This vegan chocolate mousse is every chocolate lover’s dream. With only 3 ingredients, it couldn’t be easier to make. And the aquafaba gives this delicious vegan dessert the most amazing fluffy texture.

3-Ingredient Vegan Chocolate Mousse with Aquafaba

oz (200 g)

(120 mL) aquafaba

(100 g) white sugar ((Note 1))

In a heat-proof bowl above simmering water, melt the chocolate. Then, set aside to cool.

In a stand mixer, or using a hand mixer with the double beater attachments, whip the aquafaba and sugar until the mixture forms stiff peaks. This will take at least 10 minutes (see post for more information).

Fold the slightly cooled melted chocolate into the whipped aquafaba until it's uniformly incorporated and no streaks of chocolate remain.

Spoon the mousse into serving glasses and chill for at least 1 hour.

Serve with chocolate shavings and some raspberries.Enjoy!

Break the chocolate bars into small pieces (or use chocolate chips) and melt in a microwave in 30 second intervals, stirring after each time, until melted. It took me 1 1/2 minutes. Set aside to cool completely. If the chocolate is still warm when you add it to the aquafaba, it will seize and become very grainy.

Drain the aquafaba from a can of chickpeas, measure 3/4 cup and add to a large bowl. Add the cream of tartar and beat for about 5 minutes, until stiff peaks form. I use my stand mixer with whisk attachment. Slowly add in the sugar (more or less to desired sweetness, I like 1/2 cup) and vanilla and continue to beat for another few minutes. It should be very fluffy and have very stiff peaks by this point.

Carefully and gently fold the melted, cooled chocolate into the aquafaba mixture, using a spatula in a circular motion until it&#039;s incorporated well. Don&#039;t over mix - we are just incorporating the two, not roughly mixing as you don&#039;t want to lose all the lightness of the aquafaba mixture, this is what makes the mousse light. Continue mixing until there are no white streaks left, and it&#039;s a light chocolate color.

Divide the mixture into 4 small ramekins or little dessert glasses. You can enjoy it right away, or chill in the refrigerator until ready to serve. It will keep for about 3 days in the refrigerator.

Top with vegan whipped cream, if desired, and chocolate shavings or mini chocolate chips. Enjoy!

The mousse will keep in the refrigerator for 3-4 days, and can also be frozen.

In a food processor, blend silken tofu, milk, vanilla and maple syrup until smooth. Then add the cocoa and blend again.

Melt dark chocolate in microwave at 30 second increments, stirring in-between, until completely melted. Pour into the food processor and blend until smooth.

Pour into three ramekins or small containers and let them chill and set in the fridge for at least 2 hours.

Serve and enjoy chilled!

In a medium-sized bowl mix together the vegan chocolate chips and non-dairy milk. Melt gently in the microwave or using the double boiler method. Stir together until smooth. Set aside to let cool slightly.

Gently fold the aquafaba to the melted chocolate with a spatula. It&#39;s normal if the aquafaba deflates a bit but try to keep as much volume as you can by not overmixing. Transfer to 4 (4-6oz) serving glasses and refrigerate for at least 2 hours to allow the mousse to set.

Remove from the fridge, garnish with coconut whipped cream and some grated chocolate and serve immediately.

(140 grams) good-quality dairy-free dark chocolate (70 to 80%), chopped*

espresso powder ((omit if caffeine-free))

(340 grams, about 1 ½ cups) silken soft tofu**

Medjool dates

(80 grams) pure maple syrup

(24 grams) Dutch process cocoa powder***

cinnamon ((optional))

raspberries, (fresh (248 grams) or frozen (210 grams))

orange zest

Melt the chocolate in a double boiler or in the microwave. To assemble a double boiler, grab a heatproof bowl that can be nestled into a saucepan—it should hover above the bottom of the pan. Fill the pan up with a few inches of water. Keep the water at a rapid simmer. Place the chocolate in the bowl and whisk frequently until melted, making sure no water comes near the chocolate.To melt in the microwave: Chop chocolate into small pieces and heat in the microwave on high power in 30-second intervals, stirring after each round.

Meanwhile, cover the dates with freshly boiled water. Soak for 15 minutes, then drain and remove the pits.

If using refrigerated tofu, scoop it out of its package and measure out 12 ounces. Do not pat dry or try to remove excess water.

In a food processor or high-powered blender, add the tofu with about 3 tablespoons of water that has accumulated; if not enough water has accumulated, add 3 tablespoons of filtered water. Add the dates, maple syrup, cocoa, vanilla, cinnamon (if using), and ½ teaspoon sea salt. Blend really well until the dates are fully pulverized and the cocoa has been mixed in, scraping down the sides as you go.

Now add the melted, cooled chocolate and blend until completely smooth and creamy, scraping down the sides as you go. Taste, adding more salt to taste (I like adding an extra ¼ tsp salt for that sweet-and-salty flavor). Divide amongst 6 to 8 ramekins or small dessert glasses and chill for at least 1 hour to thicken (don’t store all of it in one big container, as it seems to thicken it more).

Meanwhile, make the raspberry compote: In a saucepan over medium heat, combine the raspberries, maple syrup, orange zest and juice, vanilla, and a pinch of salt. When the mixture starts to bubble quickly, stir almost continuously for 2 to 3 minutes until the berries break down and start to thicken. Simmer for 10 minutes, until thickened and jammy. Let come to room temp or chill in the fridge.

To serve, rest the mousse at room temp for a few minutes. To serve, add a few spoons of compote on top of each mousse.

Add the aquafaba to the bowl of a stand mixer. Whip on high until it forms soft peaks. Add the sugar and whip for another 2-3 minutes or until it forms stiff peaks.

Using a spatula, carefully fold the melted chocolate and the vanilla extract into the aquafaba. Be careful not to overmix, stop as soon as no white streaks of aquafaba remain.

Transfer the chocolate mousse to small ramekins and cover with plastic wrap. Refrigerate for at least 6 hours before enjoying!

Cherry-Chocolate Mousse Pie

Oatmeal Cookie Crust (or any prepared Graham cracker crust)

Cover the dried cherries with 1/2 cup of boiling water and soak them until soft. Drain (and reserve) the water, and put the cherries into the food processor. Pulse to chop. Drain the tofu and add it to the food processor along with the agave nectar and vanilla. Process until smooth.

Melt the chocolate in a double boiler or in the microwave. Pour it into the food processor and puree, scraping down the sides as needed to make sure it’s well blended. Pour into a prepared crust and chill for several hours.

5 star taste (used defrosted frozen cherries) but 3 star texture. Immediately after making the mouse, it was silky, luscious, smooth, phenomenal. Should have eaten it right then. After being in the fridge a few hours, texture became grainy. Googled and saw suggestions not to add all of the chocolate at once. Or maybe my chocolate was too hot? Not sure what happened, but was disappointing. The cookie crust was really tasty, though.

This is 5 star! I made it with a couple little changes to accommodate our families eating, and everyone absolutely loved it.  The changes also made it much lower in fat.  I used maple syrup for the agave, and instead of chocolate chips, I used 1/3 cup (rounded) of cocoa powder.  To balance out the bitterness of the cocoa, I added a pinch of salt, and some liquid stevia (about 16 drops).  I used your Fat-Free Oatmeal Cookie Pie Crust (subbing date sugar for the brown and natural sugars).  (This pie crust is also a fabulous recipe!)  Thanks so much for another great recipe.

Susan, I made this for Valentine's Day, and it fantastic.  For the cherries, I used half dried and half frozen, and for the crust, I used equal parts of almonds and dates with some cinnamon and vanilla mixed in. Decadent Vegan Chocolate Mousse

350 g silken tofu

100 g 70% dark chocolate (plus extra for topping)

tbsp cacao powder

sea salt (just a pinch)

Melt the chocolate in a heat-proof glass bowl, over a pan of hot water. Keep stirring until fully melted, then remove from the heat to cool.

When the chocolate has cooled, add in to a blender or food processor with the remaining ingredients and blend.

Spoon out and serve in small dishes (we recycled some old candles!). Grate over some extra chocolate for a topping.

Refrigerate to set for around 1 hour.

Easy 2 Ingredient Chocolate Mousse

hot coffee (or tea)

Fill a medium sized bowl with ice and water. 

In a second medium sized bowl, add the chocolate. Pour hot coffee over top, and stir until the chocolate is completely melted. 

Stack the bowl with the chocolate on top of the ice water to cool, and whisk vigorously, for five minutes. It will begin to thicken. 

Remove from the ice water and stir until you get a fluffy mousse consistency. Transfer to bowls or cups and enjoy immediately, or store in the fridge for up to 4 days. It is also delicious with orange zest on top. 

This Vegan Chocolate Mousse is amazing! It's rich, creamy, silky, and absolutely delicious. Gluten free, dairy free, and completely vegan.

Easy Vegan Chocolate Mousse

box (12 ounces) of Mori-Nu Silken Tofu Extra Firm

pure vanilla extract

Tablepsoons of cacao or unsweetened cocoa powder

salt (optional)

Add all of the ingredients to a high-speed blender or food processor and blend until everything is completely smooth. Stop and scrape down the sides as necessary.

Using a rubber spatula, pour and scrape the mixture into a glass jar or container and let chill for 2 hours or overnight. This will allow it to thicken.

Spoon into a small bowl or serving dishes and top with your favorite berries, chopped almonds, chocolate shavings, or a little vegan whipped cream.

The chocolate mousse I've been making lately contains avocados, cocoa powder, chocolate chips, plant milk, vanilla extract, salt and maple syrup.  It's soooooo rich and delicious.  I usually serve it atop a wonderful tofu cheesecake I make.  OMG!  What a decadent dessert!

Oh. My. Yum!  I made a test batch to make sure we liked this before Valentine's Day dinner... I was hoping to keep some for V'day, but I doubt it'll last the next 2 days.  Once Hubby tasted it with the raspberries, he said, "Shane is the frickin' MAN!"  If there's any left by tomorrow morning I'm going to share it with the girls in the office.  Awesome!

I've had that recipe taped to the inside of a cabinet since 2009!  Going to try Shane's recipe first but can never go wrong with Bittman.    His is very sweet, though, using 3/4C sugar to 1 pound tofu.    Extrapolating Shane's 1/3C maple syrup for 12 ounces of tofu = an additional 5t maple syrup + 1/4t + 1/8t.   I converted Shane's recipe for 12z tofu for the 16z package that I have, so each ingredient is increased by 1/3.  I'll review it here later or tomorrow.   Giving it 5 stars because I have a feeling I'm going to love it.

I apparently never made the mousse in August 2020 but in August 2021 I did.   Oh my, this mousse is soooo good!!!!!!!  I used a container of Trader Joe tofu that just says organic tofu and nothing about what type.  The guy in the store said it was silken.  Ha.  Like he knew.  Ended up being soft, maybe medium.  But I see now that it completely doesn’t matter.  Even firm or extra firm would work great.  I used the whole 19z block of tofu and adjusted the other measurements.  This is why we took math in high school!   It was my first try with my brand new Vitamix Pro-750. 
Recipe calls for 12z of tofu so I’m using 7z more ounces, a tad over 50% more.  
•	1/3 cup maple syrup
1/3C = 5T.  Add 2.5T for 50% more plus half a tablespoon for the “tad more” so make it 3T extra + the original 5T = 8T = ½ C
•	1/2 tsp. vanilla
    Add 1/4t for 50 percent more = 3/4t, add 1/4t for the "tad" = 1t vanilla
•	2 Tbsp of cacao or unsweetened cocoa powder
  Add 1T for 50% more + 1t for the tad, so 3T + 1t = 4t unsweetened dark cocoa powder
Tiny pinch of salt
I’ll finish it tonight, just little ole me.  Maybe I'll double it next time.   Later I’ll make Shane’s banana bread.  I’ll use the Vitamix to mix everything, including the frozen bananas.     THIS MOUSSE IS A GIANT WINNER!!   Shane, you're fabulous!

two separate batches now and it just doesnt get thick. it does at the top but not all the way through. this last batch i had to stir it up to get a good consistency but was still not thick enough. would blending it longer help this? love the mousse just not sure what else to do to get it right.

Served this for our Valentine’s Day dessert. I originally saw the recipe using avocado, but I’m glad I found this one. I’m sure both are equally delicious but I wanted more protein and less (good) fat. I served it in low profile champagne glasses and topped each with whipped coconut cream, a few drops of chambord and a 100% chocolate wafer. Beautiful and delicious.

Yum!!! This is just so delicious. My husband thinned it out with almond milk for a chocolate milkshake! I couldn't get silken tofu so used regular extra firm ... it worked out fabulously.

Delicious recipe!.  Just for reference, everything I looked up has 1/3cup Maple Syrup as around 70-80g sugar and 250+ calories, so might be worth considering for those who value such information.  Honestly it tastes good enough that I think it's worth it, either way!

Mine is still chilling but I licked the spatula and it tastes delightful! I only had silken lite firm tofu, but I think it will thicken up nicely if previous experience is any indication; I use it for tofu mayo and sour cream. I might be able to wait until dinner to see. Thanks for sharing!
