Mom's Secret Ingredient Mashed Potatoes

Russet potatoes

unsalted butter

mayonnaise

pepper

Wash, peel, and cut the potatoes into 1-inch cubes. (You'll want them to be as close in size as possible so they cook evenly.) Place the potatoes into a large pot and just cover with water. Add 2 teaspoons of salt and bring to a boil. Reduce the heat to a low boil, stirring occasionally, and cook for 15 to 20 minutes or until the potatoes are tender when pierced with a fork.

Drain the potatoes and return them to the pot. Add the butter, mayonnaise, and milk. Use a potato masher to mash the potatoes to your liking. (You can also use a hand mixer to mash the poatotes, just be cautious not to over mix or they may become paste-like.) Mix well. Add more milk if necessary to get them to a smooth consistency. Add salt and pepper to taste. Serve with melted butter on top, if desired.

Like your mashed potatoes super creamy? Then this recipe is for you. It makes the creamiest most perfect mashed potatoes. Warming milk and butter and then adding cream cheese is the secret to these mashed potatoes. If you don't have a food mill, a ricer will do the trick for helping to prevent lumps.

This easy, healthy chickpea mash only takes 5 minutes to prepare. So simple & satisfying! Great as a sandwich spread, dip, or on salads.

Chickpea Avocado Mash with Lemon

avocado

lemon juice (or more to taste)

Salt and pepper

hummus, garlic powder, fresh herbs, etc.

Rinse and drain chickpeas and place in a medium bowl. Mash with a potato masher. (Mash thoroughly for a smoother consistency, or not as much for chunky texture. I prefer a chunkier texture.)

Cut avocado in half and remove pit and peel. Place avocado flesh in bowl. Add lemon juice, salt/pepper, and any other desired additions.

Lightly mash again to combine. Serve immediately or refrigerate covered for 2-3 days. (Though it's best when fresh!)

This was wonderful!! We're out camping and this is a fantastic lunch to make. I didn't want to pack avocados, so I bought the organic Wholly Guacamole minis instead. I used two minis in place of 1 avocado, and it worked like a charm! Added diced celery and raisins (like in your curried version). So delighted to have this as a simple camping lunch.

This recipe has been added to my rotating menu! I added the "mash" to a whole grain tortilla, then a couple lettuce leaves, sliced tomato, and another dash of salt & pepper. Brilliant! Thank you! Tammy J.

Not only is this the best-mashed potato recipe ever, but it also happens to be oil-free, less than 10 ingredients and under 30 minutes to make! The perfect side for any meal and a crowd pleaser for your Thanksgiving or Christmas feast.
