In a small mixing bowl, combine all your dry ingredients and mix well. Add your beaten egg (white or whole), whipping cream, butter, and chocolate chunks and mix until a thick batter is formed.

If using a microwave, microwave in 30-second intervals until desired the texture is achieved (I usually get the best texture at 55 seconds) being sure not to overcook. If you overcook it, it will be dry. If using an oven, bake at 350 degrees Fahrenheit for 12-15 minutes, or until a the skewer comes out ‘just clean’ from the center.

Keto Brownie Mug Cake

In a microwave-safe mug (that holds at least 8 oz of liquid) add cocoa powder, coconut flour, baking powder and Swerve. Mix with a small whisk to break up any clumps and mix until evenly combined.

Add in heavy cream, water and oil. Whisk until batter is smooth. Sprinkle surface with dark chocolate.

Cook brownie in the microwave at full power for about 60-80 seconds. I like the brownie to be extra fudgy and slightly underdone, so I cooked mine to 65 seconds. Allow brownie to cool a few minutes before eating. Brownie is best eaten warm.

In a bowl, mix all ingredients with a fork or a balloon whisk. Whisk until there are no lumps.

Lightly grease 2 ramekins with oil or melted butter (I used light olive oil, but coconut oil also works).

Divide the batter between the ramekins. Microwave one ramekin at a time for 1 minute each on high. The tops should be glossy and the centre still jiggly. Then microwave each ramekin for a further 20 seconds.

Cool on the counter for 10 minutes, then cool in the fridge for circa 1 hour or until cool.

Eat straight from the ramekin or invert onto a plate and decorate with berries / whipped cream / a quick berry coulis.

Keto Peanut Butter Chocolate Chip Mug Cake

oz cream cheese (softened to room temperature)

tbsp natural creamy unsweetened peanut butter

tbsp erythritol granular

Add cream cheese into a microwave-safe mug that can hold at least 12 oz of liquid. Cover top of mug with paper towel and microwave cheese briefly (about 10-15 seconds) so that it is warmed up enough to easily whisk. Whisk with a small whisk until smooth and no lumps remain.

Add in peanut butter, erythritol, egg. Whisk until batter is completely smooth and egg is fully incorporated with no egg streaks remaining. Stir in half of the chocolate. Sprinkle remaining on top.

Cook cake in the microwave at full power for about 1 minute and 30 seconds. I used an 1100 watt microwave. You may need to adjust cooking time and power if your microwave is a different wattage. If desired, you can re-plate cake in a smaller mug before serving. Cake is best enjoyed warm.

Stir in 1/4 tsp lemon zest. Add a little more zest over surface of the cake. This should only be about a pinch worth spread out across the surface.

Cook the cake in the microwave for about 1 minute and 40 seconds. Let cake cool slightly before dusting with powdered sugar substitute (like Swerve)  or other topping of your choice. Cake is best consumed shortly after it is cooked.

Keto Lemon Poppyseed Mug Cake In 1 Minute

Large Egg

½ Tbsps (22 grams) Unsweetened Vanilla Almond Milk

Lemon

½ Tbsp. (7 grams) Unsalted Butter

¼ Tsp. Pure Vanilla Extract

Just less than ½ a Cup (50 grams) Blanched Almond Flour

Heaping tbsps (20 grams) Confectioners Swerve

½ Tsp. Baking Powder

Salt

¼ Tsp. Poppy Seeds

Optional Drizzle:

Tsps. (7 grams) Confectioners Swerve

½ Tsp. Unsweetened Vanilla Almond Milk

In a large measuring cup add all of the liquid ingredients, and whisk them until combined.

Now add the dry ingredients, and mix until they’re well incorporated with the wet ingredients.

Next, coat an 8oz (240mL) ramekin with baking spray, and add the batter to the ramekin.

Cook for 30 seconds, check on it, cook for another 30 seconds, check on it again, and cook it for 15 more seconds if needed.

While the mug cake is cooling, make the optional glaze.

In a small dish add all of the ingredients, and mix until combined.

Add the glaze to the mug cake once the cake has cooled, and serve.
