerator. The avocados will be preserved because of the lime and orange dressings.

This fresh and delicious chickpea tahini salad is perfect for sandwiches, toasts, crackers or on a bed of greens. It is satisfying and filling yet light and perfect for a no-cook summer meal.

Chickpea Tahini Salad

oz chickpeas (canned, drained)

cherry tomatoes (diced)

Persian cucumbers (diced)

tbsp cilantro (chopped)

tsp maple syrup

lemon (juiced)

tbsp sesame tahini

Put 1/2 the can of chickpeas in a large bowl. With the back of a fork, mash the chickpeas until they are course and mealy. Stop before you make them into a paste. Then add in the other half of the chickpeas and keep them whole.

To the bowl, add the tomatoes, onions, cucumbers, and cilantro.

Make the dressing by combining tahini, lemon, water and salt and mixing until well combined. It will be smooth, fairly thick and creamy.
