Want a summer treat you don&#x27;t have to feel guilty about? These Creamsicle Popsicles are so easy and delicious that you won&#x27;t even notice they&#x27;re low carb!

Creamsicle Popsicles

0.3 oz package orange sugar free gelatin ((small package))

water

Heavy Whipping Cream

Put  boiling  water  into  a  heat-proof  bowl.  Sprinkle  the  gelatin  on  top  and  let  it  rest  for  10  minutes.  Stir  and  ensure  the  gelatin  is  well-incorporated.  If  it  is  still  grainy,  place  the  bowl  in  the  microwave  and  cook  for  30  seconds.  Stir  again.&nbsp;

Pour cream into a blender jar. Add the gelatin mixture and beat until the mix is creamy and well blended, stopping to scrape the sides down to get all the gelatin crystals mixed in as needed. Do not over-blend, or you will have jello butter from that whipping cream turning into butter (Ask me how I know this.) About 30 seconds in a high powered blender is all you need.&nbsp; &nbsp;

Pour  into  6  popsicle  molds  and  freeze  for  at  least  4  hours.

peanut butter, all-natural

peanut butter protein powder

tbsp swerve or maple syrup (optional)

Combine the peanut butter, protein powder and vanilla in a bowl. Stir until fully incorporated and a cookie dough consistency is formed. The batter can be thinned by adding 1 tbsp of non-dairy milk, if needed.

Line a sheet pan with parchment paper. Scoop out dough and roll into a 1 to 1 1/2 inch ball, depending on your desired sized. Freeze for 15 minutes.

To make the chocolate coating, combine cocao powder, coconut oil and maple syrup (if using) in a small bowl. Stir until no lumps remain. The coating should be thick but not stiff, allow to cool if too thin.

Remove the peanut butter balls from the freezer. Using a skewer or fork pick up a ball and dip into the chocolate leaving a a small round or peanut butter visible at the top. Place back on parchment. Repeat with remaining balls. Place in refrigerator until chocolate sets.

To cover the the hole left by the skewer you can dip your finger in warm water and pinch it closed. Buckeyes should be kept in the refrigerator.

Fry the bacon in your cast iron skillet until crispy, transfer to a paper towel-lined plate to drain the excess oil. Transfer to a cutting board and finely chop.

In a medium bowl, mix together the remaining ingredients. Transfer to the freezer for 15 minutes to firm up.

Scoop into 8 portions and roll into balls then roll in the crumbled bacon. Refrigerate for 3-4 days in a lidded container.

Like candy for grown-ups, these fat bombs bring the flavor of bread pudding with a bourbon sauce.

Cinnamon Bourbon Pecan Fat Bombs

scoop Quest cinnamon crunch flavor whey protein (30 grams)

Combine the first three ingredient in a small pan over low heat.  Stir until coconut oil is melted and protein powder is dissolved.  If you use the Quest cinnamon crunch protein, there will still be "crunch bits" that do not dissolve.

Put a silicone candy mold (I prefer half spheres) on a small cookie sheet (this helps for transfer to the freezer).  Put one candied pecan half in each compartment.

Pour your protein oil into each compartment, filling to the top.  You should be able to fill all 15.

Transfer the tray/candy mold to the freezer for 2 hours.

Pop the fat bombs out of the mold, place in a Zip-Loc storage bag and store in the freezer.

These Keto truffles are such a delightful treat and really simple to throw together. They are nutty and soft on the inside and covered in crunchy sugar free chocolate on the outside. There's no need to turn the oven on and they contain only 5 ingredients.&nbsp;

Almond Butter Keto Truffles

almond flour (or more, depending on the thickness of your almond butter)

stevia (equivalent to 2 tsp sugar)

Blend the almond butter with the sweeteners and 50g (1/2 cup) almond flour. Check consistency. If your almond butter is quite runny, as was mine, add another 25g (1/4 cup). You are looking for a dough-like consistency that can be easily rolled into balls without being squishy or falling apart.

Roll into balls weighing ca 10-12g. I got 25 from my mix.

Melt chocolate in the microwave (in 30 second bursts) or in a double boiler.&nbsp;

Using a spoon, coat each ball in chocolate. This adds ca 2g to the weight of the praline. I melted an 70g chocolate bar, but ended up using only around 50g.

Place the chocolate-covered pralines on a sheet covered with parchment paper and let them set in the fridge for ca 20 minutes.

These fat bombs are like eating little bites of caramel apple pie. Hide them. From yourself.

Blend the coconut and almonds together in a food processor to a fine crumbly mixture.

Add stevia extract, coconut oil, vanilla extract and a pinch of salt to the food processor. Continue blending until smooth. Taste and add more sweetener as needed.

Scoop the batter with a tablespoon and gently roll it into a ball between the palms of your two hands.
