Tomato flavoured hummus used to filled roasted capsicum wraps with a scattering of pumpkin seeds, nuts, sultanas and veges. Served with cucumber sticks and refreshing radish and cherry tomatoes.

chickpeas,

lemon juice

tahini

harissa

flavoured wraps (we used Woolworths Roast capsicum wraps)

1 Blitz all the hummus ingredients together until smooth, adding ¼ cup water to make more of a runny consistency.  Adjust seasonings.

2 Spread hummus over the wraps. Sprinkle over the carrot, corn, sultanas, seeds and nuts.

3 Roll up the wraps like a pinwheel and secure with a skewer. If taking as a travel meal, pack in a sealed lunch box in a chilly bag. Place the tomatoes, cucumber sticks and radish in a separate container.

4 To serve, cut the waps into slices and serve with the veges.

Spinach Stuffed Flank Steak Rolls

Salt and pepper (to taste)

Preheat oven to 375F degrees. Butterfly Steak by slicing horizontally across and pounding. Season with salt and pepper. Set aside.

Heat 2 tablespoons oil to a small saucepan over medium-high heat. Add onion and cook for 2-3 minutes or until tender and almost golden. Add the garlic and sautee for another minute. Remove from and stir in cream cheese until fully combined. Season with salt and pepper.

Spread the cream cheese mixture on the steak, then layer the spinach and cheese. Roll up steak and tie with kitchen twine or pierce with toothpicks or short kabob skewers&nbsp;to keep the roll intact. Using a sharp knife, slice roll between pieces of toothpicks or twine. Season pinwheels lightly with salt and black pepper.

Heat a large heavy-duty pan to medium-high heat. Add the steak pinwheels and sear for 2-3 minutes per side. Transfer to a baking dish or place the entire pan in the oven if it is oven safe, and bake for 10 minutes. Remove from oven, tent with aluminum foil and let rest for 5 minutes before serving.

Place wrap or lettuce leaf on wax paper or foil sheet and spread with honey mustard.

Layer remaining ingredients on wrap and roll up.

Cut wrap in half if desired.

Note: Carb count will be much lower if using lettuce leaf instead of tortilla.

These Ranch Cream Cheese Rollups are an easy and delicious appetizer for any party! Great to make ahead and just a few simple ingredients. Whether you call them rollups or pinwheels, these are bound to be a family favorite for years to come!

Ranch Cream Cheese Rollups

tortillas

oz cream cheese (full-fat, softened)

mayo

onions

green pepper (diced)

mozzarella (shredded)

cheddar (shredded)

Combine all ingredients with either a mixer or by hand in a large bowl.

Spread

Spread 1/4 of the mixture on each tortilla.

Roll

Tightly roll up each tortilla to avoid gaps when slicing.

Wrap

Wrap each rollup in either cling wrap or tin foil to keep from drying out in the fridge.

Rest

Place rollups in the fridge overnight or for a few hours, however long you have! This is important to get all the flavors to meld together.

Slice

Carefully slice each rollup into 1/2 inch slices.

Serve

Serve right away or store in a sealed container in the fridge.

Cinnamon Roll Sugar Cookies

unsalted butter (room temperature)

brown sugar (firmly packed)

Cream

Cream butter in small bowl with an electric mixer.

Add brown sugar, cinnamon, salt, flour, and vanilla.

Beat

Beat until well combined and creamy. Set aside.

Filling

In a medium bowl, beat butter and sugar with an electric mixer until smooth and creamy, about 1-2 minutes.

Turn out

Turn dough out onto a lightly floured piece of parchment.

Spread filling over entire surface of dough.

Starting with the long side, roll up jellyroll-style.

Wrap up in parchment, tucking ends under.

Refrigerate

Heat

When ready to bake, heat oven to 375 °F.

Line 2 sheet pans with parchment paper. Set aside.

Italian pinwheels are layered with a flavorful Italian cream cheese spread, crisp lettuce, buttery provolone cheese and all of the favorite Italian meats- ham, salami and pepperoni. These easy to assemble pinwheels are perfect as a party appetizer, easy lunch, or snack.

Italian Pinwheels

cream cheese (softened, about 1 cup)

red peppers (jarred, diced)

parmesan cheese (grated)

pepperoncini peppers (pickled, diced)

Italian seasoning

flour tortillas (burrito-sized, 10 inch across)

salami (thin sliced, about 5 ounces)

pepperoni (thin sliced, about 5-6 ounces)

provolone

romaine lettuce leaves

In a medium sized bowl add softened cream cheese, roasted red bell peppers, parmesan, pepperoncini peppers, and Italian seasoning. Mix together until combined.

Spread about one-third of the cream cheese mixture onto each tortilla across the entire surface.

Layer six slices of ham and six slices of salami across the chees.

Place sixteen slices of pepperoni per tortilla evenly across the tortilla.

Add three slices of provolone per tortilla in the center and top each with a lettuce leaf.

Roll up the tortilla tightly and wrap tightly with plastic wrap. Keep in mind the provolone and lettuce will be the center of the pinwheel. Refrigerate for about an hour to help the pinwheels to stay rolled tightly.

Slice each roll into about 1 inch slices, 8 pinwheels each. Then enjoy!

Easy Halloween Sugar Cookies are a soft, pinwheel sugar cookie recipe, made with fun holiday colors like green, orange, purple and black! Perfect for your Halloween celebrations.

Halloween Sugar Cookies

all-purpose flour

tsp baking powder

butter

eggs

tsp vanilla extract

tsp orange gel food coloring

tsp black gel food coloring

Halloween sprinkles

Combine flour, salt & baking powder in a bowl, mix and set aside.

In another large mixer bowl, cream together the softened butter & sugar.

Once smooth, add the eggs & vanilla and beat well.

Add the flour mixture to the butter mixture a little at a time. Mix until the dough is smooth and flour is fully incorporated.

Separate your dough into two equal parts.

Color one of the portions of dough orange, and one black. Use the mixer to beat the color into the dough until you have reached the desired shade of each color. Be sure to rinse out the bowl and the beater inbetween the colors so that you don't cross the colors and end up with something other than the desired color.

Once the dough is tinted to the desired color - form it into a ball, then flatten it into a patty and then reshape the edges to form a rectangle.

Wrap each flattened rectangle in plastic, and allow the dough to firm up in the refrigerator for about an hour or two.

Roll out each ball of dough to about ⅛ – ¼" thick, and stack them on top of the other (I did orange on the bottom, then black).

Trim the edges with a pizza cutter so you have nice, straight edges.

If desired – Pour some sprinkles into your hand & brush the outside of the dough with a bit of water and then press the sprinkles into the outside of the dough log.

Roll the dough into a log, wrap in plastic wrap and chill in the refrigerator for at least 1 hour.

Preheat the oven to 350 degrees.

Cut the log of dough into ¼ – ½" thick cookies and place the rounds on a parchment lined baking sheet – approx 2 inches apart. The thinner the blade used to slice them, the better. A thick blade will tend to squish the dough.

Bake at 350 for 10-12 minutes, or until no longer shiny on top.

Garlic powder is ground, dehydrated garlic. It is a very common seasoning. Applications include pasta, pizza, and grilled chicken. Garlic salt is simply salt plus garlic powder. (Pre-made products usually include an anti-caking agent.) Garlic powder is a common component of spice mix. It is also a common component of seasoned salt.

In a medium mixing bowl, stir together cream cheese, cheddar cheese, mayo, chives, Dijon, salt, pepper, and garlic powder until smooth. Make sure everything is thoroughly combined.

Place one wrap down on a cutting board (or flat surface). Place 1/4 of the cheese mixture on the wrap and spread out evenly over the whole thing, edge to edge.

Place 2 slices of Smithfield Prime Fresh Smoked Ham on the cheese mixture. The slices should be centered with the straight edges touching in the center of the wrap. Don&#x27;t worry if the ham doesn&#x27;t each the outside edges of the wrap, we&#x27;re cutting them off later anyway.

Add a layer of lettuce over the ham slices. There should still be some of the cheese mixture showing on either side of the ham once you&#x27;re done.

Starting on one of the cheese edges of the wrap, roll the wrap into a log shape. Keep it snug, but not too tight or the wrap will tear. Use your thumbs to guide the rolling and your fingers to keep the lettuce and ham from pushing out toward the outer edge of the roll. The cream cheese on the opposite end of the wrap will glue it closed.

Place the wrap, seam side down on a plate. Repeat with the other 3 wraps and remaining ingredients. Refrigerate for 30 minutes to 1 hour.

Take the roll ups out of the fridge and put them on a cutting board. Use a sharp knife to cut off the edges. Then cut the wraps into 8 slices. Place roll ups on a platter. Serve immediately, or cover with plastic wrap and refrigerate until ready to serve.

I made these for a family potluck and they were a big crowd pleaser! I added a little bit more Mayo after the original mix bc it seemed a little bit too stiff and dry to spread. Seasonings we’re perfect for feeding a big group, everyone loved it!

This dish looks super delicious! I am definitely going to make this!
