This tender Baked Lemon Chicken is full of amazing flavors and browned to your liking. It&#039;s an easy, tangy baked chicken recipe that&#039;s perfect for summer!

Baked Lemon Chicken

olive oil

lemon juice

garlic, (minced)

salt

thyme

oregano

black pepper

boneless, skinless chicken breasts

lemon, (thinly sliced)

paprika

garlic powder

onion powder

In a small mixing bowl, whisk together olive oil, lemon juice, garlic, salt, thyme, oregano and black pepper. Remove 3 tablespoons of the marinade and set aside in a small cup; cover and refrigerate.

Pour the remaining marinade into a large resealable bag; add chicken breasts to the bag.

Seal the bag; turn to coat and set aside for 30 minutes, or refrigerate for up to 8 hours.

Preheat oven to 350˚F. Remove bag with chicken breasts from the fridge and let stand on kitchen counter for 12 to 15 minutes, while the oven preheats.

Lightly grease a baking dish with cooking spray. Arrange lemon slices on the bottom of the baking dish. Set aside.

In a small mixing bowl, combine paprika, garlic powder and onion powder.

Remove chicken breasts from the bag and lightly pat dry with paper towels. Discard marinade that&#039;s in the bag.

Sprinkle chicken breasts with prepared spice rub and set chicken breasts over lemon slices inside the baking dish.

Drizzle reserved marinade over the chicken breasts.

Cover with foil and bake for 35 to 40 minutes, or until internal temperature of chicken reaches 165˚F.

Optionally, remove the cover several minutes before the chicken is cooked through and set it under the broiler to get a bit of browning on top.

Remove from oven; remove cover and let stand 5 to 8 minutes before cutting.

Basic Skillet Chicken Breasts

Our Keto Garlic Chicken Stir Fry is a quick and easy dinner that’s ready in less than 30 minutes. It’s a simple meal that you’ll be eating over and over.

Keto Stir Fry - Chicken & Garlic

Sesame Oil

Garlic (finely chopped)

Chicken Thighs (thinly sliced)

Salt

Pepper

Broccolini (sliced)

Butter

Pak Choy (roughly chopped)

Tamari Sauce

Sesame Seeds

Place a large non-stick frying pan or wok over high heat.

Add the oil and garlic. Saute for 2-3 minutes until fragrant.

Add the chicken, salt, and pepper. Saute until the chicken is browned, then add the broccolini and butter.

Cook for 5 minutes, until the broccolini has softened.

Add the pak choy and tamari sauce and saute until the greens are just cooked (and still a little crunchy).

Serve the stir fry sprinkled with sesame seeds.

Low Carb Instant Pot Lemon Chicken

chicken thighs (I used bone-in, skin-on)

onion

chicken broth

lemon (juice only)

Brown meat: Set instant pot to sauté. Add oil to pot and add thighs skin-side down. Cook, in batches if needed, until golden and crisp. Flip and cook until browned on the other side. Remove chicken from pot.

Start sauce: Add onion and garlic to pot and cook until starting to soften, about 1 minute. Add chicken broth, lemon juice, herbs and seasoning. Stir, scraping the browned bits off the bottom of the pot.

Pressure cook: Place chicken thighs back in the instant pot. Secure lid and set the pressure valve to &quot;sealing&quot;. Choose &quot;pressure cook&quot; (or &quot;manual&quot;) and &quot;high&quot; for 12 minutes. Naturally release pressure after cooking time is up (just switch off the instant pot and leave it alone until pressure is gone).

Finish sauce: Carefully remove thighs. Set the Instant Pot to sauté. Pour thickener slurry into pot, stir well and simmer until sauce has thickened. Stir in butter until melted and serve sauce over chicken.

Maple-Glazed Bacon Wrapped Chicken Breasts

(4 ounces each) boneless, skinless chicken breasts

salt and fresh ground pepper, (to taste)

sweet or smoked paprika

bacon

sugar free low carb maple syrup

dijon mustard

cracked pepper, (for topping, optional)

chopped fresh parsley, (for garnish, optional)

Preheat oven to 425˚F.

Lightly grease a 9x13 baking dish with butter and set aside.

In a small mixing bowl combine salt, pepper, paprika, garlic powder, and onion powder.

Rub each chicken breast with prepared seasoning mix.

Wrap each chicken breast with bacon slices and transfer to prepared baking dish, seam-side down.

In a small mixing bowl whisk together maple syrup and dijon mustard; whisk until well combined.

Brush each chicken breast with maple syrup glaze.

Crack fresh ground pepper over each chicken breast.

Bake for 22 to 25 minutes at 425˚F, or until done, and brush/baste with the juices couple of times during baking. Chicken is done when internal temperature reaches 165˚F. I suggest to start checking for doneness at around the 20-minute mark.

If the bacon is not fully caramelized after cooking, place the baking dish under the broiler for 2 minutes to finish it off.

Remove from oven and let stand 5 to 8 minutes.

Spoon juices over chicken and garnish with chopped parsley.

Serve.

Preheat oven to 450˚F.

Remove giblets from inside of the chicken's cavity.

Thoroughly dry the chicken with paper towels.

Place chicken, breast side UP, on a rack set over a shallow roasting pan or jelly roll pan.

Sprinkle or rub minced garlic all over chicken.

In a small bowl combine salt, basil, thyme, and lemon pepper; rub onto the chicken.

Add some salt to the inside of the cavity and fill the cavity with lemon slices, rosemary, and garlic cloves.

Tie the legs together with kitchen twine, and tuck the wings under the body of the chicken.

Roast, uncovered, for 10 minutes.

Reduce oven temperature to 350˚F and continue to cook until done; about 1 more hour and 10 minutes, or until internal temperature of chicken reaches 165˚F.

Remove from oven and baste the chicken with the juices.

Let rest for about 15 to 20 minutes before cutting.

Green goddess chicken is juicy and deliciously flavorful. Chicken thighs are marinated in our favorite green goddess dressing and then quickly cooked in a pan. It's a healthy dinner recipe that's easy to make and big on flavor.

Green Goddess Chicken

½ tablespoons nutritional yeast

½ tablespoons water

green onion (green part only)

apple cider vinegar

teaspoons miso paste (sub gluten-free soy sauce

Begin by making the green goddess marinade. Combine the ingredients in your blender and blend on high until smooth. (see notes)

Place the chicken thighs in a medium-sized bowl. Reserve 2 tablespoons of the dressing then pour the rest over the chicken. Toss to coat then cover the bowl and put it into your fridge. Let the chicken marinate for 1-4 hours.

Heat a large, non-stick or cast iron pan over medium-high heat. Add the oil then add the chicken. Discard any marinade that remains in the bowl.

Cook the chicken for 6 minutes per side. Remove the chicken from the pan and serve with the reserved marinade drizzled over the top.

Kristen,  I have made about 75 of your recipes, and we keep almost all of them in rotation!  This was my first night of Green Goddess Chicken. I only had bone-in, with-skin thighs.  I marinated them in the marinade, then cooked on the grill outside (we live in Florida).  AMAZING!  So crispy, yet, juicy, and a wonderful and unusual flavor!  SO glad I made a double batch of thighs (we do this with all your recipes, so we have a yummy meal the next day) and tripled the marinade recipe.  We couldn't believe how it added flavor to the meat!  We started naming all the friends we could have over and make this for dinner! Inexpensive, simple and easy!  Brava!  P.S. You gotta try it with skin-on---the marinade does wonderful things to create crispy skin!

Loaded with salsa verde and delicious chopped tomatoes, this healthy crock pot chicken is incredibly flavorful and extremely easy to make.

Easy Crock Pot Salsa Verde Chicken

yellow onion, (diced)

(14.5-ounces) roasted diced tomatoes

salsa verde ((I use Herdez Salsa Verde))

(or to taste) ground cumin

chili powder

parsley (for garnish)

jalapeno rings, (for garnish)

Lightly spray the crock with cooking spray.

Season chicken breasts with salt and pepper and place chicken in the crock pot.

Arrange onions and garlic over chicken breasts.

Add tomatoes, salsa verde, cumin, and chili powder; stir everything around to combine.

Cover and cook for 3.5 to 4 hours on HIGH, or 5 to 6 hours on LOW.

Remove cover and transfer chicken breasts to a cutting board; using two forks, shred the chicken.*

Stir shredded chicken back into the crock pot.

Taste for seasonings and adjust accordingly.

Top with fresh parsley or cilantro and jalapeno rings.

Serve in tacos, over salads, and/or rice.
