Made with saute shrimp, slaw, avocado, tomato- jalapeño salsa, and topped with a pineapple chipotle sauce. These shrimp tacos are a fast and flavorful weeknight dinner with a sweet and spicy kick.

Easy Shrimp Tacos with Pineapple Chipotle Sauce

½ chipotle pepper in adobo sauce

½ teaspoon adobo sauce from chipotle peppers

Dole Crushed Pineapple

mayonnaise

lime juice (freshly squeezed)

salt

shrimp

paprika

vegetable oil

corn tortillas

slaw

tomato (cubed)

jalapeño (cubed)

avocado (cubed)

cilantro (roughly chopped)

lime

Salt and pepper

In a food processor, mix chipotle pepper, adobo sauce, pineapple, mayonnaise, 1 teaspoon lime juice and a pinch of salt until well combined. Set aside.

Season shrimp with paprika, 1 teaspoon lime juice, salt and pepper. Heat oil in a frying pan and cook shrimp for about 3-4 minutes on each side. Remove from heat and set aside.

In a comal, warm tortillas for about 1-2 minutes on each side, or until soft and pliable.

Season slaw with 1 teaspoon lime juice, salt and pepper. Set aside.

Mix together tomato, jalapeño, avocado, cilantro, 1 teaspoon lime juice, salt and pepper to taste.

To build your tacos, layer slaw, tomato and avocado salsa over the tortilla. Top with shrimp and drizzle over the top with pineapple chipotle sauce.

Serve immediately.

Prep your shrimp. If frozen, run them under cool water until thawed. Peel them and remove the tails.&nbsp;

For the Shrimp: Pat the shrimp dry with paper towels. Add to a ziplock bag with olive oil, lime juice and spices. Toss to coat. Rest for 10 minutes while preparing the shrimp taco sauce, or refrigerate for several hours until ready to use.

Heat a drizzle of oil in a large skillet over medium high heat. Add the shrimp to the hot pan and saute for 2-3 minutes on each side, until pink and cooked through.

For the Shrimp Taco Sauce: Blend all the sauce ingredients together in a small blender or food processor until smooth and creamy. Add about 1/2 a cup of the sauce  to the slaw and stir well to coat.

Assemble: Fill tortillas with a few shrimp and a spoonful of slaw. Top with fresh avocado, extra sauce (if desired) and any additional toppings.

The shrimp are tossed in a blend of chile powders and spices. Ancho chile is sweet and mild, while chipotle powder is smoky and hot. We use ancho chile powder a lot at home and highly suggest investing in it. The chipotle powder is also delicious and versatile, but you can substitute it for a smoked paprika in a pinch.

Shrimp Tacos with Asian Cabbage Slaw

green cabbage, (shredded)

soy sauce

rice vinegar

taco seasoning

flour tortillas, (or corn tortillas, warmed)

Avocado, (cubed)

Sesame seeds

Fresh cilantro, (chopped)

In a large mixing bowl, mix together all the slaw ingredients.

In a small bowl or jug, make the Asian dressing by whisking together all the ingredients until well combined.

Pour the dressing over the slaw and toss together until evenly coated. Set aside.

In a skillet over a medium-high heat, add the butter and olive oil. Allow to heat up.

Once hot, add the shrimp and taco seasoning and mix together; cook until shrimp are pink and opaque. About 3 to 4 minutes.

Assemble the tacos by placing a serving of the asian slaw in the centre of a warmed tortilla. Top with a few of the prepared shrimp. Squeeze lime juice over the shrimp, and add some avocado, sesame seeds, and fresh chopped cilantro.

Serve immediately and enjoy.
