A very simple and easy gluten-free recipe for fluffy vegan banana pancakes made with white rice, buckwheat, and tigernut flour.

Fluffy Vegan Banana Pancakes

70 g white rice flour

g tigernut flour

buckwheat flour

g tapioca flour

agave

150 ml rice milk

banana (ripe) (approx. 100 g)

baking powder

baking soda

Put all the dry ingredients in a medium-sized bowl.

Mix banana and 150 ml rice milk in the blender until smooth.

Add the banana mixture and agave syrup to the bowl with dry ingredients and mix well. Adjust sweetness if needed.

Brush the pan with coconut oil and preheat it under medium-low heat.

Pour the batter into a circle (use 1 heaped tablespoon for each pancake).

When the pancake starts bubbling a bit and the bottom is lightly browned, flip it over and cook briefly on the other side.

Top with blueberries.

Makes 12 - 13 pancakes.

Large Ripe Banana, (1/2 cup mashed/120 grams)

Tbsp Coconut Oil + more for frying

(180 milliliters) Soy Milk (or another non-dairy milk)

tsp Vanilla Extract

Sift the flour into a mixing bowl and add the sugar, baking powder, salt and cinnamon, mix together.

Mash the banana in a bowl and add the coconut oil and mash together. Add to the mixing bowl with the soy milk and vanilla and mix in. Your batter will be fairly thick.

Heat up a pan with a little coconut oil until hot and then add in some batter for your first pancake, around 1/4 cup of batter at a time. When the pancake starts looking dry along the sides with little bubbles on top, then flip it over until browned on the other side. Keep flipping and pushing down with your spatula until the pancakes are very nicely browned and the inside has had a chance to cook through.

Serve pancakes with some sliced bananas, other fresh fruits as you like and syrup for drizzling.

These pancakes were AMAZING! Used pure maple syrup instead of regular sugar and vegetable oil instead of coconut(didn’t have any) and I swear these were the best pancakes I’ve ever had! In a large bowl, combine the flaxseed, water, and banana. Mash and stir until well combined. Let the mixture sit for 5 minutes to thicken.

Add the olive oil, vanilla, and almond milk and whisk. Add the flour and sprinkle the baking powder, baking soda, cinnamon, nutmeg, and salt evenly over the top. Stir until all the ingredients are combined, but the batter is still a bit lumpy. The batter should be a bit thick, but if it’s too thick to scoop, stir in an additional 1 tablespoon almond milk.

Heat a nonstick skillet or griddle to medium heat. Brush the skillet with a little olive oil and use a ⅓-cup measuring cup to pour the batter onto the pan. Use the back of the cup to gently spread the batter a little more. Cook the pancakes until bubbles appear, about 1½ minutes, then flip and cook for another 1½ minutes, or until the pancakes are golden brown. Turn the heat to low as needed so that the middles cook without burning the outsides. I usually start with medium heat and move to low heat as my pan starts to hold residual heat after each batch.

In a medium bowl, mash the bananas well. Whisk in the coconut oil. Add all the dry ingredients and roughly mix together. Whisk in the oat milk until the batter is well mixed.&nbsp;

Lightly coat a large non-stick skillet or griddle with a bit of coconut oil or oil, then heat over medium to medium-high heat. When the pan is hot,&nbsp;working in batches, spoon about 3 tablespoons of pancake batter onto the pan for each pancake.&nbsp;I usually use an ice cream scoop with a release trigger so all the pancakes are evenly sized. If needed, gently and lightly use the back of the spoon to guide the pancake batter so it spreads out into a 4-inch diameter round. Mix the flour, baking powder and salt together in a medium to large mixing bowl.

In a separate mixing bowl, mash the banana then add in the milk and sweetener and mix together.

Add the banana mixture to the flour and baking powder mixture and fold together until &#8220;just mixed.&#8221; The flour should be completely wetted but still a little lumpy.

Heat a pan over medium-high heat and spray with non-stick cooking spray if needed.

Add approx. 1/2 cup portions of the batter to the pan.

Eggless Banana Pancakes | Healthy Vegan Banana Pancakes

Peel bananas and place them in a mixing bowl or pan.

Slice them first and then mash with a potato masher. For over ripe bananas, you can directly mash with a veggie or potato masher.

Now add jaggery powder. You can add the amount of jaggery as per the sweetness of the bananas. 

Add more or less as required. You can replace sugar with jaggery. Mix very well.

Then add whole wheat flour and lightly crushed fennel seeds or whole fennel seeds. Crush the fennel seeds lightly in your mortar-pestle.

Add water in parts.

Then begin to mix it with the flour. I added a total of ¾ cup of water. Depending on the quality of whole wheat flour you can add adjust the water proportion.

Mix very well and make a smooth batter without lumps. The batter has to have a medium-thick flowing consistency.

Preparing batter

Now heat a pan or skillet. Spread a bit of oil on the pan. Instead of oil you can also use ghee or butter. You can use a heavy nonstick or a cast iron skillet. 

Keep the heat to a low or medium-low. Pour a spoonful of the batter on the pan and then gently spread it. Do not spread too much. Just form small pancakes.

Cook the pancake on a low to medium-low heat.

Drizzle some oil on the sides and top.

When the base gets golden and slightly crisp, turn over the banana pancake.

Cook this second side until it gets golden. If you want you can flip and cook once or twice.

Then place each cooked banana pancake in a single layer inside a casserole dish or on a baking sheet, and keep in an oven at the lowest temperature while you make the remaining pancakes.

Making banana pancakes

Serve eggless banana pancakes hot or warm. You can eat them plain as-is, or enjoy with maple syrup or other flavored syrups, honey, jams, caramel sauce or melted peanut butter.

If using honey, then be sure to drizzle it on pancakes only once they have cooled down to room temperature as honey that becomes too hot becomes toxic.

Keep cooled pancakes in a sealed container in the refrigerator for up to 3 days.
