This Low Carb Cloud Bread with Greek Yogurt is a cleaner version of the traditional cloud bread recipe (that is usually made with cream cheese). Cooking tips included.

Low Carb Cloud Bread with Greek Yogurt

Before you begin, preheat your oven to 300 degrees. I use a silpat baking mat on top of my cookie sheet, but parchment paper works too.

Mix together egg yolks (yolks only) and Greek yogurt until blended smooth. I&#x27;d almost say overblend these, try to get rid of as many lumps as you can.

Beat egg whites and ¼ teaspoon baking powder (some have used cream of tartar instead) until fluffy. Again, I'd overblend these and make sure to get the same consistency from top to bottom of your bowl.

Fold the egg white mixture into the yolk and Greek yogurt mixture carefully. Be careful not to overmix, but know that these need to be fully mixed for your cloud bread to come out fluffy and beautiful. I recommend using a large whisk of some kind to do this.

Using a cookie scooper, take a scoopful of batter out of the bowl and tap it a few times lightly on the counter to let the big air bubbles out before baking. Drop the batter on your silpat baking mat, leaving a little room in between.

Bake for 25 minutes at 300 degrees, or until golden brown. Sprinkle sea salt on the cloud bread as soon as they come out of the oven, then move to a cooling rack.

Preheat the oven to 300 degrees F. If you have a convection oven, set on convect. Line two large baking sheets with parchment paper.

Separate the egg whites and egg yolks. Place the whites in a stand mixer with a whip attachment. Add the cream of tartar and beat on high until the froth turns into firm meringue peaks. Move to a separate bowl.

Place the cream cheese in the empty stand mixing bowl. Beat on high to soften. Then add the egg yolks one at a time to incorporate. Scrape the bowl and beat until the mixture is completely smooth. Then beat in the Italian seasoning, salt, and garlic powder.

Gently fold the firm meringue into the yolk mixture. Try to deflate the meringue as little as possible, so the mixture is still firm and foamy. Spoon 1/4 cup portions of the foam onto the baking sheets and spread into even 4-inch circles, 3/4 inch high. Make sure to leave space around each circle.

Bake on convect for 15-18 minutes, or in a conventional oven for up to 30 minutes. The bread should be golden on the outside and firm. The center should not jiggle when shaken. Cool for several minutes on the baking sheets, then move and serve!

How to Make Cloud Bread from TikTok

Cloud Bread is perfect for a low-carb diet and keto friendly lifestyle. It’s light, airy and super soft and fluffy. A great bread replacement made without grains!

¼ teaspoon cream of tartar

(1.5 oz) cream cheese (softened (or 3 tablespoons greek yogurt))

You will need 2 medium size glass mixing bowls. They will need to be completely clean, no soap or residue of any kind. Even the smallest amount of missed residue of any kind will keep the egg whites from forming stiff peaks. The batter will be watery and will not bake properly.

Preheat the oven to 300 degrees.

Line a baking sheet with parchment paper.

Separate the eggs into the 2 glass bowls. Be certain that NO egg yolk is in the egg whites, or it will not form the stiff peaks.

Add the cream of tartar to the egg whites.

Using an electric handheld mixer, whip the egg whites on high until they form stiff peaks, about 3 minutes. Set the bowl aside.

Using a whisk, combine the egg yolks, kosher salt and softened cream cheese. Whisk the yolk mixture until completely smooth and no cream cheese chunks are visible.

Using a silicone spatula, carefully fold the egg whites into the yolk mixture a cup at a time. Gently fold until the whites are completely combined.

Quick and easy to make.  My mounds aren't quite as solid as shown in the picture, but I've made three batches and all are acceptable, even the one I forgot to add the Cream of Tartar - those turned out like pancakes, so it's definitely better with the Cream of Tartar.
