Place a rack in the lower third of your oven and preheat to 450 degrees F. Drizzle a large rimmed baking sheet with 1 1/2 tablespoons olive oil, brushing it as needed so that it nicely coats the pan.

Scrub the potatoes and peel if desired (I leave the peels on). Slice into 1/4-inch-wide sticks. Place the potatoes in a large bowl, then pour very hot tap water over the top so that it covers the potatoes by at least 1 inch. Let sit 10 minutes.

Drain the potatoes, then transfer them to a clean towel and dry as completely as you can, changing the towel as needed. Rinse and wipe out the bowl you soaked the potatoes in, then return the potatoes to the bowl. Drizzle with the remaining 1 1/2 tablespoons olive oil and sprinkle with salt, garlic powder, dill weed, onion powder, and pepper. Toss to coat, making sure the spices and oil are well distributed. Spread the potatoes into a single layer on the prepared baking sheet.

Roast in the lower third of the oven for 15 to 20 minutes, until turning golden underneath. Remove the baking sheet from the oven and, with a large, firm spatula, carefully loosen the fries from the bottom of the pan. Flip them in large sections as best as you can so that the potatoes rotate and brown evenly on all sides (no need to painstakingly flip every single one). With your fingers (be careful—the pan is hot!) return the potatoes to a single layer. Place the pan back in the oven and continue baking until the fries are as golden and crisp as you like, about 5 to 10 additional minutes (30 minutes total was ideal timing for this crispy-fry lover). While the fries are hot, sprinkle with any desired toppings and a bit more salt to taste. Place the cut potatoes in a bowl of cold water. Allow to soak for 30 minutes.

Drain potatoes. Place the potatoes on a layer of paper towels and pat dry.

To soak the potatoes:

In a large Dutch oven or deep pot over medium-high heat, bring oil to 300 degrees.

Place 1/3 of the potatoes in the oil, taking care to not overcrowd, and cook until tender about 3-4 minutes. Remove from oil using a slotted spoon and place on paper towels. Repeat with the remaining potatoes.

Increase the temperature of the oil to 400 degrees. Place 1/3 of the potatoes back in the pot, frying until golden brown, about 3 to 5 minutes. Remove from oil using a slotted spoon and place fries on paper towels. Season with salt and freshly ground black pepper to taste. Serve immediately.

To fry the french fries:

Preheat oven to 400 degrees. Prepare a baking sheet with parchment paper. In a large bowl, toss potatoes with 1 tablespoon oil.

Place potatoes in a single layer on wire rack. Bake until fries begin to crisp, about 20 minutes.

Toss fries and return to oven. Bake until fries are golden brown and crispy, about 15 minutes more.  Season with salt and freshly ground black pepper, to taste.  Serve immediately.

Spiralize each potato. Use kitchen shears or scissors to cut the potato &quot;noodles&quot; into shorter pieces. This doesn&#039;t need to be precise. This just prevents you from having one incredibly long fry!

Transfer the potato to a large bowl. Fill with cold water and let sit for an hour. DO NOT SKIP THIS STEP.

Scrub and dry potatoes, leaving peel intact. Cut into match sticks around 1/3 inch thick using a sharp knife or a French fry cutter.

Place into a large bowl and cover with cold water. Soak for 30 minutes, then spread on paper towels and pat dry.

In a large 6 quart Dutch oven or similar, heat 4-5 inches of oil to 300°F. Cook potatoes in batches for about 5 minutes to soften. (The potatoes shouldn&#39;t be browned at this point) Remove using a slotted spoon to a paper towel lined baking sheet.

Once all French fries are done, increase temperature to 400°F. Cook the fries in batches for 3-4 minutes until golden and crisp. Return to baking sheet and immediately season with salt.

Dry: Drain and rinse potatoes well. Using paper towels or clean absorbent cloths, pat-dry all excess moisture from potatoes.

Season: In a bowl, gently toss potatoes with olive oil and salt. Add pepper and any other seasonings, if desired. 

Cook

Cook: Working in batches, place fries in a single/even layer on rack of air fryer. Be sure fries are not overlapping. Cook 15-20 minutes or just until golden and crisp (cook time depends on thickness of fries.) While fries are cooking, set your oven to warm setting if you won't be serving the first batch immediately.

Keep Warm

Keep Warm: If not serving first batch right away, place them on a baking sheet in warm oven; repeat cooking the remaining fries. As always, fries are best served immediately after cooking.

Wash the russet potatoes and remove any bruises.

Cut the potato lengthwise into 1/4 to 1/2 inch thin slabs then cut the slabs into 1/4 inch thin matchsticks. Try your best to cut the potato into uniform slices to ensure the fries cook evenly.

Soak the potatoes. Put about 3 inches of water in a large pot and bring it to a boil. Once boiling, remove from the heat and place cut potatoes in the hot water to soak for 30 minutes. This is essential to remove some of the starch from the potatoes which will help them crisp while cooking.

Drain the water and lay potatoes out onto paper towels, patting them until thoroughly dry.

Preheat oven to 475 degrees. Drizzle oil over the potatoe and season with salt and pepper. Toss to combine. Spread out into an even layer on a baking sheet (I use one bakers half sheet pan per 1 cut potato), leaving space between them. Bake for 12 minutes.

Use a metal spatula to scrape potatoes loose from pan and flip to opposite side. Spread even spaced out again. Bake for an additional 8-15 minutes, or until potatoes are crisp.

Pour 3 inches of vegetable, canola, or peanut oil into a large, deep pot and heat to 300 degrees F. Cook the fries in small batches, adding them to the hot oil, until tender, about 4-5 minutes. Remove them to a paper-towel lined plate as they cook.

Increase the heat of the oil to 400 degrees F. Return small batches at a time to the oil and cook for 1-3 minutes, until golden and crisp. Remove from oil and season with salt, to taste.
