Slow Cooker Cocktail Meatballs 3 Ways

This is the easiest EVER slow cooker meatballs recipe! No precooking required, just roll up the balls, chill them and dump them in the slow cooker!

Easy Slow Cooker Meatballs Recipe

750 g Jar of Pasta/Bolognese Sauce *

Salt

tsp Dried Italian Herbs

Pasta

Small Onion, Finely Diced

Garlic Cloves, Minced

tbsp Fresh Parsley, Chopped

450 g Turkey Mince

90 g Dried Breadcrumbs

Egg, Beaten

3.5 litre Slow Cooker

Add all the meatball ingredients into a large...

Add all the meatball ingredients into a large bowl and give it a very good mix with a fork.

Roll heaped tablespoons of the mixture into balls...

Roll heaped tablespoons of the mixture into balls and place on a baking tray. Cover with cling film & chill for at least 1-2 hours. (Overnight is better for flavour as well as firming the meatballs as it prevents them from falling apart)

Oh my word, these slow cooker meatballs are SO good!! The slightly bold, earthy flavor of broccoli rabe pairs perfectly with salty cheeses, so I knew they would be awesome in my Sunday meatballs, and I was right!

Slow Cooker Beef Meatballs with Broccoli Rabe

(about 20 oz broccoli rabe, washed, stems trimmed off)

unpacked fresh whole wheat bread

fat free milk

93% beef

Pecorino Romano cheese

Bring a large pot of salted water to a rolling boil, then add the broccoli rabe. Blanch for about 1-1/2 to 2 minutes, drain well and set aside in a colander to cool. Finely chop 3/4 cup of the florets and leaves (3-3/4 ounces) and set the rest aside for another use (I sauteed it with garlic and oil).

Meanwhile, in a medium bowl combine the bread with milk, tossing to coat. Let stand, tossing occasionally, until bread is completely moist, about 10 minutes. Squeeze bread between your fingers or mash with a spoon to make sure there are no dry spots; if there are dry spots that refuse to moisten, add more milk 1 tablespoon at a time until bread is moist throughout.

Add the ground beef, chopped broccoli rabe, grated cheese, egg, fresh garlic, salt and pepper. Mix with clean hands, then gently form into 15 meatballs, about 1/4 cup each and transfer to a large baking sheet. Broil on the 2nd rack from the top until the top is golden, about 8 to 10 minutes.

In a small skillet heat the oil over medium heat, add the garlic and cook until golden on both sides.

Pour the crushed tomatoes into a 6-quart slow cooker. Add salt and pepper, bay leaf and the garlic. Gently place the meatballs into the sauce, cover and cook low 4 to 6 hours or high 2 to 3 hours.

Slow cooker Italian meatballs are a comforting meal made with ease! Tender meatballs simmered in a rich tomato sauce and served with spiralized noodles.

Slow Cooker Meatballs with Spiralized Noodles

breadcrumbs (traditional

onion powder

oregano (dried)

garlic (cloves, minced)

olive oil (plus 1 tablespoon)

tomatoes (canned San Marzano recommended)

tomato paste

zucchini (about 8 cups spiralized)

Preheat oven to broil. Line a large sheet pan with foil and grease with cooking spray or olive oil. Set aside.

In a medium-sized bowl combine ground beef, egg, breadcrumbs, Parmesan cheese, 2 tablespoons minced onion, minced parsley, onion powder, oregano, 1 teaspoon minced garlic (use the rest for the sauce), ½ teaspoon black pepper, and 1 teaspoon salt.

Roll meatball mixture into 2 tablespoon-sized balls, about 12 to 13 meatballs. Evenly place onto the greased sheet pan. Broil in the center of the oven for 10 minutes, until lightly browned. Meanwhile, make the tomato sauce.

In a microwave-safe bowl add ½ cup minced onions, ¼ cup olive oil, remaining minced garlic, and tomato paste. Stir to combine. Microwave for 2 minutes. Stir and microwave another 1 minute. Add mixture to the slow cooker.

Add a 56-ounce can of crushed tomatoes and 2 teaspoon salt to slow cooker. Stir to combine.

Turn slow cooker to HIGH setting and set for 2 hours. Add broiled meatballs and submerge into the sauce. Cover and do not remove the lid until cooking is complete. You can also cook on LOW setting for 4 to 5 hours.

Once the meatballs are done cooking, taste the sauce and season with more salt and pepper as needed. Meanwhile, prepare the zucchini and squash noodles.

Spiralize zucchini until you yield about 8 cups of cut noodles. About 10 minutes before you are ready to serve, cook the vegetables.

Heat a large saute pan over medium heat. Add 1 tablespoon of olive oil and allow to heat. Add zucchini and saute for about 5 to 6 minutes, or until crisp-tender, not soggy. You want the noodles to hold some shape. Season with salt and pepper as desired.

Serve vegetable noodles into bowls. Top with meatballs, and garnish with Parmesan cheese and basil if desired.

Juicy, flavorful Italian style meatballs stuffed with melty mozzarella cheese - perfect for dipping in your favorite marinara or alfredo sauce!

Slow Cooker Mozzarella Stuffed Meatballs

Chop each cheese stick into half inch pieces (about 6-8 pieces for each cheese stick). Place on a plate and chill in the freezer until ready to use.

Add ground beef, bread crumbs, egg and egg yolk, garlic, onion powder, Italian seasoning and salt and pepper to a bowl. Mush the ingredients together with your hands until everything comes together.

Remove cheese from freezer. Scoop out about 4 tablespoons of meat mixture and roll into a ball. Gently push a piece of chilled mozzarella into the middle of the meatball. Roll the ball in your hands to cover the hole where the mozzarella cheese was pushed in. Place inside a greased slow cooker and repeat with remaining meat and cheese.

When all meatballs are in the slow cooker (*see note for alternate cooking method), cover and cook on high for 1-2 hours or on low 3-4 hours until meat it cooked through (no longer pink). The cheese may start melting out of the meatballs, that's okay.

If desired, sprinkle with a bit of fresh chopped parsley or dried Italian seasoning for garnish. Serve with your favorite marinara or alfredo sauce for dipping.&nbsp;

Mix together breadcrumbs with milk and set aside for 5-10 minutes to soak

Add soaked breadcrumbs to ground meat, egg and seasoning in a bowl and mix gently with hands until combined

Form into 14-16 equal sized meatballs and place in slow cooker

Mix together tapioca flour with an equal amount of water until smooth and then mix with broth and tomato paste

Pour over meatballs and cover

Cook on high for 3-4 hours or low for 6-8

Remove meatballs and set aside

Add dairy free cream to sauce in slow cooker and whisk until smooth

Serve meatballs topped with sauce

Slow Cooker Chicken Parmesan Meatballs

Mix panko with milk and let set 5 minutes

Mix soaked panko and remaining ingredients except pasta sauce, mozzarella cheese and shredded parmesan in bowl just until evenly mixed

Form meat into golf ball-sized rounds and place in single layer in slow cooker (about 8 meatballs)

Cook on high for 4 hours or low for 8 hours

During the last 60 minutes pour in pasta sauce and top each meatball with a little slice of cheese and shredded parmesan and heat on high until melted and heated through

Add ground meat to large bowl

Mix together panko and half and half and let soak for 5 minutes

Add soaked breadcrumbs, egg, and seasonings to ground mix and use hand to mix until just combined

Heat 1 tablespoon of butter and olive oil in skillet or multi-cooker

Form meat mixture into ping pong sized balls and place in single layer in skillet

Brown on each side for about 2 minutes then transfer to slow cooker

Add broth, cover and cook on low for about 6 hours or high for about 3

Heat remaining 4 tablespoons of butter in skillet

Whisk in flour until smooth

Slowly pour in broth from the slow cooker and continue to whisk

Add in preserves and sour cream and bring to a simmer while continuing to whisk until sauce thickens, about 5 minutes

Cook noodles according to package directions

Serve meatballs with noodles and sauce and garnished with parsley if desired
