Homemade Eggnog

sugar

heavy whipping cream

milk

nutmeg

salt

vanilla extract

cinnamon (, for topping)

Whisk the egg yolks and sugar together in a medium bowl until light and creamy.

In a saucepan over medium-high heat, combine the cream, milk, nutmeg and salt. Stir often until mixture reaches a bare simmer.&nbsp;

Add a big spoonful of the hot milk to the egg mixture, whisking vigorously. Repeat, adding a big spoonful at a time, to temper the eggs.&nbsp;

Once most of the hot milk has been added to the eggs, pour the mixture back into the saucepan on the stove.&nbsp;

Whisk constantly for just a few minutes, until the mixture is just slightly thickened (or until it reaches about 160 degrees F on a thermometer). It will thicken more as it cools.

Remove from heat and stir in the vanilla.

Pour the eggnog into a pitcher or other container and cover with plastic wrap.&nbsp;

Refrigerate until chilled. It will thicken as it cools. If you want a thinner, completely smooth consistency, you can add the entire mixture to a blender with 1 or 2 tablespoons of milk and blend until smooth.

Serve with a sprinkle of cinnamon, and fresh whipped cream, if desired.

Store homemade eggnog in the fridge for up to one week.

A hot cup of homemade Wassail is one of my favorite holiday drinks. It's a delicious hot cider drink that combines the flavors of orange and apple with cinnamon and spices.

Hot Wassail

apples

apple cider

orange juice

lemon juice

Poke the whole cloves into the apples on all sides.&nbsp;

Add all of the ingredients, including the apples, to a large pot over medium low heat.&nbsp;

Bring to a simmer. Simmer for 30-45 minutes.&nbsp;

Remove the apples and whole cloves. Ladle into mugs and enjoy!

Warm the milk in a sauce pot over low heat. Meanwhile, in a small bowl, whisk together the cocoa powder and syrup for a couple minutes until combined. Drizzle into the milk and stir to dissolve.&nbsp;

Delicious! I added extras though!! More honey, 2 extra cinnamon sticks, 2 more cloves, and a pinch of Allspice.

I added a bit more honey to level out the strong spices. Great recipe.

Make perfectly spiced mulled wine at Christmas with our easy recipe. Use a good quality red wine like an unoaked tempranillo or try a twist with a dash of sloe gin

Classic mulled wine

Put the red wine, cinnamon, star anise, cloves, lemon zest and sugar in a large pan. Cook on a low heat for 10 mins.

Remove from the heat and cool, leaving to infuse for about 30 mins.

To serve, heat without boiling, stir in the sloe gin (if using, see tip below) and pour into mugs or heatproof glasses.

The Merry Mocktail

rosemary simple syrup

pomegranate juice (cranberry juice is a good sub)

Heat the water, sugar, rosemary, and cloves in a saucepan over medium high heat. Bring to a low boil and let everything simmer for 5-10 minutes until the sugar has fully dissolved. Pour through a fine mesh strainer to remove the cloves and rogue rosemary leaves. Transfer to glass jars and store in the fridge for 2 weeks. (I often stick a sprig of rosemary in there so it keeps getting more intense.)

Pour your desired ratios of rosemary syrup, pomegranate juice, and limey bubbly water over an ice ball into a glass. Stir gently, taste and adjust, and enjoy. 

Boiled Custard is a traditional holiday drink that is enjoyed in the South every Christmas. Cheap and easy to prepare, this is a family favorite!

Boiled Custard

500 milliliters (2 cups) double cream

500 milliliters (2 cups) whole milk

vanilla

whipped cream

Combine the cream, milk and vanilla in a saucepan. Bring to the boil then remove from the heat.

In a large bowl, whisk together the sugar and egg yolks, until the mixture has gone pale in colour and doubled in size.

Temper hot milky mixture into the sugar yolk mixture, by slowly adding hot milky mixture about 60ml (1/4 cup) at a time, whisking to distribute heat. Once half of the milky mixture has been added, transfer mixture back into the saucepan with the remaining milky mixture.

Place the saucepan over low heat. Stir continuously until mixture reaches nappé consistency, or 80°C (180°F) on a kitchen thermometer.

Remove from heat and pour the custard into a large mixing bowl. Place the bowl into icy water and stir until the custard has cooled.

Once it has cooled to a suitable temperature, it is ready to drink.

For an added touch, top with whipped cream and grate nutmeg over the top. Enjoy!

Cranberry Old Fashioned

fresh-grated orange zest

To make the cranberry simple syrup

In a medium saucepan over medium-high heat, bring all simple syrup ingredients to a boil, stirring occasionally. Reduce heat to a simmer; cook, stirring occasionally, for 10 minutes or until sugar is dissolved, cranberries have burst and mixture is very slightly thick and red in color. Remove from heat; steep mixture for another 10 minutes, then use a fine-mesh sieve to strain syrup into a jar with a tight-fitting lid. Cool completely at room temperature, then store in refrigerator for up to 2 weeks.

To make one cocktail: Add bourbon, cranberry simple syrup and bitters to a cocktail glass; stir for 10 to 15 seconds, then top off with ice. Garnish with fresh cranberries and a twist of orange.
