Prep: Stack tortillas to make cutting quicker, cutting into 6 or 8 wedges. Pour oil to fill a heavy-bottomed skillet (like a cast iron) ¼ to ½ inch deep, then heat over medium/high heat. Aim to keep the temperature around 360°F (182°C).

Fry: Working in batches, gently drop tortilla triangles into the hot oil. Fry for 2 to 3 minutes, flipping as needed, until chips are golden and crispy. Use a metal slotted spoon to remove tortilla chips, placing them on a few layers of paper towels to soak up excess oil. Immediately sprinkle with salt and let cool slightly before eating.

Prep: Preheat oven to 350°F (176°C). Lightly brush each tortilla with soybean oil. Stack tortillas and cut into 6 or 8 wedges.

Preheat the oven to 400 degrees F. Cut the tortillas into 8 triangles and spread them evenly among 2 baking sheets. Spray with cooking oil, season liberally with salt, and bake until crisp and light golden brown, 5 to 7 minutes. Check the chips at 5 minutes to ensure they don’t burn and remember that you will be baking them more when you melt the cheese later, so you don’t want them too brown. Remove the pan from the oven and let the chips cool and harden on a wire cooling rack while you make the beef. Keep the oven on.

In a large nonstick skillet, heat the olive oil over medium-high heat. Add the mushrooms and onions and cook, stirring frequently, until just beginning to soften, about 2 minutes. Add the ground beef to the pan and cook, crumbling it with a wooden spoon or rubber spatula, until no longer pink. Add the chili powder, cumin, garlic powder, salt, and pepper, and stir to coat the beef and veggies. Add the tomato sauce, stir well to combine, and bring the pan to a simmer. Reduce the heat to low and cook, stirring occasionally, until the mixture has thickened and the flavors have had a chance to blend and intensify, about 10 minutes.

Baking method 1: If you want to layer your nachos: Scatter half of the chips on the baking sheet, spoon half of the beef mixture over the top, followed by half of the cheese. Add the remaining half of the chips, followed by the rest of beef, and finish by sprinkling evenly with the remaining half of the cheese. Bake until the cheese is melted and bubbly, about 10 minutes. Top with sour cream, black olives, fresh cilantro, and sliced jalapeno, and serve!

Baking method 2: If you want to spread them out (to maintain crispy chips): spread the chips among the two baking sheets evenly. Spoon the beef mixture among the chips, trying to spoon beef onto each chip. Don’t worry if some falls on the baking sheets. Sprinkle the cheese evenly among the chips. Bake until the cheese is melted, about 10 minutes. Top with sour cream, black olives, fresh cilantro, and sliced jalapeno, and serve!

Cut the corn tortillas into fourths, for a total of 48 triangles. Line a large baking sheet with paper towels and set aside.

Pour the frying oil into a medium or large skillet and heat over medium-high heat. (You may need more oil depending on the size of skillet you use. Just make sure to have enough oil to fully submerge the tortillas.)

Heat the oil until it's reached about 350°F or until a small tortilla sizzles when placed in the oil. That means it's hot enough.

Place a handful of cut tortillas into the oil, working in batches so as not to completely crowd the skillet. Fry for about 2 to 3 minutes, until the tortillas turn a beautiful golden yellow.

Remove the tortilla chips from the oil using a slotted metal spoon and let any excess oil drain off by giving the spoon a little shake for a few seconds.

Transfer the tortilla chips to the lined baking sheet and season with sea salt immediately. Continue working in batches to fry the remaining tortilla chips.

Stack the tortillas on top of each other. Cut the tortilla wraps into 6 triangles, so you get 36 triangular chips - look at my pictures above in this post for visual help.

In a small mixing bowl, whisk oil, salt, and spices of choice based on the flavor you choose. Set aside.

Place the tortilla chips in a large mixing bowl, pour the oil mixture on top and gently toss the tortilla chips in the mixture using your finger, rubbing the chips to coat with flavored oil. They won&#39;t be perfectly coated on all parts, and that&#39;s ok. You don&#39;t want to use more oil to keep them healthy!

Now you have two options. If you have an XXL air fryer basket, you can air fry half the recipe batch at once. The tortillas chips won&#39;t be as flat but will have different shapes. Some will be curly.

Air frying small batch: air fry chips, placing them in a single layer in the basket. Set air fryer to 350°F (180°C). Air fry for 6-8 minutes or until golden and crispy - I like to check after 6 minutes and remove the one already crispy. If not crispy after that time, keep air frying until crispy and golden on the edges.

Air frying large batch: place half the batch in the air fryer basket. Set air fryer to 400°F (200°C). Air fry for 6-8 minutes in total shaking basket every 2 minutes, unsticking chips that may stick together. Keep air frying/shaking basket every 2 minutes until all chips are crispy.

Cool the cooked chips on a wire rack and air fry the remaining batch, following the same instructions.

Serve with your favorite dips like my cucumber dip or my vegan nacho chips sauce.
