This is not your ordinary recipe for pickles. This is an Asian-inspired, sweet and sour, and spicy recipe for pickled easy cucumbers! With just a few recipes, you can create simple yet original pickles that you can serve with everything: salads, burgers, tacos, nachos, soups, side dishes...

Spicy Sweet and Sour Pickled Cucumbers

qukes, Lebanese or English cucumbers (thinly sliced, with the skin on)

large shallot or red onion (thinly sliced)

white rice vinegar (seasoned

white granulated sugar

tsp salt

tsp chilli flakes

ginger

Using a mandoline or a very sharp knife (be very careful when using the sharp knife!) slice your cucumbers and a shallot or red onion. Push it to the bottom of a clean pickling jar and set aside.

In a bowl, mix together rice or apple cider vinegar, white sugar, salt, chilli flakes, and fresh ginger. Stir until all sugar and salt is fully dissolved.

Pour the brine over the cucumbers and shallot in the jar. Make sure they are fully covered with the brine.

Let it sit for at least 30 minutes before eating. Serve as a side dish or on your burgers, tacos, nachos, pizzas etc.

Once open the jar can be stored in a fridge for up to 1 week.

Spiced carrot & lentil soup

tsp cumin seeds

olive oil

carrots,washed

split red lentils

1l hot vegetable stock(from a cube is fine)

milliliters milk(to make it dairy-free, see 'try' below)

plain yogurtand naan bread, to serve

Heat a large <a href="https://www.bbcgoodfood.com/content/five-best-saucepans">saucepan</a> and dry-fry 2 tsp cumin seeds and a pinch of chilli flakes for 1 min, or until they start to jump around the pan and release their aromas.

Scoop out about half with a spoon and set aside. Add 2 tbsp olive oil, 600g coarsely grated carrots, 140g split red lentils, 1l hot vegetable stock and 125ml milk to the pan and bring to the boil.

Simmer for 15 mins until the lentils have swollen and softened.

Whizz the soup with a <a href="https://www.bbcgoodfood.com/content/top-five-hand-blenders">stick blender</a> or in a <a href="https://www.bbcgoodfood.com/content/test-five-best-food-processors">food processor</a> until smooth (or leave it chunky if you prefer).

Season to taste and finish with a dollop of plain yogurt and a sprinkling of the reserved toasted spices. Serve with warmed naan breads.

Serve as a sensational side dish or as a vegetarian main at your next dinner party.

(75 grams) unsalted peanuts

milliliters sunflower or peanut oil

Kids love this rich, warming soup but it's sophisticated enough for adults, too

Honeyed carrot soup

tbsp butter

leeks

carrots

tsp clear honey

dried chilli flakes (optional)

bay leaf

vegetable stock

soured cream or yogurt

Melt the butter in a large saucepan over a medium heat. Add the leeks to the pan, then cook for 3 mins until starting to soften. Add the carrots, honey, chilli (if using) and bay leaf, then cook for 2 mins.

Pour in the stock, bring to the boil, then simmer for 30 mins. Blend the soup in batches, return to a clean pan, then season to taste. When ready to serve, bring back to a simmer, then ladle into mugs. Add a swirl of soured cream or yogurt and serve with garlic bread or bacon butties.

(770 grams) chicken thigh fillets, trimmed

2½ tsp smoked paprika (pimenton)
