Place boneless, skinless chicken breasts in the crockpot.

Sprinkle the ranch seasoning over the chicken breasts.

Top with cream cheese. Cover and cook on low for 6-8 hours or until the chicken can be easily shredded.

Shred the chicken using two forks. Top with shredded cheddar cheese and bacon.

Cover until the cheese is melted.

Serve on buns, over rice, on top of mashed potatoes, etc. Garnish with scallions.

Slow Cooker Chicken Bacon Ranch Sandwiches (aka Crack Chicken) are an easy hit!  Chicken, cream cheese, and ranch seasoning cook together in the crockpot before getting mixed with cheddar, bacon, and scallions and then piled onto soft buns.

Slow Cooker Chicken Bacon Ranch Sandwiches

cream cheese (cubed)

ranch seasoning (1 packet, or homemade)

cheddar cheese (shredded)

bacon (cooked and chopped)

scallions (chopped)

To the basin of a 6 quart slow cooker, lay in the chicken breasts.

Sprinkle the ranch seasoning over the top.

Place the cubed cream cheese on top of the chicken.

Cover and cook on LOW for 6 hours or HIGH for 4 hours.

Once the chicken is cooked through, stir to distribute the cream cheese sauce, then use two forks to shred the chicken.

Stir in the the crumbled bacon and scallion and 1 ½ cups of cheddar cheese.

Sprinkle the rest of the cheese across the top.

Cover and let the cheese melt for 10 minutes.

Pile onto buns and serve!

Spray the crock of a 6-quart crockpot with nonstick spray. Place the chicken breasts inside the crock. Pour the broth over the chicken, then sprinkle the ranch seasoning on top.

Shred

When the chicken is cooked, use two forks to shred it in the broth.

Add the cubes of cream cheese, ½ cup of cheddar cheese, and the mozzarella cheese. Place the lid on the slow cooker, allowing the cheeses to melt in the residual heat for about 10 minutes.

Stir

Remove the lid and stir, then add in half of the bacon and half of the green onion. Stir well to combine. Sprinkle the remaining cheese and bacon on top of the mixture.

Melt

Place the lid back on the slow cooker for 5-10 more minutes, until the cheese is melted. Serve garnished with remaining green onions.

Slow Cooker Crack Chicken

lbs boneless skinless chicken thighs

ranch seasoning mix (or 1 packet of store bought)

oz cream cheese (cubed)

(10.5 oz cream of chicken soup, undiluted)

green onions

Place chicken thighs in a single layer at the bottom of a slow cooker (mine is 7 qt).

Sprinkle the top of the chicken with the ranch seasoning, then spread the soup on top then finally distribute the cubed cream cheese on top of it all.

Cover and cook on low for 6-7 hours, or high 4-5 hours (times can vary--mine was done in 4 hours on high). Do not lift the lid until the minimum time is up.

Shred the chicken--this can be done right in the slow cooker using 2 forks. Stir in the bacon then top with the cheese. Cover and cook about 10 minutes or until cheese is melted. Top with green onion and serve.
