These gluten-free pancakes are made only with whole grain oats for a hearty and delicious breakfast.

Carrot Cake Oat Flour Pancakes

½ cups old fashioned oats

almond milk

egg, beaten

½ tsp baking powder

¼ tsp ground cinnamon

ginger

nutmeg

vanilla extract

carrots,

walnuts (optional)

Combine the ground oats with the milk and egg. Let sit 10 minutes to let the mixture thicken.

Stir in the baking powder, spices, and vanilla extract.

Heat a griddle or large skillet over medium, until small drops of water sizzle and evaporate within a few seconds. Swirl butter until it melts but doesn&#x27;t brown.

Drop two tablespoons of pancake batter onto the griddle. Top each with ~1½ tbsp grated carrots. Cook pancakes - 3 at a time- in the hot pan until small bubbles form on the top. Flip once. The pancakes should be golden brown. Serve warm with butter, maple syrup, extra carrots, and chopped walnuts. Enjoy!

Oatmeal Pancakes

old fashioned oats

all-purpose flour

white whole-wheat flour

baking powder

Make Dry Mix

Grind oats in a food processor until it resembles the texture of coarse flour, about 45 seconds. Add flour, whole-wheat flour, baking powder, baking soda and salt and pulse to combine. Add butter, and pulse until the mixture resembles coarse meal.

Set Dry Mix Aside

Transfer the oat mixture to a large bowl, and make a well in the center.

Add Wet Mix

Whisk buttermilk and egg together in a glass measuring cup. Pour into the center of the well and gradually stir into the oat mixture.

Griddle The Pancakes

Heat non-stick skillet or griddle over medium-high heat until a bead of water sizzles and evaporates in a second. Brush some of the oil over the skillet or griddle. Ladle batter 1/3 cup at a time onto the griddle, spreading out into a circle and spacing to account for spread.

Flip the Pancakes

Cook undisturbed, until the pancake bottoms are browned, most of the bubbles have popped and the edges are starting to dry out, 2 to 3 minutes. Flip and continue cooking until the other sides are browned, 1 to 2 minutes longer. Transfer to a plate or baking sheet to keep warm. Repeat with the remaining batter in several batches, re-brushing with oil as necessary and adjusting heat to prevent scorching.

I just made them this morning and they are delicious! We didn’t have buttermilk but your substitution with white vinegar worked like a charm!

Oatmeal Pancake Mix

oats

whole wheat flour

sugar

vegetable/canola oil coconut oil

Grind oats up in a blender or food processor.

Mix all the dry ingredients together in a mixer with a paddle (or by hand).

With mixer on slow speed (or gently by hand), drizzle the oil into the bowl slowly while the mixer is running.

Store in an airtight container for up to two weeks at room temperature or indefinitely in the refrigerator or freezer.

To make dry mix:

Note: 1 cup of dry mix will make about 6-7 four-inch pancakes.

Whisk together 1 cup of mix, 1/2-1 cup of milk and one egg. The mixture may seem thin at first but the oats will soak up the milk as it stands while the griddle preheats.

Heat a griddle and drop the batter onto it. When edges start to look dry, give them a flip! Cook until desired consistency.

I have a go to pancake recipe. I like how you came up with this mix. I am thinking of making  the flour mix (whole wheat + all purpose + oats) and then use that in my pancake recipe that uses buttermilk and two tbsp of butter. My favorite oatmeal pancakes! The batter is easy to make in the blender, so these light and fluffy pancakes are great for breakfast on any day of the week. Be sure to use certified gluten-free oats if you need this recipe to be gluten-free.

avocado oil

whole rolled oats

cinnamon

sea salt

Fresh fruit (for serving)

In a blender, place the almond milk, yogurt, egg, maple syrup, avocado oil, vanilla, oats, baking powder, cinnamon, and salt and blend until smooth. Pour the mixture into a large bowl and stir to ensure that the batter is evenly combined.

Heat a nonstick skillet over medium-low heat and brush lightly with oil. Use a ⅓-cup measuring cup to pour the batter into the pan. Cook the pancakes for 1 to 2 minutes per side, or until puffed and golden brown, reducing the heat as needed and working in batches as necessary. The remaining batter will thicken between batches. If it becomes too thick, thin it with 1 to 2 more tablespoons almond milk as needed.

Serve with maple syrup and fresh fruit.

Makes about 6 pancakes.

Julie, I have been making this for a couple of years now since I read it in maybe 2020 on your blog and love it! I have also shared it with people too! I love it topped with almond butter and maple syrup! The best!

I used quick oats, and they did not have enough time to soften to a desired texture.  I used cinnamon, vanilla, Splenda, and sugar free maple syrup, along with a handful of frozen blueberries. It still had a very egg white taste to it.  Tomorrow I will cook the oats with almond milk prior to mixing with the rest of the ingredients to see if that helps the texture/flavor.

I tried this recipe today. It didn't really turn out like a pancake, could be the oats that I used, more like a protein omelette. Still tasty though, and very filling!

Oatmeal Protein Pancakes

Tbsp protein powder of choice (optional*)

Transfer the rolled oats to a high-powered blender or a food processor and blend on high speed for 30 seconds, or until a flour forms.

Add the protein powder, baking powder, ground cinnamon and sea salt and blend to combine (dry ingredients).

Transfer the rest of the wet ingredients (eggs, egg whites and milk of choice) to the blender and blend on medium speed until everything is combined.

Allow the batter to sit for 10 minutes. It will thicken substantially during this time.

Heat a large nonstick skillet (or electric griddle) over medium heat and add enough avocado oil (or melted butter or coconut oil) to generously coat the surface. Once the skillet has heated up for a few minutes, pour batter onto the hot surface, making any size pancakes you like.

If desired, sprinkle the batter with chocolate chips, blueberries or chopped nuts.

Cook the pancakes until it appears as though the sides have firmed up, about 2-3 minutes, then flip and continue cooking another 1 to 3 minutes or until the pancakes are cooked through. The pancakes should be slightly golden brown on each side. If they are too light in color, increase the heat to medium-high heat. If you find the pancakes are getting too dark too quickly, decrease to medium-low heat.

Repeat for the remaining batter. If you&#x27;d like, you can keep the finished pancakes on a baking sheet in the oven (set it to its lowest temperature setting) until you&#x27;re ready to serve the whole family.

Serve pancakes with your favorite toppings such as butter, pure maple syrup, almond butter (or nut or seed butter of choice), fresh fruit such as bananas, fresh berries, etc. My favorite way of eating these is spreading both butter and Nuttzo on the pancakes and adding a small drizzle of maple syrup or honey.
