I've made a skillet cookie before but all I can say is that this is the best recipe I've ever used to make a good skillet cookie.  Yum!

I would recommend creaming the sugars and mixing the dry ingredients separately and then adding in. If following the current direction it has a strong egg flavor and the texture is bready

Carrot Cake Cookies

c. (1 1/2 sticks) butter, softened

brown sugar

eggs

pure vanilla extraact

cinnamon

nutmeg

carrots (from 2 medium carrots)

c. unsweetened shredded coconut

c. raisins

c. old-fashioned oats

I'm sure the original recipe would have been delicious. I do not enjoy coconut and raisins so I replaced with chocolate chips and skipped the icing. So delicious. My cookies turn out good.

Tasted great and looked amazing, but they were a little on the cake side (as opposed to chewy cookie). Good if you're into that kind of texture.

Instead of old fashioned oats I used regular oats. Used a little more than the recipe called for because the reg oats are smaller than old fashioned. Also added a little more baking soda. Added pecans instead of coconut. 
I dried the shredded carrots on paper towels before adding to the cookie mixture so it wouldn’t be loose. Refrigerated the dough for about an hour. The cookies came out great!  Soft and cakey. I baked them for 7 minutes turned the pan then baked them for another 5 minutes.  
Make sure the egg and the butter sit out overnight to get to room temperature

salted butter, room temperature

cocoa (I use Hershey’s Special Dark)

2. Cream butter and sugars together until light and fluffy, about 3-4 minutes.

4. Add flour, cocoa and baking soda and mix until well incorporated and thick.

5. Make balls of cook dough about 2 tbsp in size.

6. Break balls of dough in half, add candy bar to the middle, then press dough halves back together and seal edges.

7. Place cookies on a parchment or silicone baking mat lined cookie sheet and sprinkle with sea salt.

8. Bake for 8-10 minutes. Center might look a little undercooked, but edges should be done.

9. Remove cookies from oven and allow to cool for 2-3 minutes, the remove to cooling rack to cool completely.

Made these cookies for the first time and am very happy with the recipe. I cut back a bit on the sugar as the peanut butter already is sugared.  This recipe made almost 6 dozen good size cookies. I'd make them again. (PS I added some chopped peanuts to the batter.)

For all the extra steps it was subpar. I tweaked the recipe creaming the brown sugar with butter, vanilla, cinnamon, and a bit of nutmeg. I used coarse seasalt instead of kosher salt. I scooped out the dough into the shapes and refrigerated for an hour and while still cold i popped into the oven. Center soft and gooey and the edges crunchy. 

Also for added texture add an additional 1/2 cup of peanut butter but make it chunky peanut butter.

This is such an easy recipe to use and cookies are always delicious. It is now my go to recipe and one that is always requested by my family.

So tasty! I always use coconut oil instead of butter for added trace vitamins, and started using a 1/2 raw can sugar, 1/2 stevia blend to (somewhat reduce the sugar), but this recipe is so good—easy too! Usually I add vanilla extract as another person posted, but honestly, these are so yummy and peanut-buttery even without it!

bacon grease (can be replaced with butter)

white sugar

maple syrup

tsp maple extract

flour

oz bacon (approximately 1 ¼ cups, cooked and diced)

chocolate chips

Personally, I like to cook my bacon in the oven for ease. Lay bacon on a rack placed over a rimmed cookie sheet. Place in preheated 375°F oven for 15-20 minutes until the bacon is cooked. Remove from the oven and let cool. Drain and reserve grease for cookies.

Cream together butter, bacon grease, and sugars until light and fluffy, about 3-5 minutes.

Add eggs, one at a time, followed by vanilla and maple extracts. Mix to incorporate.

Add flour, salt, and baking soda. Mix until no dry ingredients remain.

Add bacon, chocolate chips, and caramel bits. If not using a heavy-duty stand mixer, it may be best to fold these in by hand.

Drop cookie dough (approximately 2 tablespoons in size) on a baking sheet and bake in preheated 350°F oven for 12-15 minutes until the edges are golden and just set.

Remove from oven and let cool on baking sheet for 5 minutes. Then transfer to a cooling rack to cool completely.

all-purpose flour ((215 grams), weighed

old-fashioned rolled oats (or quick cooking oats)

butter (1 stick, unsalted, softened)

dark brown sugar

egg (room temperature)

vanilla extract (not vanilla flavoring)

milk chocolate m&m's

Preheat your oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat and set it aside.

Add the flour, oats, baking powder, and salt to a medium mixing bowl and whisk together until combined. Set the flour mixture aside.

Beat the butter, peanut butter, and sugars in the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl with a handheld mixer, until light and creamy, about 3 minutes. Start on low speed then gradually increase the speed to high.

Add the egg and vanilla and beat on medium until completely mixed in. Add the flour mixture to the bowl with the butter mixture and beat until no more streaks of dry flour are visible. Start on low speed, then gradually increase the speed to medium-high, scraping down the sides and bottom of the bowl to ensure everything gets evenly mixed.

Add the m&m's and chocolate chips to the bowl and beat on low until evenly mixed into the dough. The dough will be slightly crumbly.

Using a cookie scoop, scoop about 3 tablespoons (60g) of dough into your palm and pat them into cookies about 3/4 inch thick. Press a few more m&m's and chocolate chips into the tops of the cookies if you like and line them on the baking sheet, about an inch apart.

Bake the cookies in the preheated oven on a center rack for 8 to 10 minutes, or until the bottoms just start to turn light golden brown.

The cookies will look slightly underbaked and do not spread much at all while baking - that is exactly what you want! The cookies will continue to set as they cool and will be perfectly soft and chewy on the inside. Serve these cookies warm or at room temperature.

Lay plastic wrap on a large flat surface and scoop the dough out onto the plastic wrap. Pat the dough into a rectangle, wrap the dough in plastic wrap, and refrigerate it for one hour.

Right before taking the dough out of the refrigerator, add the melted butter, brown sugar, and cinnamon to a small bowl and mix with a fork until combined and it resembles wet sand.

After one hour, take the dough out of the refrigerator, remove the plastic wrap, and place it on a lightly floured surface. Lightly dust a rolling pin with flour and roll the dough out into a 1/4-inch thick rectangle.

Spoon the cinnamon, sugar, and butter mixture all over the cookie dough, getting as close to the edges as possible. Use your fingers to evenly distribute the cinnamon sugar on top of the cookie dough, but do not firmly pat or press it into the dough.

Starting with one of the long edges, carefully lift the dough, tightly roll it into a log, and seal the seam by patting the cookie dough together to fully enclose the cinnamon-sugar layer. If you notice the cookie dough cracking in places, just use your fingers to seal it back together.

Wrap the log in plastic wrap and refrigerate the cookie dough for at least an hour up to overnight. When ready to bake, preheat your oven to 350°F. Line a baking sheet with plastic wrap or a silicone baking mat.

Remove the plastic wrap from the cookie dough log and slice it into 1/2-inch thick cookies. Place the cookies on the baking sheet about 2 inches apart and bake them in the preheated oven for 8-10 minutes, or until the edges just start to turn light golden brown.

Allow the cookies to cool for 5 minutes on the baking sheet then transfer them to a wire rack to cool completely. While the cookies are cooling, whisk together the powdered sugar, milk, and vanilla until smooth, and use a spoon to drizzle the glaze over the completely cooled cookies.

Place 10 ten oreos in a gallon zip top bag and break them into coarse pieces by hitting them with a rolling pin a few times. Leave some large chunks in tact. Set the oreos aside.

In a large mixing bowl, whisk together the flour, cornstarch, baking soda, and salt and set it aside.

Place the butter in the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl using an electric handheld mixer and beat the butter on medium-high (speed of 6-7 on a stand mixer) for 2-3 minutes until light and creamy. Scrape down the bottom and sides of the bowl, add the cream cheese, and beat for 1-2 more minutes until smooth.

Scape down the the bowl, add both sugars, and beat for 3-4 minutes until light and fluffy. Start on low speed and gradually increase to high (7-9). Add the egg and vanilla and beat on medium until completely mixed in.

Add the flour mixture to the bowl with the butter mixture and mix until no more streaks of dry flour are visible. Start on low speed and gradually increase to medium-high. Do not overmix the dough. Scrape down the bowl as needed to ensure everything gets evenly mixed.

Add the broken oreos and white chocolate chips and mix them into the dough with a wooden spoon. Do not overmix. Cover the bowl with plastic wrap and refrigerate the dough for at least an hour up to overnight. Let the dough sit out for about 30 minutes before baking if you refrigerate it overnight.

Preheat your oven to 350°F. Spoon out about two tablespoon portions of dough, roll them into balls using both palms, and place them on the lined baking sheet about two inches apart.

Break the remaining 4 oreos into pieces with your hands and press a couple pieces into the tops of each cookie.

Bake the cookies on a center rack in your oven for 10-12 minutes or until the edges barely start to turn golden brown. The centers will look like the cookies are not done - this is what you want.

Allow the cookies to cool for five minutes on the baking sheet then transfer them to a wire rack to cool completely.
