BBQ Pork Steaks in the Oven

Preheat oven to 400 degrees

Rub salt and pepper on both sides of each pork steak if desired

Line a baking pan (large enough to fit the number of steaks you're cooking, so they don't overlap) with aluminum foil.

Drizzle half a bottle of barbeque sauce on the aluminum foil where you'll place each steak.

Place your steaks down on the foil and sauce, and then cover steaks with remaining bbq sauce.

Bake the pork steaks at 400 degrees, uncovered for 50-60 minutes, (on the middle rack) or until the internal temperature of the steaks reaches 145 degrees. NOTE: Oven temperatures can vary, and some have reported that they prefer baking at 350 for 50-60 minutes, or checking the internal temp after 30 minutes to avoid over-baking.

Baked BBQ Pork Steaks

Pressure Cooker Pork Chopsuey

bean sprouts

chicken stock

soy sauce

mushrooms (chopped)

celery (chopped)

Salt and black pepper

Select “Sauté” function and melt butter in your Instant Pot.

Add your pork chops and let them brown on each side (for about 2 minutes).

Add mushrooms, celery and onions and cook for another 2 minutes.

Add also bean sprouts, soy sauce and chicken stock and stir well.

Cook at high pressure for about 10 minutes.

Let the steam release naturally.

Add cornstarch and adjust with salt and pepper.

Stir well to let the sauce thicken.

Press “Sauté” again and cook for another 3 minutes.

A typical use of Shio Kōji is to marinate meat or fish. Even 1 hour of marinating meat in Shio Kōji makes the meat tender and brings out better flavour. And you don&#39;t need a lot of it to marinate.Cook Time assumes the pork slices are cooked in 2 batches. Marinating Time is the minimum required for marinating thin pork steaks.Don&#39;t forget to see the section &#39;MEAL IDEAS&#39; below the recipe card! Shio Kōji Pork Sauté

Spread Shio Kōji on both sides of pork slices. Leave it for 1 hour (note 3).

Sprinkle pepper over the pork slices.

Add ½ tablespoon of oil to a non-stick frying pan (note 3). Heat over medium high heat.

Place 3 slices of pork in a pan (note 4).  Cook for about 1-1½ minutes (note 5).

Turn pork slices over and cook further 30 seconds (note 5). Transfer the pork slices to a plate and loosely cover them with foil.

Clean the frying pan as there will be a lot of burnt Shio Kōji bits on the pan. Kitchen paper should remove the burnt bits if the non-stick pan is in good condition. If the burnt bits do not come off easily, quickly wash the pan and wipe.

Repeat the steps 3 to 5 for the second batch.

Place the salad on one side of the serving plates and scatter the radish slices over the salad.

Place two slices of sautéed pork next to the salad and serve while hot.

These Smoked Pork Steaks are not only easy to make but also incredibly flavorful with a homemade dry rub and are smoked to perfection!

Smoked Pork Steaks

Tablespoons kosher salt

apple cider vinegar

Tablespoons worchestershire sauce

olive oil

garlic paste

BBQ sauce

black pepper

smoked paprika

garlic powder

onion powder

chili powder

cumin

mustard powder

white pepper

Place pork onto a baking sheet and season with salt. Brine in the refrigerator for 2 hours.

Remove pork from the refrigerator. Let come close to room temp, about 1 hour.

When 15 minutes remain, preheat the smoker with the lid closed to 225 degrees F.

Whisk together the apple cider vinegar, worcheshire sauce, olive oil, and garlic paste in a smoker safe saucepan.

Combine dry rub seasoning in a small bowl or ramekin.

Rub into both sides of the pork, if the salt has not completely dissolved into the meat I suggest brushing it off before adding the dry rub. Do not pat the pork dry before the rub, the salt should have drawn out some moisture during the brine which is what we are working with to help the rub adhere. Put on some gloves and rub the seasoning into the meat.

Place pork directly onto the grill grates of the smoker along with the saucepan. Smoke for 2 hours, stopping every 30 minutes to baste with the sauce.

After 2 hours, brush your favorite BBQ sauce onto the top of the pork. Smoke for 15 minutes, then flip and brush bbq sauce on again. Smoke for 30 more minutes, or until the internal temp has reached 185 degrees F.

Remove pork and let rest on a wooden cutting board for 10 minutes before serving.

Pork steak is simply cut up pork shoulder, pork butt or even Boston butt. It is extremely yummy when cooked at the right temperature using the right ingredients to yield to a tenderised, mottled, and juicy meat.

Set up the grill for indirect heating.

Brine the steaks for about one hour or if possible overnight.

Remove the steaks from brine, rinse them with cold H2O then place them on a tray.

Sprinkle rub coating on the steaks’ both sides.

Sprinkle honey on one side facing up.

Keep the steaks as distant from heat as possible.

Put your form of wood or wood chips (I used apple wood for the smoke flavor) on the hot coals.

Smoke the pork steaks for at least one hour at 200 to 250 degrees Celsius rotating them to enhance they spend equivalent time near the fire. 

Ensure that the smoke billows the entire time.

In the process of smoking, use the remaining half of sprite and coke.

Pour it into a squirt bottle and sprinkle it on the smoking steaks after every 15 to 20 minutes.

Remove the pork steaks and wrap them individually using aluminum foil after smoking them for about one hour.

Put some more coals to ensure that your grill stays at 225 degrees Celsius temperature range.

Also, ensure that the wrapped pork steaks are as far away from heat as possible.

Allow them to cook for utmost 45 minutes while wrapped in the aluminum foil.

Check a slice of the steaks to see if the meat is pulling away from the bone.

If you check and see that the meat is still tightly held to the bone, wrap the steaks once more in an aluminum foil and allow them to cook for some minutes while placed away from heat.

After the pork steaks have achieved your desired tenderness, unwrap them from the aluminum foil and place them back on the grill.

Pour the juices present on the aluminum foils back on the pork steaks.

Afterwards dash some little bbq sauce on the pork steaks then dust some specs of the dark brown sugar on the best pork steaks.

Allow the steaks to cook for about 5 to 10 minutes to give them enough time to caramelize.

Once you are done, you are ready to serve your smoked pork steaks with your choice of favorite bbq sauce and a side dish, like sweet potatoes or potato salad.

St. Louis Pork Steak Recipe

½ ” to 1” thick cut pork steaks

For the Pork Steaks: Preheat one side of your grill to medium heat so that the entire grill is heated to 225° F when the lid is closed.

Season both sides of the pork steaks with onion granules, garlic granules, dry oregano, salt and pepper.

Add the seasoned pork steaks to the other side of the grill where there is no direct heat underneath and cook for 90-120 minutes or until they reach 160° to 163° internally.

Remove the pork steaks and turn the entire grill to high heat (550° to 600° F).

Once the grill is hot, add the steaks back on and sear for 2 to 3 minutes or until grill marks are formed.

Turn the steaks over, immediately baste them with BBQ sauce and sear for a further 1 to 2 minutes.

Remove the pork steaks and let them sit for 5 minutes before saucing and serving.

BBQ Sauce: While the steaks are cooking at 225°, is when you make the optional homemade BBQ sauce.

Add all the ingredients to a medium-size saucepot.

Whisk together the sauce and bring it to a boil over high heat.

Simmer on low heat for 10 minutes. Store, or use it up.

Pork steaks are an absolute St. Louis BBQ staple. They are thin-cut pork butt or shoulder steaks grilled until done and basted with a tomato-vinegar BBQ sauce. The most common cooking method would be to quickly char them on both sides and then slow cook them for a few hours in BBQ sauce.

Ingredients for this recipe:

For the Pork Steaks:

• 8 ½” to 1” thick cut pork steaks
• 4 teaspoons onion granules
• 4 teaspoons garlic granules
• 4 teaspoons dry oregano
• sea salt and pepper to taste

• 28 ounce can of tomato puree
• 2/3 cup white distilled vinegar
• ¼ cup light or dark corn syrup
• ¼ packed light brown sugar
• 1 tablespoon Worcestershire sauce
• 1 tablespoon dark molasses
• Juice of 1 lemon
• ½ cup orange juice 
• ¼ cup soy sauce
• 4-6 dashes of hot sauce
• 2 ½ teaspoons sea salt
• 1 teaspoon black pepper
• 2 teaspoons onion granules
• 2 teaspoons garlic granules
• 3 tablespoons tomato paste

BBQ Pork Steaks in the Slow Cooker: Cook in the crockpot with sauce, &amp; after a few hours they'll be so tender they'll fall off the bone! Definitely one of the quick and easy pork steak recipes!

BBQ Pork Steaks in the Slow Cooker

BBQ sauce (we use Sweet Baby Rays)

Using a knife, cut a small slit or two in each steak.

Pour a dab of bbq sauce in the bottom of the slow cooker

Place a steak in the slow cooker and baste with a dab of bbq sauce.

Repeat the process and place another steak in the slow cooker, making sure each steak is covered with sauce.

Cook on low for 4-6 hours, or until steaks are done. (Making sure internal temp of pork steaks reach 145 degrees, and allow to rest for 3 minutes before serving.)

Smoky Sweet Heat Sauce

Season the pork steaks generously on all sides with the seasoning. Allow them to rest at room temperature while the smoker preheats to 250°F.

Place them in the smoker and allow them to cook for at least an hour, until the bark has started to form.

Make the mop sauce. Combine the water, garlic, butter, vinegar, Worcestershire, and BBQ sauce in a sauce pot. Warm until melted through, and keep warm while you base the pork steaks.

Once the bark has formed, baste the pork steaks. Continue to apply a layer and flip every 45 minutes until they reach about 185°F.

Start to check for tenderness by probing the steaks with a meat thermometer. There should be very little resistance as if you&#8217;re sticking it into a jar of peanut butter. Once that occurs, remove the steaks from the smoker.

Allow them to rest for 30 minutes lightly tented with foil before slicing. Enjoy!

Beat steaks between two sheets of non-stick baking paper, using a rolling pin, to the thickness of two £1 coins. Put the flour, eggs and crumbs into 3 shallow bowls. Mix the nuts, thyme and zest into the crumbs, then season.

Coat the steaks in the flour, shaking off the excess. Then coat in the egg, and finally the crumbs, Again, shaking off any excess. Put the steaks on a large plate.

Heat the oil in a frying pan until hot. Fry 2 steaks for 2 mins each side until firm and crisp. Add a little butter for the final few secs to coat. Set aside, and repeat (keep steaks warm in the oven). Serve with salad and lemon wedges.
