In a large bowl or pot, soak the meat in cold water to cover and refrigerate overnight. Remove meat from water, wipe clean and set aside. Strain soaking water and reserve 1/3 cup.

Peel ginger and grate against the finest side of the grater, keeping a bowl beneath to catch juices. Measure out 1 tablespoon of ginger juice. In a small saucepan, combine the 1/3 cup reserved water, papaya puree, ginger juice, honey and soy sauce. Cook over very low heat 10 minutes; do not let boil. Remove and allow to cool slightly.

In a blender, combine 6 tablespoons of the cooked sauce, pear, pineapple, onion, rice wine, garlic, pepper, scallions and sugar. Puree until smooth. Stir in sesame seeds. Pour into small saucepan and cook over low heat 30 minutes, stirring occasionally.

Place beef on a plate. Pour 6 tablespoons of the marinade onto plate and rub into beef. Rub sesame oil into beef. Set aside 10 minutes.

Prepare grill. Grill meat 2 minutes on each side, or until brown on outside, for medium beef.

Carrot and Papaya Smoothie With Hazelnuts and Pistachios

low-fat coconut milk ice cubes (3 tablespoons low-fat coconut milk)

honey or agave nectar

Place the hazelnuts in a 300-degree oven and toast for 15 to 20 minutes. Remove from the heat, wrap in a towel and rub the towel against your counter to rub off the skins.

Place all of the ingredients in a blender and blend at high speed for a full minute. Pour into a glass and enjoy.

Tip: Thai peppers are hot, we strongly recommend wearing gloves while preparing this recipe. 

Pack papaya, peppers, scallions, garlic, cilantro andlime peels into fermentation jar.

Add all ingredients to a high-powered blender (adding the frozen fruit first, then the rest following) and blend until smooth.

Adjust the amount of milk (or add ice), depending on desired consistency, adding 1 Tbsp more at a time, if needed.

To serve—grab a glass and pour smoothie into each and grabbing a straw. Store any leftovers in the refrigerator, tightly sealed or in a covered mason jar, ensuring that you drink it within the same day for best taste and consistency.

Preheat oven to 325°F. Place three 4-inch-diameter fluted flan dishes* in each of two 13 x 9 x 2-inch baking pans or place six 3/4-cup ramekins in 1 pan. Mix cream, sugar and ginger in heavy medium saucepan. Using small sharp knife, scrape seeds from vanilla bean. Add seeds and bean to saucepan. Stir over medium heat until sugar dissolves and mixture comes to simmer. Cover pan, reduce heat to very low and simmer gently 10 minutes to infuse flavors. Strain into large measuring cup.

Whisk yolks in medium bowl until well blended. Gradually whisk in hot cream mixture just to blend. Return custard to measuring cup; divide among dishes. Pour enough hot water into pans to come halfway up sides of dishes. Carefully transfer pans to oven.

Bake custards until almost set in center when pans are gently shaken, about 30 minutes for fluted flan dishes and 35 minutes for ramekins. Using metal spatula, transfer custards in dishes to work surface; cool 30 minutes. Chill at least 3 hours and up to 2 days.

Sprinkle 2 teaspoons sugar evenly over each custard. Working with 1 custard at a time, hold blowtorch** so that flame is 2 inches above surface. Direct flame so that sugar melts and browns, about 2 minutes.

Refrigerate until custards are firm again but topping is still brittle, at least 2 hours but no longer than 4 hours so that topping doesn't soften. Garnish crème brûlées with fruit.

*Four-inch-diameter fluted clear glass flan dishes are available at cookware stores and many hardware stores. They are about 2/3 inch deep and hold about 1/2 cup liquid.
