In a large oven safe skillet, brown ground beef, onions, and mushrooms until beef is cooked through and vegetables are tender.

Drain excess fat. Add garlic and cook for another minute.

Stir in flour and cook for another minute.

Whisk in broth, milk, salt, and pepper.

Add green beans and cook mixture until thickened.

Remove from heat and stir in 1 cup cheese and sour cream.

Shred potatoes with a grater or food processor and squeeze out excess liquid.

Top casserole with shredded potatoes and remaining 1/2 cup cheese.

Bake at 350 degrees for 30 minutes or until potatoes are tender. I like to broil the casserole for another couple of minutes at the end to crisp the top.

This Cowboy Casserole with Cornbread and Chicken is an easy dinner that bakes in one dish! Prep it ahead for an easy weeknight dinner or freezer meal!

Preheat oven to 350 degrees F. Spray a 2-quart baking dish (about 8 or 9-inch square) with cooking spray and set aside.

In a large bowl, combine cornbread, green bell pepper, onion, celery, and cheese.

Place half of the cornbread mixture in the prepared baking dish.

Spread chicken in an even layer over the cornbread mixture.

Whisk together soup and broth until completely combined. Pour soup mixture over the chicken. Spread remaining cornbread mixture over the chicken and gently press down to form a top crust.

Bake, uncovered, for about 30 minutes, or until hot, bubbly, and golden brown on top.

Preheat oven to 375°. In a large skillet over medium heat, heat oil. Add onions and cook until soft and slightly translucent. Next, add beef. When it is no longer pink, drain some of the fat and push meat and onions to outer edge of skillet. Add, garlic, chili powder and cumin. Stir and cook until garlic is fragrant, about 2 minutes.

Add corn, tomatoes, sour cream and 1 cup cheese. Cook, stirring regularly, until cheese is melted and sour cream is incorporated. Season with salt and pepper.

Pour mixture into a 9x13 baking dish. Top with tater tots and sprinkle with remaining cheese. Bake 20-25 minutes, or until cheese is melted and tater tots are golden. Garnish with parsley and serve.

Added taco seasoning to beef and some leftover rice, bean and beef enchilada filling. It was delicious. Also cooked a little longer than what it called for. I like my tots nice and crisp. Next time, I'll add the cheese to the top after my tots have browned.

This was good! I used Rotel tomatoes instead of diced, canned corn instead of frozen and jacked up the heat to 425 for the last 10 minutes plus 5 more since the tater tots weren't done enough. For some odd reason my shredded cheddar didn't melt on top, but it was delicious anyway.

Great recipe.  I don’t keep sour cream on hand and substituted it with 1/3 C ranch dressing!  It was delicious ***** try some jalepenos and Rotel for a kick.

It's good as a basic recipe. I use Rotel instead of canned tomatoes, and taco seasoning on the meat.

My 10 yr old loves it and she hates any food mixed together and this is one if her favorites!! Mine too!! Hubby adds more sour cream and hot sauce.

Took the advice of other reviews and used taco seasoning to prepare the meat. I also added a can of diced green chili’s and it came out perfectly delicious!

Substitute the hamburger with ground sausage and it's delicious.

Optional topping: 1 (3 ounce) can French-fried onions

Preheat oven to 375 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.

Cook beef and onion in a large skillet over medium-high heat, until meat is no longer pink (about 5-7 minutes). Drain.

In a separate bowl, whisk together condensed soups and milk.

Add soup mixture, corn, and green beans to the cooked beef; stir to combine. Season with salt and pepper, to taste (I used ½ teaspoon salt and a dash of pepper). Transfer to the prepared baking dish.

Sprinkle cheddar cheese over the top. Finish with a layer of Tater Tots.

Bake casserole, uncovered, for 35-40 minutes (or until the inside is hot and bubbly and the Tater Tots are crispy and golden brown). If using French-fried onions, add them to the top of your casserole during the final 15 minutes (this will allow them to get browned and crispy without burning).

In a large saucepan over medium-high, melt butter until foaming. Add mushrooms and cook until the mushrooms have released most of their liquid, about 5 to 7 minutes. the onions, garlic and cook for an additional 5 minutes. 

Sprinkle in flour and cook for 1 minute. Gradually pour in the chicken stock, bring to simmer, and cook until thickened, about 1 minute.

Stir in milk, season to taste with salt and pepper, and simmer for additional 1 minute. Keep warm.

To make mushroom sauce:

Preheat oven to 375 degrees. In a large saucepan, add ground beef and onion and cook until browned, about 5 to 7 minutes. Drain well. Stir in garlic and chili powder until fragrant, about 30 seconds.
