Boil the potatoes in salted water until cooked, but not mushy.

Drain the potatoes and rinse them in cold water. Put them in the fridge to hang out until you are ready to serve.

Meanwhile, cook the bacon until it is crispy, drain on a paper towel, and cut/crumble into big pieces.

Right before serving, mix cooled potatoes, arugula, mayonnaise, parmesan, bacon and pepper together.

Taste, and adjust seasoning and mayo content as needed

Wow...I have tried many potato salad recipes but this is my all time favorite.  I used smoked paprika and added garlic salt, but otherwise, stuck with the recipe.  Amazing!  Thanks for sharing!!!

Almost exactly my mother's recipe, except she used green onions or scallions instead of red onion.

Its a good basic recipe.  Made it for Father’s Day.  Added celery.  No lemon juice.  And it was still a hit.

Southern Potato Salad Recipe- Add A Pinch

An herbaceous, veggie-packed take on the classic, this vibrant potato salad works as a side dish or light meal.

Green Goddess Potato Salad {updated}

shallot

wine vinegar

green beans, trimmed,

cucumber

fennel bulb, halved lengthwise and thinly sliced crosswise

basil leaves

tarragon leaves

garlic cloves, put through a press or minced

capers, drained (or 1 anchovy

mayonnaise,

lemon juice (more if needed to taste)

In a small jar, combine the shallot, salt, and enough vinegar to barely cover the shallot. Put a lid on the jar and shake to dissolve the salt. Let sit while you prepare the other ingredients.

Pickle the shallots:

Place the potatoes in a large pot and cover with 2 inches of water. Add the 1 1/2 teaspoons of salt, and place over high heat. Bring to a boil, then cook until the potatoes are tender but still holding a shape, 8-12 minutes. Use a slotted spoon to scoop the potatoes out of the water and drain, reserving the water. Let the potatoes cool completely (you can run them under cool water to speed this up).

Add the green beans to the boiling water and simmer until bright green and crisp-tender, about 1 minute. Drain the green beans (you can save the cooking liquid to use as vegetable stock if you like) and rinse them with cool water to stop the cooking (or put in an ice water bath).

Place the eggs in the now-empty saucepan and cover with an inch or two of cool water. Place over medium-high heat and bring to a rolling boil. Remove from the heat, cover, and let stand for 5-6 minutes (5 if you like a softer yolk, 6 if you want the yolk a bit more firm but still custardy, as pictured here). Drain the eggs and add ice and cool water to the pot to stop the cooking. Let stand 10 minutes, then peel and rinse the eggs and cut into halves or quarters. The whites should be firm and the yolks should be slightly soft and custardy.

Prepare the salad ingredients:

In a food processor, combine the herbs, garlic, capers, 1/2 teaspoon salt, and mayonnaise, and blend until just smooth. Blend in the lemon juice. Taste, adding more lemon or salt if you feel the dressing needs it. You will have about 1 cup.

Make the dressing:

Place the cooled potatoes in a large bowl. Add the green beans, cucumber, fennel, 1/2 cup of the dressing, and a good grind of black pepper. Toss together gently to combine, then drain the pickled shallots (you can reserve the vinegar to use in other dressings) and toss them into the salad along with the chives, and more dressing if you like. Taste for seasoning, adding more lemon or salt if you like. Toss the eggs into the salad or place them atop the salad when you serve it up.

Serve the salad right away, or chill for up to a day or two to meld the flavors. The salad looks prettiest freshly made when the dressing is bright green, but the flavor improves after a bit of time in the fridge.

Place potatoes in a large pot and cover with cold water. Bring to a boil over high heat. Once boiling, continue to cook until just fork tender, about 20 minutes. Drain; slightly cool about 5-10 minutes. Peel the potatoes (optional) and cut into cubes. Place into a medium bowl; set aside.

In a small bowl, combine the vinegar, salt and pepper. Pour over the warm cubed potatoes and gently mix. Place in the refrigerator to chill for 20 minutes.

Meanwhile, in a large bowl, mix together the mayonnaise, mustard and celery seed. Stir in the celery, onions, and pickles until evenly coated. Add the cooled potatoes and the eggs; gently mix. Season to taste with additional salt and pepper. Optional: Garnish with dill and paprika.

BBQ Bacon Potato Salad

Toss the potatoes in a large bowl with the salt, pepper and olive oil then spread out onto 2 baking sheets that have been sprayed with cooking spray.

Bake for 45 minutes, tossing twice during cooking, until the potatoes are tender and lightly browned.

Remove the potatoes from the oven and let cool.

Make the dressing by adding the barbecue sauce, mayonnaise, dijon, parsley, salt and pepper to a bowl and whisking together until smooth.

Add the roasted and cooled potatoes to a large bowl along with the scallions, celery and bacon. Pour the dressing over the ingredients in the bowl and toss together until combined.

Cover with plastic wrap and place in the refrigerator for at least an hour or longer if needed.

Toss before serving and garnish with chopped parsley.

milk Greek yogurt (I like Stonyfield Grassfed)

mayonnaise (I like Sir Kensignton's)

garlic

sea salt

turmeric (optional, for color)

Place the potatoes in a large pot and cover with cold water by about 1-inch. Bring to a boil, then reduce the heat and simmer, uncovered, until fork-tender, about 10 minutes. Drain the potatoes, set aside to cool to room temperature, then transfer to a large bowl.

Make the dressing: In a medium bowl, whisk together the yogurt, mayo, mustard, lemon juice, olive oil, garlic, salt, turmeric, if using, and several grinds of pepper. Note: this will taste strong and salty at this step; it’ll balance once it’s mixed with the potatoes.

Pour the dressing over the potatoes and stir to coat. Stir in the celery, red onions, capers, radishes, chives, and dill and celery seed, if using. Season to taste and garnish with the reserved radishes and chives.

This creamy potato salad has so much flavor! It's loaded with fresh and crisp cucumber and radishes that make the potato salad lighter and supremely satisfying.

Creamy Potato Salad Recipe

russet potatoes (3 cups cooked and diced)

English Cucumber (1/2 cup diced)

radishes (thinly sliced)

Place un-peeled whole potatoes in a medium pot and cover with water. Bring to a boil, add 1/2 Tbsp of salt and continue cooking at a medium boil for about 25 minutes or until easily pierced with a fork. Do not overcook - potatoes should not be falling apart when pierced. Remove from water and set aside to cool completely to room temp then peel and dice just before adding to the salad. Potatoes can be cooked 1-2 days in advanced, covered and refrigerated until ready to use.

Stir together dressing ingredients and refrigerate until ready to use.

Combine all prepared ingredients in a large mixing bowl: diced potatoes, diced cucumber, sliced radishes, finely diced celery, diced eggs and chopped green onions. Toss gently to combine. Add all of the dressing, or add to taste. Season with more salt and pepper to taste and serve (I added an extra 1/4 tsp salt and 1/4 tsp pepper). Garnish with more chives and freshly cracked black pepper to pretty it up.

This recipe is a delicious side salad at a barbecue, but if you're not careful, it could be all you end up eating.

Place the potatoes in a large pot of salted water over high heat. Bring the water to a boil, and reduce the heat to medium. Let it simmer for 10 to 15 minutes, or until there’s no resistance from the potatoes when poked with a fork or skewer.

Drain the potatoes in a colander and place the colander over the pot. Cover the pot with a dry kitchen towel and let the potatoes steam for 15 to 20 minutes.

Meanwhile, whisk together mayonnaise, buttermilk, Dijon mustard, whole grain mustard, dill, 1 teaspoon salt, and 1 teaspoon pepper until well-combined.

Once cool enough to handle, peel the potatoes and slice them into halves or quarters, depending on their size.
