Wok Hei, the smoky, charred flavor or well-cooked stir-fries can make or break Pepper Steak, the classic Chinese-American staple. Our version combines tender steak with bell peppers and onions in a savory black pepper-flavored sauce. For best results, we cook it on a wok set on an outdoor coal grill.

Chinese Pepper Steak (Stir-Fried Beef with Onions, Peppers, and Black Pepper Sauce) Recipe

flank steak, skirt steak, hanger steak, or flap meat, cut into 1/4-inch thick strips

soy sauce (divided)

shaoxing wine or dry sherry (divided)

corn starch

chicken stock

sesame oil

sugar

black pepper

green bell peppers,

red bell pepper,

onion,

garlic, finely minced (about 2 teaspoons)

ginger

scallions, whites only, finely minced

vegetable, peanut, or canola oil

salt

Combine beef, 1 tablespoon soy sauce, and 1 tablespoon xiaoshing wine in a bowl and toss to coat. Let marinate for at least 20 minutes at room temperature and up to 3 hours.

Meanwhile, combine remaining soy sauce with corn starch and stir with a fork to form a slurry. Add remaining xiaoshing wine, chicken stock, sesame oil, sugar, and pepper. Set aside. Combine peppers and onions in a bowl and set aside. Combine garlic, ginger, and scallions in a bowl and set aside.

To Grill With a Wok Insert: Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals in a pile on center of cooking grate. Place  Weber 8835 Gourmet BBQ System Hinged Cooking Grate on grill and set wok in center. Add oil and heat until smoking. Add beef and cook, stirring and tossing until beef is lightly charred but still pink in spots, about 1 minute. Push beef to sides of wok to clear space in center. Add peppers and onions and cook, stirring vegetables in center until lightly charred, about 30 seconds. Toss with beef and push up sides of wok. Add garlic/ginger/scallion mixture to center of wok and immediately push all ingredients into center, tossing and stirring until beef is cooked through and vegetables are just barely tender, about 30 seconds longer. Stir sauce and pour into wok (it should immediately start to boil). Toss all ingredients to coat in sauce and cook until lightly thickened, about 30 seconds. Carefully transfer to a serving platter and serve.

To Cook On A Burner: When ready to cook, heat 1 tablespoon oil in a wok over high heat until smoking. Add half of beef and cook without moving until well seared, about 1 minute. Continue cooking while stirring and tossing until lightly cooked but still pink in spots, about 1 minute. Transfer to a large bowl. Repeat with 1 more tablespoon of oil and remaining beef, adding beef to same bowl. Wipe out wok. Repeat with 1 more tablespoon oil and half of peppers and onions. Transfer to bowl with beef. Repeat with remaining oil and remaining peppers/onions. Return wok to high heat until smoking. Return peppers/onions/beef to wok and add garlic/ginger/scallion mixture. Cook, tossing and stirring until fragrant, about 30 seconds. Add sauce and cook, tossing and stirring constantly until lightly thickened, about 45 seconds longer. Carefully transfer to a serving platter and serve

This pepper steak stir fry is thinly sliced flank steak cooked with red and green bell peppers in a savory sauce. A quick and easy meal that tastes even better than take out!

Pepper Steak Stir Fry

vegetable oil (divided use)

red bell pepper

green bell pepper

flank steak (thinly sliced)

garlic

salt and pepper

soy sauce

cornstarch

Heat 1 teaspoon of the vegetable oil over medium high heat in a large pan.

Add the peppers and cook for 3-4 minutes or until just tender. Remove the peppers from the pan and place on a plate.

Add the remaining oil to the pan. Season the flank steak with salt and pepper to taste.

Increase heat to high. Add the steak to the pan and cook for 5-6 minutes or until lightly browned.

Add the garlic and ginger, then cook for 30 seconds.

Place the peppers back in the pan with the steak.

In a small bowl, whisk together the soy sauce, sugar, 1/4 cup water and cornstarch.&nbsp;

Pour the sauce over the steak mixture and bring to a simmer. Cook for 2-3 minutes or until sauce has just thickened, then serve.

Pepper steak is quick, easy and perfect to whip up any night of the week. Strips of beef and bell peppers are stir fried in a wok to create a delicious main dish, ready in no time! I love it with brown rice, but cauliflower rice would also be great on the side.

Pepper Steak

oz top round beef (trimmed)

soy sauce (liquid aminos

tbsp rice wine

cornstarch (or arrowroot

vegetable oil

onion

bell pepper

tsp black pepper

red pepper flakes (optional)

Slice beef into thin slices with the grain. Cut each strip across the grain about 1" long so you have small thin slices. Place in a bowl and add 4 tsp of soy sauce, 1 tbsp of rice wine, 1 tsp cornstarch and black pepper.

In a small bowl, mix 3 tbsp soy sauce, 1 tbsp water and 2 tsp cornstarch. Set aside.

Heat the wok on high heat. Swirl in 2 teaspoons of the oil and add the beef spreading evenly in the wok. Cook undisturbed for 20 seconds letting the beef brown. Using a spatula, stir meat, cooking another 2 minutes. Transfer to a plate.

Add remaining teaspoon of oil to wok, add peppers and onions and cook about 4 to 5 minutes. Return beef to the wok, add the sauce and red pepper flakes and stir fry about 30 seconds until slightly thickened.

How To Make Pepper Steak

There are few things are as perfect as Steak au Poivre done right. Juicy fillet served ith creamy pepper sauce is a showstopper, every time.

Steak au Poivre

600 g (21 ounces) beef fillet / fillet mignon ((4 x 150 grams/5.29 ounces))

cracked pepper

tsp flaky sea salt

tbsp butter

thyme

onion / shallot (finely diced)

beef stock

heavy cream / whipping cream

tsp wholegrain mustard

lemon juice

salt (to taste)

Sprinkle black pepper and sea salt on a chopping board then press the steaks into the seasoning, making sure the steak is crusted all over.

Heat a large pan over high heat. Add a splash of oil to the pan then add the steak. Allow to cook for 2-3 minutes per side until well-browned.

Add the butter, whole garlic cloves and fresh thyme and baste the steak with the butter until it is cooked to your liking. Medium rare: 55ºC/135ºF. Medium: 63º/145ºF.

Remove the steak from the pan and allow to rest while you make the sauce.

Remove the garlic and thyme from the pan. Add the onion/shallot and garlic and cook until soft and translucent.

Pour in the beef stock (you can use brandy as well if you prefer) then allow to simmer, scraping the sticky bits off the bottom of the pan.

Pour in the cream and add the mustard, lemon juice and cracked pepper. Bring to a simmer and cook for 5 minutes until the sauce has reduced slightly and coats the back of a spoon.

Season with salt then serve over the steak.

This recipe turned out great!! The steak was tender and flavorful. I made one change. There wasn’t enough sauce to cover rice.  So, I made a quarter cup of a cornstarch slurry to make more sauce.  It turned out delicious.

This is a great recipe!  Will definitely make again.  Maybe I sliced my steak thinner than you, but searing 8 minutes on high was way too long, but then I like my steak less cooked than some.  I didn’t have any rice vinegar, but substituted apple cider vinegar and it tasted just fine.  The sauce was a bit thick and cooked really quickly, so I added some beef broth to thin it out a bit.  I also will add less sugar next time.  Despite those minor things, I would recommend this.  Yum!

Smelt delish, but was a bit over bearing. I don't know if we did something wrong. Just felt like it needed setting a little sweeter to balance this dish out.

This Easy Instant Pot Pepper Steak is a delicious 30-minute dinner idea that is packed with bell peppers, onions, sirloin steak and a tasty soy-pepper sauce!

Easy Instant Pot Pepper Steak

olive oil

yellow onion, thinly sliced

sirloin

tbsp honey

tbsp rice vinegar

tsp black pepper (double it if you want it spicy!)

Add olive oil, onions, steak, soy sauce, honey, rice vinegar, garlic, black pepper, water and jasmine rice to the Instant Pot in that order, gently pushing rice underneath the liquid as much as possible but not stirring.

Cook on high pressure for 3 minutes. Instant Pot will take 10-15 minutes to preheat then the 3 minutes on high pressure. Do a quick release of the pressure. When safe to do so, open lid and stir in peppers, then replace lid and let sit 5-10 minutes until veggies soften.

Serve garnished with green onion and sesame seeds. Enjoy!

Instant Pot Pepper Steak

Made with tender slices of protein rich sirloin steak, fresh tender crisp bell pepper and onions, and everything is coated in a simple sauce with rich umami and peppery flavors.

Tbsp soy sauce*

Tbsp rice vinegar

Tbsp sugar

tsp dark sesame oil

tsp vegetable oil, (divided)

Tbsp minced garlic

Tbsp ginger

Place steaks on cutting board, cover with plastic wrap and pound with the flat side of meat mallet to help flatten slightly and tenderize.

Cut steak into 1/3-inch thick strips about 2-inches long. Dab steak dry with paper towels, separate pieces sticking together. Set aside.

In a mixing bowl whisk together chicken broth, shaoxhing wine, soy sauce, rice vinegar, granulated sugar, black pepper, sesame oil and cornstarch. Set aside.

Preheat a 12-inch non-stick skillet over moderately high heat. Drizzle in 2 tsp vegetable oil and add half the steak quickly spreading apart into a single layer with space between pieces, lightly season with salt.

Let sear just about 45 - 60seconds on first side until nicely browned on bottom, quickly turn and let brown on opposite side about 45 - 60 seconds longer. Transfer to a sheet of foil or plate.

Repeat process with 2 more teaspoons vegetable oil and remaining half of the steak.

Add last 2 teaspoons of oil to now empty skillet and leave over moderately high heat. Add bell peppers and saute, only tossing occasionally, about 3 - 4 minutes until slightly tender.

Add in green onions, garlic and ginger and saute 1 minute longer.

Whisk sauce mixture again then pour into skillet. Let cook until it thickens.

Toss in cooked steak. Serve warm.

Place beef, mushrooms, onion, garlic, soy sauce, brown sugar, water chestnuts and wine in slow cooker.

Cover and cook on low 6-8 hours, high 4-6 hours.

About 15-30 minutes before serving, add the peppers (see NOTES).

If thickening is desired, mix cornstarch and water and stir into the slow cooker. Turn to high (if you cooked on low) and cook for 15 minutes.

Pepper Steak with Onions

lbs chuck steak

FOR THE SAUCE

soy sauce (I used low sodium)

onion powder

garlic powder

ginger powder (you can use fresh)

In a pan, add three tablespoon oil and fry the chuck in two batches until brown on both sides. Remove and keep aside. Don&#039;t crowd the pan when browning.

In the same oil fry the onion until translucent. Remove and keep aside.

In the same pan, fry the bell peppers for few seconds and keep aside.

Add the fried chuck back to the pan, Season the chuck with salt and black pepper. Add two cups boiling water and let it cook on medium heat for 45 minutes or until the meat is tender. Add water if the meat is still tough and continue cooking.

When the meat is cooked add the onion and bell pepper.

Mix the sauce ingredients and pour over the steak, stir until the sauce thickens.

Serve hot.
