Pineapple Salsa

pineapple (diced)

bell peppers (diced)

Roma tomatoes (diced (about 3))

fresh cilantro (chopped)

red onion (minced)

jalapenos

lime juice

tsp black pepper

tsp salt

Dice the red onion and add it to a large mixing bowl with the lime juice.

Slice the top and bottom from your pineapple then slice the skin away and remove any eyes. Cut the pineapple down the middle then quarter and slice away the core. Dice into small pieces and place in a large bowl.

Dice the bell pepper, and tomatoes. Halve the jalapenos and remove the seeds and ribs then mince.

Mince cilantro leaves and place everything into the bowl with the pineapple. Sprinkle salt and stir to combine.

Grilled Blackened Tuna Steaks with Mango Salsa

These grain-free cinnamon sugar chips with fruit salsa are the perfect easy to make a healthy snack! They're paleo-friendly and gluten-free.

Grain-Free Cinnamon Sugar Chips &amp; Fruit Salsa

mango, diced

kiwi, diced

blueberries

strawberries, diced

lemon

Siete foods almond flour tortillas

tbsp ghee, melted

coconut sugar

Combine all of the ingredients and allow to chill in the fridge.

For the fruit salsa

Preheat the oven to 350 F and line a large baking sheet with parchment paper.

Stack the tortillas one on top of the other and use a knife to cut the tortillas into 8 equal slices, like you would slice a pizza.

Seperate the chips and evenly space them on the baking sheet.

Combine the ghee, coconut sugar and cinnamon and mix well. Brush the mixture on each chip, on both sides until evenly coated.

Transfer to the oven and allow to bake for 10-12 minutes, without flipping the chips. Check the chips at 10 minutes to ensure they don&#8217;t over bake, and extend the cook time only if needed.

Allow to cool to the touch before serving with fruit salsa.

For the chips

This is hands down the best pineapple salsa recipe! It is absolutely delicious plus there&#039;s a bonus creamy sauce you can make with the leftover juices!

The Best Pineapple Salsa Recipe

Serrano pepper (, about 1/2 a pepper (seeds removed))

garlic (, 2-3 cloves, roughly chopped)

Put pineapple, red pepper, onion, cilantro, Serrano pepper, lemon juice, apple cider vinegar, garlic, and salt in a food processor. Pulse until chopped.

Drain

Drain the salsa with sieve and save the juice if making cream sauce.

Serve

Use in tacos, as a dip, in wraps, over nachos or simply devour with a spoon!

Blend

Put all the ingredients except the cilantro in a blender and blend on high until smooth and creamy.

Because this recipe calls for only one cup of pineapple, pick up a container of precut chunks from the produce aisle, or grab an 8-ounce can and drain before using.

Pork Chop with Pineapple Salsa

In a medium bowl, combine pineapple, onion, jalapeño, honey, and cilantro. Season with salt and pepper; set salsa aside.

In a skillet, heat oil over medium. Season pork with salt and pepper; dust with flour. Cook until browned on both sides and opaque throughout, 3 to 4 minutes per side. Serve pork topped with pineapple salsa.

Mango Peach Salsa

Prepare the fruit and vegetables first by rinsing and scrubbing under cold water.

Finely chop the jalapeno, garlic, red onion, and cilantro in a small food processor.

Dice

Cut the flash of the peach from the pit and dice.

Chop the jalapeno, red onion,  garlic cloves, and fresh cilantro finely in a small food processor, pour into a medium-size bowl mixing bowl.

Cut the flesh of the mango away from the pit. Cut the flesh of the mango away from the skin and dice the fruit and add to the bowl.

Cut the flesh of the peach away from the pit. Dice the cut pieces of peach and add to the bowl.

Season

Add the salt, sugar, and zest and juice of the lime.

Refrigerate

Refrigerator the salsa at least one day before you plan on serving it.

Zest the lemon and add the zest to the mixed fruit. Cut the lemon in half and squeeze the juice into a small bowl. Remove the lemon seeds from the juice. Pour the juice over the fruit in the bowl; mix well.

Add the seedless raspberry jam to the fruit and stir until combined. Set the salsa aside while you move on to the next steps.

Spray both sides of the flour tortillas with non-stick cooking spray. In a small bowl, whisk together the sugar and cinnamon. Sprinkle the sugar mixture over both sides of each tortilla. Cut each of the tortillas into 8 wedges and place the wedges in a single layer on sheet pans.

Bake the tortilla chips (you may have to do this in several batches) at 350F for 8-12 minutes until they are beginning to brown around the edges.

Remove the chips from the cookie sheets with a spatula and place on a serving dish.

Serve the fruit salsa with the cinnamon sugar tortilla chips.
