Baked chicken breast is one of the most versatile meals! Each tender and juicy piece of seasoned lean meat pairs well with any side dish.

Baked Chicken Breast

chicken breast (about 2 to 2 ½ pounds total)

salt

garlic powder

onion powder

Italian seasoning (dried)

Set the oven rack to the middle position. Preheat to 425ºF (218ºC). Line a rimmed baking sheet with foil. Lightly grease with oil to help prevent sticking.

Thoroughly dry each chicken breast with a paper towel.

Place chicken in between two plastic sheets or inside a large plastic bag. Pound to an even thickness, about ¾-inch thick. Repeat with remaining pieces.

In a small bowl, combine salt, paprika, garlic powder, onion powder, black pepper, and Italian seasoning.

Generously brush olive oil on both sides of the chicken. Evenly sprinkle the seasoning mixture on both sides, about ½ to 1 teaspoon per side, depending on the size of the chicken and desired seasoning level. Store extra seasoning in an airtight container for later use.

Place the breasts on the prepared baking sheet. Bake until the internal temperature reaches between 160 to 165ºF (71 to 74ºC), about 14 to 17 minutes, depending on the thickness.

Allow the chicken to rest for 5 minutes before serving.

Preheat oven to 350 degrees. Spray a 9X13 inch baking dish with nonstick cooking spray.

In a large skillet, saute onion and garlic until soft and translucent. &nbsp;Add the cumin, oregano and black pepper and cook for about 1 minute, stirring constantly. Add chilies, including the juice, both soups, and chicken broth and whisk until mixture is combined and smooth.

Pour 1/2 cup of the sauce on the bottom of the baking dish. Spread 1/3 flat of tortillas in a flat layer on top, 1/3 of the remaining sauce, 1/2 the chicken, 1/3 of the cheese.

Continue with the second layer of 1/3 of tortillas, 1/3 of the sauce, the remainder of the chicken, 1/3 of the cheese.

Finish with the third and last layer with the remaining the tortillas, the sauce,&nbsp;and the cheese.

Bake in the preheated oven, uncovered, for 35-45 minutes or until heated through the center and sauce is bubbly.

Preheat broiler to high.

Peel the potatoes and cut them into small cubes. Place cubed potatoes in a bowl of cold water, swishing them around&nbsp;to remove starch. Drain in a colander and rinse. Spread potatoes out paper towels and pat dry.

Add oil to a cast iron skillet and heat over medium-high heat. Add the potatoes and cook, stirring as needed, until the potatoes are fork tender and browned on most sides.&nbsp;

Sprinkle potatoes with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Transfer to a plate and set aside.

Stir in the onions, red bell pepper and garlic to the skillet. Cook over medium heat, stirring until golden brown.

Stir in the beef, chili powder, and 1/2 teaspoon salt,&nbsp;1/4 teaspoon black pepper and cook, breaking up any clump, until brown, about 5 minutes. Drain any excess fat.

Add the potatoes back to the skillet and mix in. Sprinkle cheese evenly over&nbsp;the top of the skillet.&nbsp;

Place skillet under preheated broiler until cheese is melted, about 1 minute. Garnish with fresh parsley and serve.

Preheat oven to 350° Fahrenheit and lightly grease a 13x9-inch baking dish.

Mix together the shredded chicken, black beans, diced tomatoes, corn, diced green chiles, salt, garlic powder, and cumin in a large bowl.

Line the bottom of baking dish with half of the crushed tortilla chips, then layer half of the chicken mixture over the top.

Sprinkle chicken mixture with half of the cheese, then repeat those same layers once more – until no ingredients remain.

Add the chicken stock/broth making sure all the noodles are submerged under liquid (push down with a fork and break any noodles if necessary) and carefully place the mug (uncovered) in the preheated oven. Cook for 15 minutes or until noodles have softened and are almost opaque. Using oven mitts, carefully remove the meal mug from the oven (it will be very hot straight from the oven). Give the noodles a stir with a fork and cover with the lid with the steam vent open and allow to steam for 8-10 minutes until the noodles have softened and expanded.

Carefully remove the&nbsp;lid and stir again with a&nbsp;fork. Remove star anise and cinnamon stick.

Add shredded chicken and garnish with remaining sliced onions and toppings of your choice. Serve with a splash of lime and sauce(s) of your choice.
