These simple roasted radishes make a fantastic healthy low-carb side dish. If you're looking for something a little different, give these a try!

Simple Roasted Radishes

radishes (greens and ends removed)

olive oil

Salt & pepper (to taste)

parsley (to taste (optional))

Preheat oven to 400F. Move the rack to the middle position.

Cut the radishes into equal-sized pieces. If they're particularly large radishes, cut them into quarters. Otherwise, cut them into halves. 

Add the radishes to a baking dish and toss them with the olive oil and salt &amp; pepper. Roast them face down if you want them to brown nicely.

If the radishes are small, roast them for 15 minutes and check to see if they're done to your liking. If they're larger, it may take up to 35-40 minutes to get them tender. Mine took about 30 minutes to get tender-crisp.

Toss with freshly chopped parsley if desired.

Buttery Cauliflower Rice Pilaf  - Low Carb, Gluten Free 

butter

garlic,

oz onion, diced (about 1 1/2 cups)

sea salt and black pepper,

cauliflower

chicken stock

tbsp powdered chicken granules, more to taste

Heat butter and olive oil in a large skillet over medium heat. Once melted, add the onion and garlic to the pan. Sprinkle with a little sea salt and black pepper.

Sauté until the onions are translucent and the garlic is fragrant.

Add the riced cauliflower, chicken stock and powdered chicken granules to the pan. Mix to combine all ingredients.

Continue sautéing until all the liquid has evaporated and the cauliflower is completely cooked.

Use a rubber spatula to scrape any caramelized bits from the bottom of the pan and mix in. Add additional salt and pepper if needed.

I made this and it was really good! I left out the onions and chicken granules because I didn't have any.   Kyndra, which brand of chicken granules do you use and recommend?

Fry the bacon in a skillet, then crumble into small bits and set aside.

Add all the remaining ingredients into a large bowl, except the broccoli, bacon, red onion and pine nuts, and whisk to combine.  

Add in the broccoli, bacon, pine nuts and red onion over the dressing and toss to coat.

Allow to sit for 20-30 minutes so the flavors can develop and the broccoli can absorb the dressing.  The longer it sits, the better it is!

Easy Broccoli Salad with Bacon

If you don’t love radishes, this 5-ingredient Roasted Radishes and Onions recipe will definitely change your mind!

Roasted Radishes and Onions

radishes (about 1 pound each trimmed of the greens)

Preheat oven to 425°F.

Halve the radishes or quarter any that are larger than a half dollar.

Cut the onions or shallots into wedges the size of the radish pieces.

Pile onto a rimmed cookie sheet or cast-iron skillet.

Drizzle the oil over the vegetables, sprinkle the salt and black pepper over the top and toss to coat, spreading the radishes and onions out into a single layer.

Roast for 10 minutes, lower the heat to 350°F, stir the vegetables, and roast for 20 to 30 more minutes, stirring every 10 minutes, or until the vegetables are deeply caramelized on the outside and tender on the inside.

Adjust salt as needed.

Layers of thinly sliced rutabaga cook in a creamy sauce and get topped with a generous helping of shredded cheese.

The Best Creamed Spinach

If you love a loaded baked potato but without the extra carbs, you&#39;re going to fall in love with this healthy Loaded Cauliflower Salad.

Loaded Cauliflower Salad

cheddar cheese

chives (chopped)

ranch seasoning (see notes, divided)

¼ teaspoon smoked paprika

Preheat oven to 400°F.

Wash and chop the cauliflower into small bite size florets and add it to a large bowl. Pour the olive oil and half of the ranch seasoning over the top, then toss to coat each piece.

Add cauliflower onto a baking sheet lined with parchment paper and bake for 30-35 minutes, or until slightly golden.

While the cauliflower is roasting, chop up the bacon and fry it in a skillet. Once crispy, drain onto paper towels and set aside.

In a large mixing bowl, add in the mayonnaise, sour cream, remaining ranch seasoning, smoked paprika and apple cider vinegar, then whisk to combine.

Add in the roasted cauliflower into the bowl while it's still hot, along with the shredded cheese, reserved bacon, dressing and chives.

Toss everything together until well combined and chill in the fridge for at least 1-2 hours before serving. The longer it sits, the better the flavor is.

Keto Potato Salad Recipe

Cup Green Peas

Mayonnaise

Water

Cut turnips and carrots

Peel the turnips entirely. Cut all the turnips into bite sized pieces with a sharp knife, as regular potatoes typically do. At the same time, cut fresh carrots and place them all into a bowl ready for cooking.

Cut onions and pickles

Cut onion and all the pickles into small tiny squares and place them aside. At the same time, prepare your other ingredients. 

Prepare the salad dressing

In a big glass bowl, add yogurt with mayonnaise and approximately 1/3rd of a cup of liquid left from your pickle jar. Season with a pinch of salt and pepper and mix. 

Boil turnips with carrots

Place turnips and carrots into a cooking pot, add boiling water, bring to a boil and let it cook until tender for 15 minutes maximum. 

Strain and shock

Once your carrots and turnips are boiled, strain them through a strainer and pour a very cold pot of water to shock them, so they immediately stop the cooking process.

Add all into a big glass bowl

Add all remaining ingredients in a large mixing bowl, such as the onion, pickles, and green peas. Pour the whole dressing you have stored in the fridge. 

Mix together and season

Using two spatulas, gently mix the ingredients and salad dressing together. Refrigerate for at least 2 to 3 hours before you are ready to serve.
