Roasted Cauliflower Taco Bowls with Cilantro Lime Ranch

Prepare the cilantro lime ranch first, so the flavors have time to blend. Zest the lime, then squeeze the juice from half, and cut the other half into wedges for serving. You&#x27;ll need about 1 Tbsp lime juice. Finely chop about 1 Tbsp cilantro and one green onion.

Combine the ingredients for the cilantro lime ranch in a bowl (mayonnaise, sour cream, 1 Tbsp lime juice, 1/2 tsp lime zest, garlic powder, onion powder, chopped cilantro, chopped green onion, salt). Refrigerate the cilantro lime ranch until you&#x27;re ready to eat.

Next, preheat the oven to 400ºF. Line a baking sheet with parchment paper. Cut the head of cauliflower into florets, then place them in a bowl. In a separate small bowl, combine the ingredients for the taco seasoning (chili powder, smoked paprika, cumin, cayenne, oregano, salt, and some freshly cracked pepper). Drizzle the olive oil over the cauliflower, followed by the taco seasoning, then toss until the cauliflower is evenly coated in oil and spices.

Spread the seasoned cauliflower out over the prepared baking sheet. Roast the cauliflower in the preheated oven for 20-30 minutes, or until it&#x27;s brown and crispy on the edges.

While the cauliflower is roasting, begin cooking the rice. Add the rice and 1.5 cups water to a sauce pot. Place a lid on top, turn the heat up to high, and bring the water up to a boil. Once it reaches a full boil, turn the heat down to low and let the rice simmer for 15 minutes without lifting the lid. After 15 minutes, turn the heat off and let the rice rest for 5 minutes without lifting the lid. Finally, fluff the rice with a fork and divide it between four bowls or containers.

Add the undrained can of black beans to a small sauce pot and heat over medium-low, stirring occasionally, until heated through (if making the bowls for meal prep, skip heating the beans).

Add 1 Tbsp cooking oil to a large skillet and heat over medium. Once the oil is hot and shimmering, add the frozen corn. Cook the corn, stirring only occasionally, until it is browned and blistered (about 7-8 minutes). Season with a pinch of salt and pepper.

Slice the grape tomatoes, roughly chop the cilantro, and slice a green onions for garnish.

To build the bowls, divide the roasted cauliflower, cooked rice, beans, corn, and tomatoes between four bowls or containers. Top with a pinch of cilantro, sliced green onion, and a wedge of lime. Drizzle the cilantro lime ranch over top just before eating.

These meal prep chicken burrito bowls are filled with grilled marinated chicken, cilantro lime rice, black beans and fresh salsa. It's an easy and healthy meal prep recipe idea that's quick to assemble and tastes delicious!

Meal Prep Burrito Bowls

corn kernels (thawed from frozen or canned)

salsa

To prepare the marinade, pour the lime juice, olive oil and water into a large resealable bag. Add the garlic, honey, salt, cumin, smoked paprika, onion powder and chili powder.

Seal bag and shake to combine. Add the chicken to the bag of marinade, seal and place in fridge - marinate at least 30 minutes or up to 8 hours.

Preheat a grill, grill pan or skillet over medium high heat. Add the chicken and cook for 5-6 minutes on each side or until cooked through.

Chop the cooked chicken into bite sized pieces.

Place the rice or quinoa in a large bowl; add the cilantro, lime juice and salt and pepper to taste; toss to coat the rice evenly.

Divide the rice between 4 meal prep containers. Arrange the chicken, beans, corn and salsa on top. Cover and store in the refrigerator until ready to heat and serve.

Which appliance do you cook with more often?

My family found this recipe delicious!  I did eliminate 2 steps; first I did not thicken the sauce with cornstarch mainly because there is nothing nutritious about cornstarch, and all it does is add calories.  Secondly, I steamed the broccoli for 3 minutes then tossed with the sauce and served over with Trader's Joe's Organic Brown Rice - quick, delicious!!

AMAZING! This recipe Definitely a keeper! I doubled the sauce recipe and used frozen chicken on high for 4 hours. Overall, My family just loved this recipe and we will be making it again.

Recipe was tastey overall. It didnt thicken up like I thought it should with the cornstarch, which turned out to be better in the long run. Enjoyed it with minor adjustments. Will make it again, thanks!

Food delicious after I had to fix something. 
****please make sure ingredient’s on this sight are correct, see I’ve not used some of these ingredients so when I see RICE wine vinegar and the store sells both red wine vinegar AND rice vinegar you tend to go with what the first word in the instructions. It wasn’t until after that I actually watched the video (because I prefer to read them) I saw red wine vinegar. But I do love your recipes I’ve made several and they came out delicious!

Was not very good. Tasted bland and what you did taste was bitter. Would not reccomend. I ended up throwing the left overs out. What a waste of money.

Followed directions to the T. Chicken overdone. Sauce sparse. Not at all like it looks or says. Disappointed!

I followed directions to a tee. Turned out great! I used the Purdue individually wrapped chicken breasts rather than the large, thicker chicken breasts. Thought they might overcook after 5 hours but they were perfect and tender. Broccoli still had crunch to it, which is good. I also coated the bottom of the cooker with 2-3 tablespoons of the sauce mix prior to adding chicken. And I topped off my plate with a splash of soy sauce.

I actually thought this was pretty good! I used coconut aminos btw, the chicken was super moist.  The sauce could've been thicker for my personal preference and I think some of the flavor needs a bit more fine tuning but I will be making again to figure all that out.

For the perfect balanced meal, you need to add carbs, veggies and protein!

Make sure you add one ingredient from the list above in each group.

The best ways to cook healthy vegetables are steaming, baking, or stir-frying (but try not to use more than half a tablespoon of oil per person per meal).

Meat and fish are best baked or grilled.

Add some oomph and creamy, rich flavor to your Trifecta salmon with this simple salmon cakes recipe. Then top it all off with a zesty and vibrant chimichurri sauce!

Low Carb Keto Baked Salmon Patties

Trifecta salmon

1.5 Tbsp. Flax seeds, ground

Tsp. avocado oil

onion, small diced, sauteed

fresh parsley, chopped

Tsp. garlic

whole liquid eggs

Salt and pepper

Tbsp. Chimichurri sauce

Spray oil

Preheat your oven to 375 degrees Fahrenheit. Dice onion, and saute it in a saute pan by spraying with spray oil. Cook until translucent, season with salt and cool in the fridge.

Break salmon apart with hands. Transfer to food processor and pulse until a paste-like consistency is formed.

Add the whole liquid eggs, granulated garlic, avocado oil, ground flaxseed, and chopped parsley into the food processor. Season with a pinch of black pepper and salt. Pulse a few more times to combine. Transfer to a bowl scraping all sides with a spatula.

Form salmon patties into 4.2 oz patties. Transfer to a parchment-lined baking sheet pan. Bake for 15 min. Broil for 5 to make a golden crust.

Make the chimichurri sauce as explained on the recipe.

Divide the mixture into 6 even-sized balls with your hands and place on a baking sheet lined with parchment paper. Use your fingers to flatten each ball into a patty shape. 

Bake for 25 minutes, followed by 5 minutes under the broiler to give them a nice golden crust.

A Thai steak salad recipe with a Thai-inspired peanut dressing and sesame marinated steak tossed with crunchy cruciferous vegetables, and refreshing herbs.

Thai Steak Salad Recipe

Trifecta flat-iron steak, 1/2" cubed

Thai chili pepper, minced or serrano pepper

avocado oil

mint, chopped

Mix all ingredients for the marinade together in a small bowl then toss with cubbed steak and set aside for 4-5 minutes.

To prepare Thai Peanut dressing, mix all ingredients together in a medium bowl, and adjust with water if too thick.

Toss zucchini, slaw mix, and salad dressing together.

To cook steak, heat a skillet over medium-high heat, add oil and saute for 2-3 minutes until lightly browned and heated through. Remove from pan and plate with salad.

Top salad with toasted cashews and additional fresh herbs.

Add all of the ingredients to a mixing bowl.

Pour the lemon vinaigrette into the salad and give it all a stir until combined.

Serve

Transfer the salad to a large bowl and serve it right away or store in the fridge for meal prep.

Maple Cinnamon Almond Overnight Oats

quick cooking oats

cinnamon

tsp nutmeg

1.5 tbsp ground flax seeds

unsweetened soymilk

tsp almond extract

almond butter (unsalted)

maple syrup

Combine the oats, cinnamon, nutmeg, salt, and ground flax seeds in a large bowl (preferably one with a lid) Mix to distrubute the spices.

Then add in the water, soy milk, almond extract, maple syrup, almond butter (it mixes best at room temp, not cold from the fridge)

Mix well, cover, and refreidgerate overnight or for about 6 hours to thicken.

Serve with vegan yogurt, fresh fruit, and almond butter on top. In the photo, I added ½ cup plain almond milk yogurt, one sliced peach, banana slices, and toasted coconut. An addiitonal drizzle of maple can be added for extra flavor if desired. Enjoy!
