This easy cilantro lime dressing is great to have on hand in the fridge for topping onto salads, tacos, or burrito bowls. To make it creamy, add 1/2 avocado or Greek yogurt to the base recipe!

Cilantro Lime Dressing

cilantro

garlic

lime juice

In a food processor, place the cilantro, garlic, lime juice, maple syrup, coriander, and salt and pulse to combine. With the blade running, pour in the olive oil and process until smooth.

Make it creamy (optional) - blend with 1 avocado or ½ cup plain whole milk Greek yogurt

Avocado Black Bean Corn Salad

15 oz cans black beans

avocados

cherry tomatoes (, halved)

red onion (, diced)

cilantro (, rough chopped)

lime juice (, more if desired)

olive oil (, extra virgin)

agave ((or any sweetener))

chili powder

sea salt (, more to taste)

In a small bowl, whisk the lime juice, olive oil, agave, cilantro, chili powder, granulated garlic, ground pepper, and salt.

Place all the veggies in a large bowl (except the avocado) and pour the dressing over them.&nbsp;Toss gently to combine well.

Add the avocado on top and toss gently or just leave them on top. Taste for seasoning and add more if needed.&nbsp;

Serve immediately with fresh pita bread, tortilla chips or a side of rice. Enjoy!

Nothing beats homemade creamy cilantro lime dressing. It's fresh, vibrant, easy to make in 5 minutes, and tastes better than store-bought salad dressing. 

Creamy Cilantro Lime Dressing

Greek yogurt, divided

lime juice,

fresh cilantro, chopped

garlic,

honey

oregano

salt

Place 1/4 cup Greek yogurt along with all remaining ingredients into a food processor of blender. Pulse mix until combined and blended. You do not want to blend it completely smooth as you want to keep the dressing slightly textured with bits of cilantro visible.

Transfer the dressing to a small bowl and add remaining 1/4 cup of Greek yogurt. Stir with a spoon until combined. Adjust with more salt or honey to taste, if needed.

Store dressing in an airtight container or mason jar in the refrigerator for up to 1 week. Use as desired over your favourite salads. 

Healthy Chicken Burrito Bowls with Cilantro-Lime Dressing

plain Greek yogurt

Tbs. lime juice

garlic cloves, roughly chopped

white wine vinegar

tsp salt

chicken thighs

pepper

Tbs. taco seasoning

(1) 3-pack Romaine lettuce, chopped

corn,

cherry tomatoes, halved

brown rice

lime

Tbs. cilantro, minced

DRESSING: Puree all Cilantro-Lime Dressing ingredients in a food processor or blender. There will be small flecks of cilantro that are visible.

CHICKEN: Place a large skillet over medium-high heat. Coat pan with a thin layer of olive oil. While oil heats, pat chicken dry and season with salt and pepper. Sprinkle taco seasoning over both sides of chicken thigh. Add chicken to pan. Cook for 12-15 minutes (flipping halfway through cooking) or until chicken is no longer pink in the center. Remove chicken from skillet, dice and set aside.

CORN: While the chicken cooks, heat a pot containing enough water to cover the corn cobs over high heat. Once water boils, add corn and turn down heat to medium. Allow corn to cook for 3-5 minutes or until tender-crisp. Use tongs to remove the corn from the pot and immediately place it under cold running water to stop the cooking process. Use a sharp knife to remove the corn kernels from the cob. Set corn aside.

RICE: Cook the rice according to package instructions. Place warm rice into a medium size mixing bowl. Add minced cilantro, the juice of 1 lime and a pinch of salt and pepper. Stir to incorporate.

ASSEMBLY: To each bowl, add 1/4 of the Romaine, 1/4 of the corn, 1/4 of the slice cherry tomatoes, 1/4 o the diced chicken. Drizzle with cilantro-lime dressing.

I made this but instead of taco seasoning I marinated the chicken in a mixture of cilantro, garlic, chilies, lime and roasted tomatoes and baked them (chicken breasts). Fabulous recipe, thanks!

Squeeze the juice from 2 medium limes until you have 1/4 cup. Place the lime juice, 1 packed cup fresh cilantro leaves and tender stems, 1/2 cup Greek yogurt, 2 teaspoons honey, 1 teaspoon ground coriander, 1 teaspoon kosher salt, and 1 small garlic clove in a food processor fitted with the blade attachment or blender. Pulse to combine.

With the machine running, slowly pour in 1/4 cup extra-virgin olive oil and process, stopping to scrape down the sides of the bowl as needed, until smooth, about 1 minute. 

Cilantro Lime Dressing is packed with flavor, a little heat, and lots of creaminess. Use it on salads, in burritos, or as a dip!  This dressing is sure to take your meal to the next level!

Combine all ingredients in a blender and puree until smooth.

Place in the fridge for at least 1 hour before serving to let it thicken.

Cilantro Lime Vinaigrette {Zesty Mexican Salad Dressing}

Measure ingredients into the bowl of a mini food processor (or blender). Pulse until well-blended and emulsified. Taste and adjust seasonings, adding more salt and pepper if necessary. (Alternatively, you may measure all ingredients into a jar with a tight-fitting lid and shake vigorously, OR whisk the ingredients together in a bowl.)

Store leftovers in a sealed container in the refrigerator; allow to come to room temperature and shake well before using.

The first step is to chop the cilantro, both the leaves and the stems.

Get your mini food processor, or your Vitamix pitcher and start to add the ingredients one at a time, first the chopped cilantro.

Then the next thing to do is to squeeze the lime juice, and add it to the pitcher.

Next step is to add the powdered Swerve, and mustard. 

Blend and then add the olive oil and blend again. 

Pour your dressing into a glass jar and put it in the refrigerator to chill for 30-60 minutes.
