There are a lot of strong opinions when it comes to how to make the best scrambled egg, but Keith Kamikawa's version of scrambled eggs is the winner.

Add eggs, half and half, kosher salt, and black pepper in a bowl. Beat until combined.

Heat a nonstick pan to medium-high heat and add butter, coating the pan as it melts. Add the egg mixture, and once bubbles form, use a spatula to scrape the eggs from the bottom of the pan, working the eggs from the outside of the pan toward the center. Continually scrape around the pan until the eggs clump together. Gently fold the eggs for 30 seconds to 1 minute. Cook the eggs until they are slightly wet or to your desired firmness.

Preheat the oven to 350 degrees Fahrenheit.

In a large mixing bowl, whisk together flour, sugar, baking soda, baking powder, salt, cinnamon, cloves, nutmeg, and ginger.

In a medium mixing bowl, whisk together the pumpkin, oil, water, and eggs.

Combine the wet ingredients with the dry ingredients, and stir to combine well.

Line a loaf pan (9x5 inches) with parchment paper and pour in the batter.

Bake for 65 to 75 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 25 minutes before removing.

You can chop, mix and stir all the ingredients into your slow cooker the night before or in the morning (if you're a morning person), just turn it on to low as you walk out the door on your way to work.

Serve with mash potato, rice or bagette for a super easy and tasty family meal.

all-purpose flour,

salted butter, softened

Salt and pepper

Place potatoes into boiling water and cook for 15-18 minutes or until fork tender. Drain and allow to air dry for 5 minutes. Mash potatoes using a masher or use a ricer instead. Make sure there are no lumps.

Combine potatoes with butter. Then add flour 1 tablespoon at a time, mixing between each addition. If mixture seems stiff before you've used all the flour, stop adding any more. Add salt and/or pepper to taste. Allow dough to cool for 10 minutes.

Divide dough into 3 balls then turn out onto floured work surface. Roll each ball flat into a disk the size of a dinner plate. For perfectly round tatties use the dinner plate as a template to trim off uneven edges. Make 2 cuts in the disk so you end up with 4 equal wedges. Repeat steps for remaining dough.

Heat large skillet to medium-low heat. Make sure skillet is fully hot before adding a bit of flour and then 4 tatties at a time. Do not add oil to pan. When first side is just beginning to brown flip to cook other side, adding more flour as needed. Cook 3-4 minutes each side. Remove flour from pan before making next batch. Serve with eggs, sausage, beans, or tomatoes. Or serve with jam and butter.

Air Fryer Tofu Scramble and Home Fries

535 g yellow potatoes (cubed)

tbsp (1 tbsp) steak spice seasoning

mL (1 tbsp) oil

400 g (1 block) extra firm tofu

yeast

g (2 tsp) chili lime powder*

g (2 tsp) steak spice seasoning

22 mL (1½ tbsp) oil

g (1 tsp) turmeric

g (¼ tsp) black salt

mL (¼ tsp) liquid smoke

spinach (to taste)

cremini mushrooms (to taste)

cherry tomatoes (to taste)

Prep Potatoes

Peel and dice potatoes into small cubes. Add to a bowl and drizzle with oil to coat. Sprinkle on steak spice and toss until evenly coated.

Cook Potatoes

Cook the prepped potatoes in air fryer at 360°F for 20 minutes with rotating paddle in or tossing the potatoes halfway through if your air fryer doesn&#039;t have a paddle.

Prep Seasoning

In a small bowl, mix together oil, liquid smoke, nutritional yeast, chili lime powder, steak spice, turmeric, and black salt. Stir to combine.

Prep Tofu

Crumble the tofu into a large bowl and pour the seasoning mixture on top, tossing until it’s all evenly coated.

Cook Tofu

Once the potatoes are cooked, add in the crumbled tofu. Cook for another 10 minutes, tossing halfway through if your air fryer doesn’t have a paddle. Once the potatoes are golden brown and crispy, the scramble is done.

Serve

We&#039;re serving with some sautéed spinach with roasted tomatoes and mushrooms. But you can serve as is or with whatever other ingredients you want.

Preheat the oven to 180C and lightly grease a 20 x 30cm tin.

Place the flour, sugar and butter into a bowl, working it together until it resembles fine breadcrumbs. Add the water and mix until combined. Press into the base of the tin and bake for 15 minutes. Allow to cool.

Sprinkle over the blueberries. For the topping, cream the butter and sugar. Add the egg and beat through, then the ground almonds, baking powder and almond essence. Spread carefully over the blueberries then sprinkle with sliced almonds. Place into an oven for 30 minutes or until set in the middle. Remove and cool before cutting.

Vegan French toast casserole is an easy-to-make morning breakfast!  Pieces of French bread are covered in a homemade vegan custard, topped with a candied pecan crumble, and baked to perfection! Enjoy right away, or refrigerate overnight.

Vegan French Toast Casserole

⅓ cups non-dairy milk

coconut sugar

cornstarch

Tablespoons ground flax seed

Himalayan pink salt

pecans, (chopped)

Tablespoons coconut oil, (solid at room temperature (or vegan butter))

Whisk together the custard ingredients and set aside for 10 minutes to thicken.

In the meantime, cube the bread.  Cut the loaf into 1-inch slices then cut the slices into one-inch cubes.

Add the cubed bread to an oiled 7x11-inch baking dish. Evenly pour the custard over the bread and set it aside for about 15 minutes. Tip: The bread and custard can be stirred to better coat the bread.

Prep the pecan topping while the bread soaks. Mix the sugar and flour in a medium bowl. Use a fork or pastry cutter to cut in the oil, then mix in the chopped pecans.

Sprinkle the pecan crumble across the top of the casserole.

Bake uncovered at 350ºF for 40-50 minutes.  Remove the casserole from the oven and allow it to cool for 10 minutes before serving.

Dust with optional powdered sugar and serve with maple syrup.ENJOY!
