Keto Egg Noodles with Almond Flour Recipe

This delicious Halloumi Pasta is mixed with roasted tomatoes for a fresh and light pasta dish that still tastes super comforting.

Halloumi Pasta

250 g cherry/grape tomatoes

olive oil

140 g penne pasta

g halloumi (cubed)

tbsp cream cheese

lemon (juice only)

g basil (finely chopped)

Sea salt and black pepper

Put the tomatoes in a roasting tin with 1 tbsp of olive oil and season. Put in a preheated oven at 180C for 25 minutes, until the tomatoes start to blister.

Add the pasta to a pan of boiling water and simmer for 12 minutes.

Heat a frying pan and add the halloumi and dry fry for around 4 minutes, stirring.

Drain the pasta and put it back in the pan. Stir in the cream cheese, lemon juice, fresh basil and salt pepper.

Add the cooked tomatoes and halloumi to the pan and stir, then serve.

Chicken and Red Pepper Pasta

sprays fry-light (or other 1-cal per spray oil)

17.5 oz (500 grams) boneless chicken thighs

salt and pepper

onion

garlic (peeled and minced)

red pepper (chopped (seeds discarded))

portobello mushrooms (sliced)

chicken stock cube (or 1 tsp bouillon

tomato puree

oregano

oz (800 grams) tinned chopped tomatoes

10.5 oz (300 grams) dry spaghetti ((gluten free if required))

basil leaves

tsp chill flakes

Heat a large frying pan and spray with the fry-light.

Add in the chicken and cook for 8-10 minutes until the outside of the chicken starts to brown (if you don&#x27;t move it around to much it will brown a lot quicker).

Add in the onion and cook for a further 5 minutes until softened.

Add in the garlic and red pepper and cook for 2 more minutes, then add in the mushrooms.

Crumble on the stock cube (or bouillon), add the tomato puree and oregano and stir to combine.

Add the tinned tomatoes, stir and bring to a gentle simmer. Simmer for 15-20 minutes.

Whilst the sauce is simmering, fill a large pan with boiling water from the kettle and add the spaghetti. Cook for 10-12 minutes until al dente.

Drain the spaghetti  then divide between 4 bowls. Top with the chicken and sauce and sprinkle on the basil leaves and chilli flakes before serving.

A lightened-up chicken and spaghetti meal with bags of flavour! This Chicken and Red Pepper Pasta is great for when you're craving carbs, but you're trying to eat lighter. It comes in at 529 calories, and is syn-free if you're following Slimming World!

Chicken and Red Pepper Pasta | Lighter but still delicious dinner!

Sliced tender pieces of chicken tossed in with asparagus, tomatoes, and pesto.

Asparagus Chicken Pasta

lb Boneless, Skinless Chicken Breast (sliced in half lengthwise)

Tsp Kosher Salt (divided)

½ Tsp Freshly Ground Black Pepper (divided)

lb Asparagus (ends trimmed,

Cups Cherry or Grape Tomatoes

¼ Cup Basil Pesto

Garlic Cloves (minced)

Tbsp Olive Oil (divided)

oz Dry Whole Grain Fettuccine

Bring a pot of salted water to a boil, and cook pasta according to the package directions. Drain the pasta, reserving 1 cup of the cooking water.

While the pasta is cooking, season the chicken on both sides with half of the salt and pepper.

Heat 2 tablespoons of the olive oil in a large, deep skillet over medium heat. When the oil is shimmering, add the chicken in a single layer and sear for 3 minutes per side, or until cooked through.

You may have to cook the chicken in batches. Transfer the chicken to a cutting board, and allow it to rest for 5 minutes, before slicing it into strips.

While the chicken is cooling, heat the remaining tablespoon of olive oil in the skillet, and add the asparagus and cherry tomatoes. Add in the garlic and sauté. Stirring often, for 2-3 minutes, or until the asparagus is tender-crisp.

Add 1 cup of the reserved pasta cooking water to the skillet, pesto, and the sliced chicken, and bring the liquid to a simmer.

As soon as it starts bubbling, add the cooked pasta, and toss with tongs to coat the noodles in the sauce. Remove from the heat and serve immediately.

Instant Pot Skinny Creamy Ziti is a play off of my popular Dump and Start Creamy Ziti recipe. This time reducing the calorie and fat content substantially! Substituting Evaporated milk for Creamy Ziti makes this Instant Pot Pasta dish still creamy, cheesy and full of flavor with none of the guilt!

Instant Pot Skinny Creamy Ziti

chicken broth

lb 8 oz dry ziti pasta

tsp minced garlic (dried)

salt and pepper (to taste)

red pasta sauce

evaporated milk

parmesan cheese (not the powdered stuff!)

mozzarella cheese

Place the broth, garlic, salt and pepper into the Instant Pot liner. Add the pasta to the pot. All noodles should be covered with the broth. DO NOT STIR.

Cook on Manual HIGH for 6 minutes. Allow for a 6 min NPR before QR the pressure. Stir the noddles, some may be slightly stuck together, but that is okay. Once you add in the evaporated milk and warm through, all will be well.

Add the red pasta sauce to the Instant Pot and stir well.

Add the evaporated milk to the Instant Pot and stir well.

Turn the Instant Pot onto Saute HIGH until the sauce is bubbling.

Turn the Instant Pot off and gradually stir in the parmesan cheese then the mozzarella cheese. Stir until the cheese has melted completely and the sauce has thickened. The sauce will thicken more as it cools. Enjoy!

This Vegetarian Eggplant Parmesan is easy to make and so delicious. It's a lot like lasagna only made with healthy eggplant. You will LOVE it!

Vegetarian Eggplant Parmesan

yellow onion, diced

bell peppers, diced (any color)

carrot,

garlic cloves, very finely minced

tomato paste

sea salt

honey

panko (or sub gluten-free breadcrumbs, if needed)

cracked pepper

milk (I use almond milk)

eggplants

feta cheese

Heat the olive oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until the onion is soft, about 5 minutes. Add the bell peppers, carrot and garlic and cook until the vegetables are soft, about 6-8 minutes.

Add the tomato paste, sea salt and oregano to the pot and let it cook for 2-3 minutes. Add the crushed tomatoes and the honey to the pot, reduce the heat, and let it simmer gently until the eggplants have finished roasting.

While the sauce is cooking, prepare the eggplants. Preheat your oven to 375 degrees. In a medium sized bowl mix the panko, oregano, black pepper and sea salt. Pour the milk into another bowl. Dip each eggplant round first into the milk, and then into the panko. Using one hand for the milk and the other for the panko will make this a lot less messy. Place the panko coated eggplant round onto a baking sheet. Bake the eggplant in the oven for 20 minutes.

Spread a couple of small scoops of the tomato sauce in the bottom of an 11&#215;9 inch baking dish. Lay half the eggplant rounds over the sauce then cover with half of the remaining sauce and half of the cheeses. Finish assembling the vegetarian eggplant parmesan with the remaining eggplant, sauce and cheeses. Bake in the oven for 40 minutes, or until it is hot and bubbling.

Remove the vegetarian eggplant parmesan from the oven and let it rest for 10 minutes before serving.

This definitely sounds like a easy dish that is loaded with flavor. Love anything that has that much cheese in it.

I’ll make this one again. It came together easily, and the simmering sauce added a lot of goodness.

This was delicious! I would have liked to see if you were right about it being better the next day, but every morsel was enthusiastically devoured. I did make two slight changes based on what I had on hand: 1) I used cheddar cheese instead of mozzarella, and 2) I added a layer of fresh basil between the eggplant layers. So glad to have come across this recipe!

One question--is there parmesan in this recipe? I didn't see it.
