Sausage Green Bean Potato Casserole

lbs sausage kielbasa

lbs baby creamer potatoes, (washed, sliced in half)

15 oz cans green beans, (drained)

vegetable oil

butter

onions, (chopped)

garlic, (minced)

tsp Slap Ya Mama® seasoning

garlic powder

tsp pepper

tsp red pepper flakes

water

Preheat oven to 400° and spray a 9x13 baking dish with a non stick spray.

Wash creamer potatoes, cut in half and add to a sealable gallon size baggie.

Add oil, seasonings, pepper and red pepper flakes to baggie. Shake to coat.

In a large frying pan, add sausage and water and cook over medium high heat until sausages have browned and most of water has evaporated.

Remove sausage from pan and when cool enough add to baggie.

Melt butter in frying pan and add onions and garlic, cook until onions are translucent.

Let cool for a few minutes and then when cool enough, add to baggie and shake to mix.

Lastly, add green beans to baggie, shake to mix and then empty contents into prepared baking dish.

Cover with foil and place in the oven. Bake for 40 minutes or until potatoes are tender.

Carefully remove from oven and enjoy!

How to Cook Fresh Green Beans

green beans (stemmed)

Bring a large pot of salted water to a boil and set a bowl of ice water nearby. Drop the green beans into the boiling water and blanch for 2 minutes.

Remove the beans and immediately immerse in the ice water long enough to cool completely, about 15 seconds. Drain and place on paper towels to dry.

Use in any recipe that calls for blanched green beans (see suggestions in the blog post above), or simply toss the blanched green beans with the olive oil, garlic, lemon juice, lemon zest, salt and pepper.

Roasted Green Beans with Caramelized Onions

extra virgin oil

Vidalia Onions (about 1 1/4 lbs, peeled and sliced)

kosher salt and black pepper

Preheat oven to 425F.

Heat a large nonstick skillet over medium-high heat and add the oil. Add onions, season with 1/4 teaspoon salt and pepper.

Cook, stirring often until they begin to brown, about 10 minutes. Reduce heat to medium low and cook stirring until the onions are deep golden brown and soft, about 30 minutes.

Meanwhile place the green beans on a sheet pan and spritz all over with olive oil spray, 1/2 teaspoon salt and black pepper, to taste.

Bake until tender crisp, about 16 to 18 minutes, turning halfway.

Transfer to a platter and top with caramelized onions. Serve hot.

A quick to prepare, colorful side dish that is great year round.

Before the end of the summer, if you want to make a different meal with fresh beans, I would recommend the fasulye diblesi, which is one of the most popular flavors of the Black Sea cuisine. Fasulye means bean in Turkish by the way and dible is the food category in Black Sea region which is generally cooked vegetables with rice. The most important trick of the recipe is the fine adjustment of the water required for the rice after the beans are cooked. If the water is fully absorbed and evaporated when the beans are cooked and water is completely added afterwards, there is no problem. But when the beans are cooked but there's still water, don't try to boil long to evaporate that water. If the available water is 1 cup, do not add extra water, for example. Chinese Garlic Green Beans

Green Bean Stew with Leftover Chicken, a hearty 30-minute meal that goes down well with the whole family. It uses fresh vegetables for a nutritious touch, and chicken to make it more filling. A favourite recipe with my little girls, this is the one dish that never fails to impress.

Green Bean Stew with Leftover Chicken

In a large pan, heat up the oil, and fry the peeled and chopped onion on a low to medium heat until golden.

Add the green beans, chopped carrot and garlic, and give it a stir.

Pour over the stock, place a lid on, and leave to cook for 15-20 minutes until the vegetables are tender.

Add the tomato puree, shredded leftover chicken, season with salt and pepper, and garnish with freshly chopped dill and parsley.

Serve hot.

Tender yet crisp green beans, lots of nutty parmesan, and homemade crispy fried shallots that top this beauty. Loaded with flavor, textures, and ample deliciousness! Perfect side dish to pair alongside holiday mains and beyond!

Homemade Green Bean Casserole

medium shallots, halved lengthwise & then sliced thinly into half moons

cajun seasoning (or seasoned salt),

beans,

unsalted butter

baby bella mushrooms, sliced

all-purpose flour

chicken broth

lemon juice

dijon mustard, smooth or whole grain

worcestershire

thyme

red pepper flakes, optional

nutmeg

kosher salt & black pepper,

heavy whipping cream (or half and half)

parmesan, divided

Place the oil in a medium saucepan over medium heat. Then add shallots into the pan, no need to wait for the oil to warm up. Cook the shallots, gently stirring often, for about 15-20 minutes. If you notice the shallots browning too quickly, lower the heat, as needed until the shallots achieve a golden-brown color.

Use a fish spatula (or similar utensil) to remove the crisp shallots and place onto a paper towel-lined plate to blot excess oil. Season crispy shallots with cajun seasoning or seasoned salt- to taste. Set aside until green bean casserole is ready to assemble. Then place a fine-meshed sieve over a bowl to remove any shallot debris and save shallot-infused oil for future use!

For the fried shallots:

Bring a large pot of water to a boil. Once boiling, add in the green beans and cook for 3 minutes. Drain immediately and place green beans into a bowl filled with cold water and ice to stop the cooking process. Once cool, drain the green beans and set aside.

In a large skillet over medium heat, add the butter. Once melted, add the mushrooms and garlic and sauté until the mushrooms are tender and lightly golden, about 3-4 minutes.

Next, add the flour and stir until well combined and the flour has mostly dissipated. Slowly pour in the chicken broth and stir well to combine, be sure to hit any hidden pockets of flour. Use a wooden utensil to scrape up any browned bits on the bottom of the pan.

Stir in the lemon juice, dijon mustard, worcestershire, thyme, red pepper flakes (if using), ground nutmeg, and salt/pepper- to taste, stirring well to fully combine. Bring this mixture to a simmer for 2-3 minutes.

Then stir in the cream (or half and half) along with half of the parmesan, stirring until well incorporated, about 1-2 minutes.

Place the blanched green beans into an oven-safe casserole dish and pour the creamy mushroom sauce on top and toss until well coated. Evenly sprinkle the remaining parmesan over the green bean mixture.

Transfer the dish into the oven and bake for 20 minutes.

Then remove from the oven and toss the mixture once more. Evenly sprinkle the fried shallots over the green beans. Place back into the oven to bake for another 7-10 minutes, careful not to burn.

Serve this green bean casserole immediately. Enjoy!

I made this last night for Thanksgiving per the "make ahead" instructions and it was delicious!  We don't typically do green beans for the holidays (we stick to collard greens), but these were a hit!  Great flavor and the homemade shallots are also excellent!
