Combine the breadcrumbs and seasoning first. In a small bowl, stir together the breadcrumbs, grated Parmesan, garlic powder, basil, oregano, salt, and pepper.

Add the ground chicken to a large bowl, then add the seasoned breadcrumb mixture and the egg. Use your hands to combine the ingredients until evenly mixed.

Shape the meat mixture into meatballs, about 1-1.5 Tbsp each. You should get around 20 meatballs.

Heat 1 Tbsp cooking oil in a large skillet over medium heat. Once the skillet is hot and the oil is shimmering, add half of the meatballs. Cook the meatballs about one minute on each side, until all six sides are browned and the meatballs are cooked through. Transfer the cooked meatballs to a clean plate. Add the second tablespoon of cooking oil to the skillet and cook the second batch of meatballs in the same manner.

While the meatballs are cooking, begin the pasta and sauce. Bring a large pot of water to boil for the pasta. Once boiling, add the pasta and cook until tender (7-10 minutes). Drain the pasta in a colander. Add the sauce to a medium sauce pot and heat over medium-low, stirring occasionally, until heated through.

Once all the meatballs are finished cooking, add them to the pot of heated pasta sauce and stir to coat. If needed, allow them to heat for a few minutes in the sauce.

Serve the cooked and drained pasta topped with sauce and meatballs.

Jerk Chicken with Pineapple Black Bean Salsa

Begin cooking your rice first. If you plan on packing this for meal prep, transfer the cooked rice to your meal prep containers and refrigerate them as you finish the rest of the recipe, so they can begin to cool down.

While the rice is cooking, prepare the pineapple black bean salsa. Coarsely chop the pineapple tidbits into smaller pieces, similar in size to the black beans. Place the chopped pineapple, rinsed black beans, diced red onion, and chopped cilantro in a large bowl.

Squeeze the juice of half the lime (about 1 Tbsp) over the ingredients in the bowl. Also add 1/4 tsp salt and a pinch of red pepper flakes (optional). Stir the ingredients together, give it a taste, and add more salt or lime juice if needed. Any unused lime will be cut into wedges for squeezing over the chicken before serving.

Next, prepare the jerk chicken. Pat the chicken breasts dry with a paper towel. Place a piece of plastic wrap over the chicken to eliminate splatter, then gently pound the chicken breasts into an even thickness using either a rolling pin or a mallet. Sprinkle the jerk seasoning over both sides of the chicken and use your hands to rub it into the surface, making sure they're completely coated.

Add the cooking oil to a large skillet, or preheat your grill. Once hot, add the chicken and cook until well browned on both sides, and the chicken is completely cooked through (about 7 minutes each side). It should no longer be pink in the center and the juices should run clear. For extra safety, use an instant read meat thermometer and cook until the internal temperature reaches 165ºF.

Transfer the cooked chicken to a clean cutting board and let it rest for five minutes. After five minutes, slice the chicken into 1/2-wide strips.

To serve, place about a cup of cooked rice on a plate, or in your meal prep container, top with about a cup of the pineapple black bean salsa, and a few strips of the jerk chicken. Slice the remaining lime into wedges and squeeze fresh juice over the chicken just before eating.

Asian Ground Chicken Noodles

Tablespoon Olive Oil

Pound Ground Chicken

Ounces Sliced Mushrooms

Bell Pepper (Thinly Sliced)

Green Onions (Sliced)

Water

Tablespoons Low Sodium Soy Sauce

Lime

Cloves Garlic, (Minced)

Tablespoons Brown Sugar

Sesame Oil

Cornstarch

Sriracha

Packages Ramen Noodles, (Seasoning packet Discarded)

Cup Chopped Peanuts, (OPTIONAL)

Tablespoons Chopped Cilantro, (OPTIONAL)

Heat the olive oil in a large skillet over medium high heat.  Add in the ground chicken, bell pepper, mushrooms, white parts of the green onions, and a pinch of salt and pepper.  Cook stirring occasionally until cooked through.

Meanwhile, in a small bowl whisk together the water, soy sauce, lime juice, garlic, brown sugar, sesame oil, corn starch, and sriracha.

Once the chicken has turned white, pour over half of the sauce and stir to combine.  Scoot the meat mixture to one side of the pan.

Pour the 1 1/3 cups of water into the empty side of the pan.  Break each brick of noodles in half and add to the pan.  Simmer for 1-2 minutes until the noodles are starting to soften.  Flip the noodles over and gently break apart with a fork, continuing to simmer for 1-2 more minutes until soft.

Pour the remaining sauce into the pan and toss the meat mixture and noodles together to combine.

Serve immediately topped with green onions, cilantro, and chopped peanuts if desired.

Add the olive oil to a skillet over medium heat. Cook the onion for 3-4 minutes until softened, then add the garlic and cook a minute longer.

Add the ground chicken to the skillet and cook while breaking up into small pieces until the chicken is cooked through. Season the chicken with salt and pepper.

Mix the chili garlic sauce, soy sauce, brown sugar, sesame oil and chicken broth together in a bowl. Pour over the ground chicken and stir to combine. Bring to a simmer and then add the cornstarch mixture while stirring. Simmer the chicken until the sauce is thickened, taste for seasonings and serve with scallions and sesame seeds.

Made this tonight....it’s excellent! So delicious and easy. Kids liked it too. Don’t leave the scallions out....they add such a nice flavor.

I used 1 TBS hoisin plus 1 tsp red pepper flakes and 2 tsp  rice vinegar as a substitute for the chili garlic paste since I didn't have any. Not as spicy but the recipe came out fantastic! Will definitely make again, next tie with the chili garlic paste.

Absolutely delicious and super easy!  I doubled the sauce - but I think I would reduce the soy sauce by 1/4 cup after doubling the sauce.  Was a wee bit salty.  Family loved it - definitely a keeper.  This will be another go-to for our family.  Thank you!

This was delicious! I used 1 lb. of ground chicken plus a pile of veggies besides the onion and scallions (broccoli florets, chopped zucchini, julienned baby carrots, chopped red/yellow pepper). I also added some minced ginger root because I had a small piece handy. Served with short grain brown rice.

Wow!   This is my new favorite quick meal go-to.     Confession - I omitted the sesame oil, as it's something my tummy doesn't tolerate well.      My husband came home from work and inhaled two bowls!   This recipe will go in my normal dinner rotation.

This recipe is an absolute FLAVOUR BOMB of goodness!!  I had nooooo idea what I should make with my ground chicken last night.  I was so happy I stumbled across this recipe!  it looked so delicious and sounded quick and easy!  It WAS!  I will make this again and again for sure!  Like many comments have mentioned, this recipe could be easily tweaked by adding a variety of chopped vegetables for volume, flavour and colour but it’s really fantastic made quite simply as per the recipe!  Two of us polished off our Sesame Chicken and Rice in one sitting!  We were very hungry 😅😅 LOL   Thank you for the fabulous inspiration!!

I was just looking for a recipe for ground chicken which I grabbed by mistake instead of turkey, and I'm so glad I found this one!
