Step 1

Set up the grill for indirect heating.

Step 2

Brine the steaks for about one hour or if possible overnight.

Step 3

Remove the steaks from brine, rinse them with cold H2O then place them on a tray.

Step 4

Sprinkle rub coating on the steaks’ both sides.

Step 5

Sprinkle honey on one side facing up.

Step 6

Keep the steaks as distant from heat as possible.

Step 7

Put your form of wood or wood chips (I used apple wood for the smoke flavor) on the hot coals.

Step 8

Smoke the pork steaks for at least one hour at 200 to 250 degrees Celsius rotating them to enhance they spend equivalent time near the fire.

Step 9

Ensure that the smoke billows the entire time.

Step 10

In the process of smoking, use the remaining half of sprite and coke.

Step 11

Pour it into a squirt bottle and sprinkle it on the smoking steaks after every 15 to 20 minutes.

Step 12

Remove the pork steaks and wrap them individually using aluminum foil after smoking them for about one hour.

Put some more coals to ensure that your grill stays at 225 degrees Celsius temperature range.

Also, ensure that the wrapped pork steaks are as far away from heat as possible.

Allow them to cook for utmost 45 minutes while wrapped in the aluminum foil.

Check a slice of the steaks to see if the meat is pulling away from the bone.

If you check and see that the meat is still tightly held to the bone, wrap the steaks once more in an aluminum foil and allow them to cook for some minutes while placed away from heat.

Step 18

After the pork steaks have achieved your desired tenderness, unwrap them from the aluminum foil and place them back on the grill.

Pour the juices present on the aluminum foils back on the pork steaks.

Step 20

Afterwards dash some little bbq sauce on the pork steaks then dust some specs of the dark brown sugar on the best pork steaks.

Step 21

Allow the steaks to cook for about 5 to 10 minutes to give them enough time to caramelize.

Step 22

Once you are done, you are ready to serve your smoked pork steaks with your choice of favorite bbq sauce and a side dish, like sweet potatoes or potato salad.
