Roasted red pepper pesto is a simple, yet flavorful pesto recipe. It requires only 5 ingredients and it&#039;s super easy to make. Vegan and gluten-free.

Roasted Red Pepper Pesto

red peppers (peel the skins)

tomatoes

basil leaves

garlic

salt

Preheat oven to 200°C.

Wash 4-5 red peppers really well and pat them dry with a dishtowel.

Place on a baking sheet lined with parchment paper and put them in the oven to bake for approx. 35-40 minutes, or until soft, puffy, and slightly charred. Turn them at least once during cooking.

Set aside to cool completely before peeling the skins off.

How to roast red peppers

Soak sun-dried tomatoes in water for a couple of hours. Drain them well and put them in the high-speed blender. 

Add roasted red peppers, garlic, basil leaves, and process until smooth. Season with salt.

Transfer pesto to a bowl and chill before serving.

Drizzle with olive oil and garnish with basil leaves.

Great recipe, especially with the added seasoning. Some sliced black olives on the top is yummy as well

Agree with Gold Controller and the comments that this recipe is awesome, but needs a bit more. 

I made sure to squeeze ALL the lemon juice, added a few fresh cloves of garlic, and some dried oregano, subbed dried dill (and added a bit more than the amount called for). 

That was enough to make this a<strong> crowdpleaser</strong>. I served this as one of several dips at a superbowl party, and this was one only one that was finished by the end of the night! So delicious.

I served with pita chips, and people also liked to take tomatoes, cucumbers, yellow peppers and carrots from the veggie tray nearby to eat with this dip, which is a great, more healthy option!

I did not have a hand-mixer, so I used a fork to beat this...it took longer than listed in the recipe, and was a bit more tiring, but still achieved a great, smooth whipped texture as mentioned.

You really need to “jazz” up this recipie in order to get a true authentic taste. In short, SEASON THIS DIP. 

Add some oregano, garlic (powder or cloves), onion (powder or whole red onion), pepper, and maybe a dash of thyme. Use sea salt if you have it on hand. 

If you plan on bringing this dip to some sort of event or pot luck, I suggest reducing the amount of olive oil just incase people are picky about it. Using the full amount gives plenty of the olive oil flavor, but in my experiences, not too many people who don’t cook with it or eat with it on a regular basis aren’t exactly fans of the taste. 

Overall, the recipie is a great base for a refreshing appetizer. But people, please season your food. Greeks enjoy their seasonings and use them generously. And I say that from personal experience.

I added Greek salad dressing mix to spice it up a bit as recommended and it really made a difference!

I made this for my New Years party and it was a BIG HIT! Everyone loved it. I didn’t have lemon and dill, but I added garlic salt with parsley and it was so delicious. Yum! Two thumbs up!

made it as-is tonight (half recipe), and I may add kalamata olives and minced pickled peperoncini peppers, but it’s bright and tasty with the lemon zest.

I added kalamata olives ad garlic powder. It was just ok.

People Are Losing Their Minds Over This Greek Feta Dip

Layers of refried beans, sour cream ranch dressing, cheese, tomatoes and avocado make this 10 minute appetizer a party pleaser!&nbsp;

Skinny Taco Dip for a Crowd

14 ounce fat free refried beans (add a second can if desired)

light sour cream (or greek yogurt)

ranch dressing mix

lettuce

cheddar cheese

green onions, chopped

olives

avocado,

In 9 x 13 inch baking dish, spread out the refried beans.

Combine ONE TABLESPOON of the ranch dressing saving the rest for another use, and 2 cups light sour cream. &nbsp;Pour on top of the refried bean layer.

Top with lettuce, cheese, tomatoes, olives, onion and avocado.

Cover and store in the refrigerator until ready to use, up to 6 hours. &nbsp;

Serve with salsa on the side, chips and fresh cut veggies for dipping!

Herbed Avocado Egg Salad

avocado

lemon, juiced (about 2 tablespoons)

tbsp extra virgin olive oil

eggs,

sprouted seed crackers

tbsp fresh parsley, chopped

Making the salad:&nbsp;Slice and pit the avocado. Scoop the flesh into a small bowl. Lightly mash the avocado and stir in the lemon juice, olive oil, salt, and pepper. Add the chopped eggs and toss lightly to combine.&nbsp;

Assembly: Place the sprouted seed crackers in stacks of two on a serving platter. Add a dollop of avocado egg salad to each stack. Top with fresh chopped parsley, chives, or dill. Serve immediately.&nbsp;

Loaded Vegan Stuffed Potato Skins

Preheat oven to 375°F (190°C)

Scrub the potatoes under cool water and pierce with a fork or a sharp knife a few times. Bake them for approximately 40 to 45 minutes, or until they’re just fork tender (You don’t want them to be too soft or the skins will fall apart). For ultra crispy skins, lightly oil the potatoes.

While the potatoes are baking, make the taco filling. SEE NOTE

Let the potatoes cool until you can handle them without burning your hands.

Cut them in half vertically and scoop out the potato, leaving about a quarter of an inch of potato attached to the skin.

Mix the scooped-out potato with nutritional yeast and salt and pepper until creamy and totally combined.

Fill the potato skins with the potato mixture and taco filling and bake for 10 minutes to heat through. Brush a light layer of olive oil on the skin if you want it to be extra crispy.

Top with the chopped pepitas, green onion, pickled jalapeno, tomato, and cilantro.

Greek Salad Skewers Are The Easiest Way To Get Your Greek Fix

Recipe video above. Fabulous finger food, fast to make vast quantities rather than the usual fiddly assembly! Happens to be HEALTHY. By far the most popular finger food I&#x27;ve served at gatherings in recent years - people love the freshness of the cucumber with the richness of the smoked salmon mousse! (Which is just a fancy name for pureed smoked salmon dip LOL!)

Cucumber Canapés with Smoked Salmon Mousse

/ 5 oz smoked salmon ((Note 1))

/ 5 oz Cream Cheese (, softened (I use Philadelphia, Note 2))

sour cream

mayonnaise

dill

garlic (, minced)

tsp lemon zest ((1 lemon))

cucumbers

Lemon slices (, for serving)

Place Salmon Mousse ingredients in a food processor. Blitz until completely smooth, scraping down sides as needed.

Fit piping bag with wide star tip nozzle (1.5-2cm / 0.6 - 0.75" wide), then transfer Mousse into piping bag. Refrigerate for 5 hours until firmed.

Salmon Mousse:

Cut into 1.5cm thick / 0.6" slices.

Use a small melon baller or teaspoon to scoop a well out.

Cucumbers:

Pipe mousse into cucumbers. Top with dill and serve immediately.

Assemble:

This quick and easy appetizer is perfect for any occasion. A creamy, fluffy dip made with whipped salty feta, paired with a honey blend of chili flakes and garlic. Serve alongside crispy pita bread, crackers or a veggie platter for a delightful starter.

200 g/7 oz feta

100 g/3.5 oz full fat ricotta

g/1.5 oz full fat sour cream

salt + black pepper (to taste)

tsp black & white sesame seeds (for topping)

Feta, ricotta and sour cream should be at room temperature.

Add feta, ricotta and sour cream to a food processor. Season with salt and pepper. Blend on high until smooth, about 2-3 minutes. Taste, add salt and pepper.

In a saucepan, heat olive oil over low. Add garlic, sauté until fragrant, about 1 minute. Turn off the heat. Stir in honey, lemon juice and chili flakes. Season with salt and pepper.

Serve the whipped feta drizzled with spicy honey. Top with chives, za’atar, sesame seeds, some extra freshly ground black pepper and chili flakes.

Enjoy with pita chips, naan or on a veggie platter.

Leftovers can be used as a spread or a dressing.

Delicious and easy Stovetop Tuna Patties with a kick of spice from fresh jalapenos. The cool and creamy Cilantro Lime Dipping Sauce is the perfect compliment to these tuna patties.

Spicy Stovetop Tuna Patties

red onion (chopped fine)

jalapeno (chopped fine)

garlic (minced)

carrots

tuna (drained)

eggs

breadcrumbs

mayo

cilantro (chopped fine)

scallion (sliced thin)

½ tsp kosher salt

full fat greek yogurt

tbsp mayo

Heat a large saute pan to medium and add 1 tbsp olive oil. Once hot, add red onion, jalapeno, garlic, and shredded carrots. Cook for 4-5 minutes, until onions are translucent and have softened. Set aside.

In a large mixing bowl, add the drained tuna and use a fork to break into small pieces. Add 2 eggs and stir together until evenly combined.

Add remaining ingredients - cooked vegetables, breadcrumbs, mayo, cilantro, scallion, and kosher salt. Stir together until smooth.

Form into 3” wide circular patties that are ~1” thick. You should get ~12-13 patties.

To the same large saute pan used to cook the vegetables, add 2-3 tbsp of olive oil and heat to medium low. Add patties and cook for 3-5 minutes per side (cooking in batches as needed), or until browned on both sides.

While patties are cooking, add all ingredients for the cilantro lime dipping sauce to a bowl and whisk together until smooth.

Serve immediately with the dipping sauce and enjoy!

These crispy air fryer salmon bites make the perfect appetizer for entertaining guests, and also serve as an amazing quick dinner recipe. Serve with your favorite side dishes, such as steamed rice, pickled vegetables, avocado, and spicy mayo sauce for a complete meal!

Air Fryer Salmon Bites

Tbsp avocado oil

salmon

Tbsp coconut aminos or low-sodium soy sauce

Tbsp rice vinegar

tsp toasted sesame oil

Tbsp lime juice

Tbsp sriracha

tsp maple syrup

If you’re making the chipotle mayo sauce, stir the ingredients together in a small bowl, cover with plastic wrap, and refrigerate while you’re preparing the salmon.

Remove the salmon from its packaging and pat any excess moisture dry with paper towels. Transfer salmon to a cutting board. Chop the salmon filet into bite sized chunks. Note: You can leave the skin on or remove it with a sharp knife. I leave the skin on because I love the crispy texture it brings to the salmon bites. Plus, the skin is where the majority of the omega 3s are.

Combine all of the ingredients for the marinade (coconut aminos, rice vinegar, garlic, sesame oil, and lime juice) in a small bowl.

Transfer the chopped salmon to a large zip lock bag or sealable container along with the marinade. Seal the bag and swish everything around until all of the chunks of salmon are coated in marinade. Marinate the salmon for at least 15 minutes in the refrigerator, or up to 24 hours if you have more time.

Preheat the air fryer to 400 degrees F for 4 minutes. Spray air fryer basket with cooking spray.

Transfer the marinated salmon cubes to the air fryer basket in a single layer (you may need to do this in two batches depending on the size of your air fryer).

Air fry at 400 for 8 to 12 minutes, or until the outside of the salmon is crispy and the bites are cooked through. Salmon is considered fully cooked when it reaches an internal temperature of 145 degrees Fahrenheit. You can check the temperature by inserting a meat thermometer into the largest chunk of salmon. While the salmon cooks, you can prepare any side dishes.

Serve crispy air fryer salmon bites with chipotle mayo sauce and any choice of side dishes. Steamed brown rice or white rice, edamame, green onions, sesame seeds, avocado, kimchi, pickled ginger, seaweed salad, and pickled cucumber are all great options for additions to a delicious meal.
