Quick Pickles

Heat small saucepan over medium high heat. Add vinegar, sugar, mustard seed, salt, and garlic to the pan and cook until it begins to simmer and sugar dissolves. Toss the dill, bay leaf, and sliced cucumbers together in a heat-proof bowl. Pour the simmering liquid over the cucumbers and stir to evenly coat. Allow to cool to room temperature or chill before serving.

Great base recipe. I strongly recommend doubling the pickling liquid and cutting the cucumbers more thinly if you like your pickles more pickly and less cucumbery. I add crushed red pepper flakes and carrots to this. 

Super easy and delicious. I added a little diced onion. I may never buy supermarket pickles again. 

Quick and easy! Make sure to use Kirby cucumbers. The others won’t hold up and stay crispy.  Double the pickling liquid so you have enough. 

WOW! I've always been nervous about making pickles because of the big water bath process, but this recipe doesn't require any complex processes.
I made quick pickles just a little while ago and am eating them now! YUM! They are nice and crunchy, got a good vinegar bite with a little sweetness. 
Next time I might try half white vinegar and half apple cider vinegar just to see what that's like. 
Note: I also tried A*** G's quick and easy pickles and tossed out the liquid after I tasted it. Just too salty and bland. Had to re-do those.  
This will be my go-to for the next 99 pickles that will be coming out of my garden this summer!

Good and easy recipe. I ended up needing to double the amounts to make the brine for the 4 kirby cucumbers. 

Perfect!!!! I didn’t realize how easy it was to make pickles. I love this recipe and have made it three times in the last two weeks. Very forgiving for different varieties of cucumbers. 

I loved this it was so easy and these made the best pickles I loved it. my whole family really loved them. I only had to add more vinegar because it wasn't enough for the amount of cucumbers. 

This is our favorite pickle recipe!  Very tasty even for larger cukes!

Working in batches, add dried pickles to the batter, gently toss to coat. Using a slotted spoon (or Chinese Spider), remove pickles from the batter and let excess drip off. Gently add pickles to the oil one at a time. Fry for about 1 1/2-2 minutes or until golden. Remove and let drain on paper towels. Monitor oil temperature as batches are frying to maintain consistent 375-degrees F.

Serve with Comeback Sauce and/or ketchup.

Host Rachel Ray's Bulgogi Sloppy Joes and Quick Korean Pickles, as seen on 30 Minute Meals, Season 28.

For the pickles: Thinly slice the cucumber 1/4 to 1/8-inch thick. In a bowl, whisk up rice wine vinegar, sugar, chili flakes, salt and sesame oil. Add sliced cucumbers and toss.

For sloppy joes: Peel and grate the pear on a wide tooth of box grater. Peel and chop the onion and slice or grate the garlic and ginger.

Heat a skillet over medium-high to high heat. Add the oil, 2 turns of the pan, then add the meats and brown and crumble. Season with salt and pepper. Add pear, onions, garlic and ginger and stir a couple of minutes to soften. Add soy sauce, Worcestershire, chili paste, stock, sugar and sesame oil. Bring to a bubble and reduce heat to simmer, 10 to 15 minutes.

Serve beef on rolls with scallions and fresh or pickled chili peppers and quick pickles.

The flavor profile is fantastic! Did not use quite as much Korean chili paste and a little extra Worcestershire sauce. I had mine over roasted sweet potatoes and my husband had his on a toasted bun. Will definitely make again.

Very delicious. My family enjoyed it. They used buns, but I can't eat gluten, so served it along side an Asian coleslaw which took the place of the lettuce. Quick, Easy, and will make again! 

This recipe is awesome and fairly quick to make - low effort with great rewards! The sloppy joes were deliciously sweet and spicy while the pickles added a nice freshness and crunch that really added to the overall taste. As someone else mentioned, I provided cilantro as a topping which also added freshness along with the pickles, scallions and fresh jalapeños. Great recipe that I have been asked to make again and again...

This is a fabulous recipe! I made it exactly as written, except that I didn't have any neutral oils so I used olive oil (which didn't seem to do any harm.) Also, in an effort to decrease our carb intake, I served this on a combination of iceberg lettuce leaves (first helping) and cabbage leaves (second helping.) The sauce was pretty loose (use less chicken stock next time?) so it was a knife and fork meal served with lettuce. The cabbage was sturdy enough use as a delivery system for the filling, making a rolled up hand-held eating experience possible. Both vegetables provided a crisp cool offset to the spiciness of the dish overall. Loved the quick pickles especially. An overall Very delicious dish!<br />

ABSOLUTELY DELICIOUS!!!  I made it with turkey meat and served it on a warmed corn tortilla and it was so amazing!  I’m sure the beef pork combo is even more amazing, but I always try to lean on the lighter healthier ground meats.  Definitely will make it again!!

I just tried watching 30 minute meals with this recipe and had to turn it off after a few minutes. Rachael seemed angry. She had her hair hanging down in her face and was going off in a tangent about why she cuts onions a certain way. It was awkward to watch. She seemed like she had just had an argument with someone then started filming. 

We just tried these tonight &amp; they were amazing! Definitely a keeper. I forgot to get a pair, so I use some small apples. Peeled them and graded as directed. Worked great! I didn’t have fresh jalapeños, so I used pickled ones as some other reviewers said. My husband really enjoyed that. The cucumbers are a must

Hometown Honey Pickles

Kirby cucumbers,

Vidalia onion, sliced into half moons

banana pepper,

white wine vinegar

apple cider vinegar

honey

garlic,

turmeric

red chile flakes

bay leaves

Hot Honey Pickles, as seen on Cajun Aces, Season 2.

Add the cucumbers, onion and banana peppers to a clean glass quart jar.

Add the vinegars, honey, salt, garlic, mustard seeds, peppercorns, turmeric, chile flakes and bay leaves to a saucepan and bring to a boil, stirring to dissolve the honey and the salt.  

Carefully pour the brine over the pickles, stopping 1/2 inch from the top. Let cool completely, then cover with a lid and refrigerate. The pickles will be ready to eat in a few hours but taste best after chilling overnight. Pickles will keep in the refrigerator for up to 1 month. 

First time I ever made pickles they turned out great!! I made some hotter. Husband said he won’t eat store bought pickles again!!! Thank you.    

The pickles are delicious.  I was able to use 10 picking cucumbers from the farm stand.  Cut them into spears and filled three containers.  

Easy Pickles

In a nonreactive stockpot over medium-high heat, bring the vinegar, water, sugar, salt, peppercorns and bay leaf (and chile flakes, if using) to a boil, stirring until the sugar dissolves. Add the cucumbers (or pineapple), then remove from the heat and let cool completely. Transfer to an airtight container and refrigerate until serving. Drain before serving. (Pickles keep, refrigerated, about 2 weeks.)

These pickles were terrible.  The only thing I tasted was the vinegar. The vinegar even overpowered the taste of the cucumbers.

They came out perfect. They got better every day too. The only thing I added was a little dill. My family was impressed.

I will be trying this, because I'll have all the ingredients after I pick up small cucumbers tomorrow while shopping. The other reason is that this is the smallest amount of sugar I've seen in any pickling recipe.

Super fast and easy refrigerator pickles! Sweet, spicy, and crunchy!

Sweet and Spicy Refrigerator Pickles

cucumbers (thinly sliced (about 6 cups when sliced))

red onion (thinly sliced)

apple cider vinegar (see notes)

honey (see notes)

red pepper

Sprinkle 3 teaspoons of salt over your thinly sliced cucumbers and red onion. Place cucumbers and onions in a colander and let sit for 1 hour—this helps remove the extra moisture from the vegetables. Set aside and start on your pickling mixture.

In a small saucepan over low heat, add your vinegar, water, honey, minced garlic, and crushed red pepper. Bring mixture to a boil and let boil for 1 minute. Remove from heat and let cool to room temperature.

After your cucumbers and onions have sat for 1 hour, rinse salt and pat dry. Add your cucumbers and onions to 1 large jar or divide between 2 medium size jars (see notes). It’s okay to really squish the cucumbers and onions in there. Pour the pickling liquid into the jar(s) covering the cucumbers and onions. Place lid on tightly and refrigerate for at least 3 hours before eating.

Ina Garten's recipe for Tartar Sauce from Barefoot Contessa on Food Network is fresher than the store-bought stuff, and it's so easy it takes only five minutes.

Tartar Sauce

mayonnaise

small-diced pickles

Champagne or white wine vinegar

capers

mustard

kosher salt

Place all the ingredients in a food processor or mini chopper fitted with a steel blade and pulse several times until the pickles are finely chopped and all the ingredients are well mixed but not pureed.

I worked for a seafood diner and ours included Worcestershire sauce 

This was too sour for my taste. The cornichons plus vinegar make is very sour. After making it exactly as the recipe described, I then modified it by adding more Mayo, about two tablespoons of chopped sweet pickles, 1 tablespoon of sweet pickle juice, along with a bit more mustard and some capers. Still a bit sour, so added a tbsp of EVOO (as per Tyler Florence’s recipe). I kept adding bits of Mayo and sweet pickles until it was almost ok. Will start next time with sweet pickles rather than cornichons, and won’t add vinegar all at once. Actually, next time I’ll start with a different recipe.

Jeff Mauro shows us how to pickle juicy summer cherry tomatoes for later in the year, as seen on Food Network's The Kitchen.

Poke holes in the top of the tomatoes with a skewer.

In a saucepan, heat the vinegar, salt, sugar and 1 cup water to a rolling boil.

In a mason jar, add the rosemary, lemon zest, peppercorns and garlic. Add the cherry tomatoes and pour over the hot vinegar mixture. Screw a top on the mason jar. Let cool, then refrigerate. The pickles will last up to 2 weeks refrigerated.

OMG - these are sooo good.  The flavor just pops.  Can't wait to try them in a bloody mary.  I didn't have dried rosemary so used fresh and it still has lots of flavor.

Make your own sweet pickled Kirby cucumbers in no time.

Quick Bread-and-Butter Pickles

Kosher salt

Kirby cucumbers, unpeeled, sliced into 1/8-inch rounds

Bring the sugar, mustard seeds, celery seeds, allspice, turmeric, garlic, onion, 3 teaspoons salt and 1 cup water to a boil in a small saucepan. Place the cucumbers in medium bowl. Pour the hot spice mixture over the cucumbers, then stir in the vinegar. Let cool to room temperature, about 30 minutes. Serve, or refrigerate in an airtight container for up to 2 weeks.

Added a few whole cloves and extra sugar/salt to taste. I suggest tweak to your tastebuds. 

Bacon-Wrapped Pickles Stuffed with Pimento Cheese

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.

Use a small spoon to scoop out the center of each pickle half, creating a long well. Use paper towels to thoroughly dry the pickle wells. Fill each pickle well with about 2 teaspoons of the pimento cheese. Smooth out into an even layer.

Place the bacon strips in between paper towels on top of a microwave-safe plate. Microwave until slightly cooked, about 1 1/2 minutes.

Wrap 1 strip of bacon around each pickle half and secure it with a toothpick or by tucking it under the pickle half.

Lay the wrapped pickles on the prepared baking sheet. Bake until the bacon is crisp and the cheese is melted, 15 to 20 minutes. Serve warm.

Very popular at a Super Bowl party. Like the best parts of a bacon cheeseburger, concentrated.

Drain the brine from the pickles into a bowl. Add the fruit drink packet and sugar and stir until dissolved. Add the brine back to the jar (discard any that doesn't fit). Refrigerate at least 2 days and up to 1 month.
