Creamy Mushroom Sauce Recipe

mushrooms,

salt

tbsp butter

heavy cream

soy sauce

thyme

In a dry skillet over medium heat add the quartered mushrooms in a single layer (this might take a few batches...don't over crowd the pan)

Once mushrooms have started to brown add salt and allow them to “sweat”

Sir and continue cooking for another 2 minutes.When all the mushrooms are finished, add the butter to the pan.Once butter has melted and began to bubble, and all the mushrooms are coated, add in thyme, heavy cream, and tamari

Bring the sauce to a low simmer stir constantly

Cook until sauce has thickened, about 3-4 minutes

Creamy Chicken Meatballs

chicken

garlic powder

Preheat

Combine

In a bowl add ground chicken, salt, garlic powder, onion powder, oregano, egg, panko and cheese

Mix well with hands until all ingredients are well combined

Scoop

Use an ice-cream scoop to portion and shape chicken mixture for meatballs. Shape further with your hands into little balls and place each meatball on baking sheet

Bake

Bake for 40 minutes at 180C/350F until golden brown

In a non-stick pan melt the butter on medium heat

Saute

Add the onion, mushrooms, garlic, basil and thyme and saute for 10 minutes

Simmer

Add soy sauce and let sauce simmer for another 5 minutes

Add heavy cream and simmer for another 5 minutes

Today’s creamy mushroom sauce is best enjoyed with long strands of pasta, perfect for wrapping up every last morsel on your plate! We’ve chosen linguine but any fresh variety of pasta will work, you could even try making your own with our recipe linked below.

Linguine with a Creamy Mushroom Sauce

fresh linguine

2tbsp extra virgin olive oil

garlic, crushed

mixed mushrooms, thinly sliced

shallot

1tbsp fresh thyme, roughly chopped

glass (about 125 milliliters) dry white wine

milliliters double cream

Parmesan cheese, grated

1tbsp butter

Salt and black pepper,

basil

Heat the oil and garlic in a large pan over a medium heat for about 2 minutes, be careful not to burn the garlic. Add the mushrooms, shallots and thyme and increase the heat a little. 

Cook for 10-15 minutes, stirring regularly, until the mushrooms are beginning to brown and any liquid in the pan has evaporated.

Add the white wine to the pan and cook until it has reduced by about half. 

Cook your fresh linguine for about 3 minutes in a pan of boiling water with a pinch of salt. If you're using pasta from a packet, cook as per the instructions. When cooked, drain the pasta, reserving about 100ml of your cooking water.

Stir the reserved pasta water into the pan with the mushrooms. Add your double cream, Parmesan, butter, salt and pepper. 

Transfer the pasta to the pan with the sauce and toss to coat each strand thoroughly. 

Serve with a sprinkling of Parmesan and some fresh basil or parsley. Buon appetito!

Chicken with Mushroom Cream Sauce

chicken breast (cut or pounded to thin cutlets)

tbsp flour

tsp salt

tsp pepper

olive oil

butter

mushrooms

garlic (pressed)

parmesan cheese (grated)

Mix the flour, garlic powder, 1/2 tsp salt, and pepper together. Lightly coat each side of the chicken cutlets with the mixture.

Heat oil in a large skillet over medium high heat. Once the oil is hot, add the chicken breasts to the pan in a single layer and cook 3-4 minutes per side.

Remove the chicken from the skillet and set aside. Melt butter in the skillet then add the mushrooms, garlic, and additional 1/2 tsp of salt. Cook over medium high heat stirring occasionally until the mushrooms have reduced in size and any liquid released has cooked off, about 4-6 minutes.

Add the cream and parmesan cheese to the skillet and stir to combine.  Bring to a rapid boil for 2 minutes stirring regularly, then reduce the heat to low.

Place the chicken breasts back in the the creamy mushroom sauce and let it simmer for 3-5 minutes or until the sauce has thickened.

portabellini/chestnut mushrooms, halved/sliced (approximately 500 grams/ 1 pound)

cream

milk

lemon juice (to taste)

Heat the butter and olive oil together.

Add the mushrooms to the pan with the thyme and season with salt and pepper.

Allow the mushrooms to fry until golden brown then add the garlic and fry until fragrant.&nbsp;

Pour in the cream and milk and allow to simmer gently for 5-10 minutes until the sauce has thickened and cooked through.

Season with lemon, salt and pepper and add the parsley.

This creamy mushroom sauce is the perfect sauce to use with pretty much anything. It goes well with meats, potatoes or any vegetables.

Creamy Mushroom Sauce - Easy And Universal

bigger shallot

400-500 ml cups stock/broth (beef

salt and pepper

starch slurry

Finely chop the shallot and sautee in olive oil until translucent.

Add sliced mushrooms and sautee for 5 minutes.

Add broth or stock (or water + bouillon) and cook for 5 minutes. Once the mushroom start to lose volume, add heavy cream.

Cook for at least 30 minutes.

Season with salt and pepper. Add starch slurry to thicken the sauce up.

Give the sauce a taste test and add more salt or pepper if needed.

Done :)

A delicious creamy mushroom sauce that goes will with Schnitzel, Spaetzle, meat and plenty more dishes.

Jager Sauce (German Hunter Sauce)

ml whipping cream (4.2 fl oz - at least 30% fat

125 ml vegetable stock or vegetable broth (4.2 fl oz)

onion (around 60 g/ 2 oz)

thyme thyme

tbsp fresh parsley (finley chopped)

tomato paste

tsp balsamic vinegar

tbsp corn starch

Wash the mushrooms and slice them into 0.5 cm thick slices. Peel and finely chop the onion. Chop the parsley finely. 

In a frying pan heat up 1 tbsp butter/oil/lard. Fry the mushrooms until they start to brown. They should not start to “shrink” yet. Remove the mushrooms from the pan and set them aside. 

Using a further tbsp butter/oil/lard fry the onions. Add the tomato paste just when they begin to brown, and fry for a further minute. Deglaze with the vegetable stock/broth and cream. 

Add the mushrooms back in and season with salt and pepper to taste. Add the thyme, parsley and balsamic vinegar and cook the sauce until you achieve the desired consistency.  

If you like the sauce to be thicker, mix 1 tbsp of cornstarch with 2 tbsp of water. Add to the sauce. Bring the liquid back to a boil. If the sauce is too thick for your liking, you can add more vegetable broth or milk.

Easy Creamy Mushrooms

tbsp canola or olive oil

lbs mushrooms (sliced)

onions (chopped)

tbsp all-purpose flour (or gluten-free flour*)

tbsp soy or tamari sauce

vegan white wine (or more broth)

vegetable broth

tsp yellow mustard (medium hot)

yeast flakes (optional)

salt (or

½ tsp ground black pepper (or to taste)

parsley (chopped)

Heat the oil in a pan and sauté the mushrooms for 3-4 minutes until they turn slightly golden brown. Then add onions and garlic and sauté for another 3 minutes.

Sprinkle with flour and thyme and sauté briefly. Deglaze the pan with soy sauce and white wine and simmer for 1-2 minutes.

Add vegetable broth, soy cooking cream, and mustard and season with nutritional yeast flakes, salt and pepper. Cover the pan with a lid and let the sauce simmer for 10 minutes on low heat (if the sauce gets too thick, just add some more water or cooking cream).

Finally, stir in the parsley, taste again and adjust seasonings if necessary.

Serve the creamy mushrooms over mashed potatoes with celery schnitzel and green beans or with any other side dishes you like.

white button or cremini mushrooms (or a mixture of both)

Kosher salt

linguine, spaghetti or fettuccine pasta

extra virgin olive oil

thyme (or 1 teaspoon dried thyme)

¼ teaspoon crushed red chili flakes

lemon juice

creme fraiche

Trim

Prepare the mushrooms: Trim the stems off the mushrooms. Tear the caps into generous bite-sized pieces - you want a nice chunky texture.

Boil

Bring a large (5-6 quarts) water to a boil along with 4 tablespoons kosher salt (use half the amount of regular table salt). Cook the pasta according to package directions, until al dente. Before draining the pasta, scoop out 1 cup of the cooking water and reserve.

While the pasta cooks, heat the oil in a large (12-inch) skillet (preferably nonstick) over medium-high heat. Add the mushrooms to the pan and spread them out in one layer. Cook 5 minutes without stirring. Give the pan a shake and stir the mushrooms around. Cook another 5 minutes.

Cook

At this point, the mushrooms should be taking on some color and releasing some liquid. Add 1 teaspoon salt, shallots, garlic, thyme and chili and stir well. Cook until the shallots are softened, about 2 minutes.

Stir

Add the lemon juice, creme fraiche and parsley to the mushrooms. Simmer until the sauce thickens. Add 1/3 cup of the reserved water and stir, scraping the pan to release any browned bits.

Toss

Put the cooked pasta in the pan and use tongs to toss in the sauce. Add a bit more pasta water if the sauce seems dry. Remove from the heat, sprinkle with  the Parmesan and serve.

Easy Mushroom Sauce for Chicken Recipe

chicken breasts (thighs also work fine)

Herbs de Provence (or Italian seasoning)

mushrooms (sliced (about 1 cup sliced mushrooms))

chicken broth

dijon mustard

black pepper

Preheat oven to 400 degrees.

Season chicken generously with salt and pepper. Sprinkle all over with Herbs de Provence (or Italian seasoning).

In a large cast iron skillet (or other oven-safe skillet - see note), combine oil and butter over medium-high heat.

Once butter is melted, add the chicken and brown on each side for 1-2 minutes until you get a nice browned color. Transfer to a plate and set aside.

In the same skillet, begin preparing the sauce by adding the butter. Once melted, stir in garlic and mushrooms and sauté 2-3 minutes until mushrooms are browned and garlic is fragrant.

Stir in chicken broth, heavy cream, dijon mustard, salt, and pepper. Bring to a boil, cook for two minutes at a high boil. Remove from heat.

Return chicken to skillet. Spoon sauce over the chicken, then transfer skillet to the oven to bake for 15-20 minutes until chicken is cooked through and sauce has reduced (it should be thick enough to coat the back of a spoon).

Spoon the mushroom sauce over the chicken and serve.
