How to Make Perfect Whipped Cream

Place the cream, confectioners’ sugar and vanilla in a clean bowl (if you chill it first, the cream will whip up faster), or the bowl of a standing mixer outfitting with the whisk insert.

Use a whisk or a handheld electric mixer on high speed to beat the cream, moving it all around the bowl, until it starts to form soft peaks (or turn on the standing mixer). You may stop there, if that’s as firm as you like it, or continue to beat the cream until it forms stiff peaks (which is when you pull out the whisk or beater and the cream stays in a point, drooping down at the tip). Stop beating at this point – overbeating can cause the cream to separate.

Use immediately, or cover and store in the refrigerator for up to 6 hours. It can be stored longer, but it will start to lose body.

Add powdered sugar and vanilla or whichever flavoring you&#x27;ve chosen. Whip on high for a few minutes. Do not walk away! The cream whips quickly and if over-whipped will become curdled and lose it&#x27;s silky texture.

You'll know the cream is done when soft peaks are formed by as the whisk/beater is raised.

How to Make Whipped Cream and Whipped Cream Frosting!

Mascarpone Whipped Cream Frosting is a thick, stable whipped cream made with mascarpone cheese, heavy cream and powdered sugar. 

Mascarpone Whipped Cream

mascarpone cheese, cold

(296 ml) heavy whipping cream

(65 g) powdered sugar

½ teaspoon (2.5 ml) pure vanilla extract

½ cup (592 milliliters) heavy whipping cream

¼ cup (163 grams) powdered sugar

(5 milliliters) pure vanilla extract

Place the mixing bowl and whisk attachment in the freezer for 5 to 10 minutes to chill.

Spoon the mascarpone cream into your bowl and beat on a medium-low speed (speed 3 on your stand mixer). Slowly pour in the heavy cream, about 1 cup, allowing the mascarpone cheese to turn to a liquid consistency.

Add the remaining heavy cream then increase the mixing speed to high (speed 8-10) and beat it until soft peaks form.

Next, add the powdered sugar and vanilla extract, beating on low until sugar is incorporated. Continuing beating at a high speed until stiff peaks form.

May never make plain whipped cream again! I substituted in 2 T.  strawberry cream cheese for for part of the marscapone and blended in 3 diced large fresh strawberries. Wow, a nice subtle fruity flavor! Served over Ga'teau au Chocolat (which my husband says is French for fancy brownie!).

I made her mascarpone whipped cream with her delicious vanilla cup cakes! It was delicious and not overly sweet,  super moist!  My son even asked if it was a tres leches cupcake because of how  milky flavorful it was and not dry at all! Her recipes are easy to follow so if you’re  new to baking you won’t go wrong! This is absolutely the best frosting ever!  Very easy to make and tastes amazing. I used it to frost a birthday cake for my granddaughter.  I like the fact that it not super sweet like a buttercreme and holds up well for piping. This will be my new "go to"  frosting!

This is a good recipe and you do get peaks stiff enough to decorate the tops of cakes and pies, BUT the whip cream curdles after refrigeration, usually after 24 hours in the fridge. I don’t know if it’s because of the quality of powdered sugar (sifted) and heavy cream I use or not.  I beat until stiff and it’s usually smooth after.

My whipped cream came out perfect with the perfect sweetness level.

The best! I make homemade marscapone and I'm always looking for recipes to use it in this icing is fabulous! Sometimes I use less cream for a studier icing. So far I've used almond, vanilla and orange flavoring. TY for posting it. Oh and I vary the amount of sugar too again depending on what I'm doing with it! I'm not a big fan of buttercream.  I prefer whipped cream, but of course it doesn't hold up well for cakes.  I already had a Mother's Day dessert, but I wanted to experiment with something different.  I looked up stabilized whipped cream and came across this recipe.  It looked way too simple and too good to be true but I thought, what the heck.  Ran out to the grocery store for some mascarpone cheese (ya, it's not cheap) and thought I'd give it a try.  Wow!  I'm sorry, did you miss that?  Wow, wow, wow!!! Super easy.  Like, I made it and still can't believe how easy, and OMG delicious.  Why, why did I not find/try this recipe before? Put the bowl of a standing mixer or a large mixing bowl (glass or metal preferred) into the refrigerator to chill for at least 15-30 minutes (or longer).

Beat for 60-90 seconds until stiff peaks form. Stopping once halfway through to scrape down the sides of the bowl.

Transfer mixture to a piping bag to pipe onto your favorite dessert or into hot chocolate. Or put in a serving dish to serve.

EASY CHOCOLATE WHIPPED CREAM

This is no ordinary Lemon Whipped Cream! This whipped cream is tart and flavored with LEMON CURD!

Lemon Curd Whipped Cream

eggs

½ yolks

lemon juice (from about 3 lemons)

salt

unsalted butter

heavy whipping cream (cold)

In a large sauce pot, whisk together eggs and yolks until smooth and homogenous.

Whisk in sugar and salt very well. Slowly whisk in the lemon juice.

Cook over medium heat, stirring constantly until nappant. Nappant is when you can dip a spoon or spatula into the custard and draw a line across it with your finger and the custard does not run down the spoon into the line.

Remove from heat and stir in butter. Strain into a bowl or a plastic wrap lined baking sheet.

Cover with plastic wrap, poke a few holes and refrigerate until cold.

Make the Lemon Curd:

In a large bowl, whip the heavy cream with a whisk until stiff peaks.

Make the Whipped Cream:

In a separate bowl, loosen the curd by beating it with a rubber spatula. It won’t take much but you want to get it pliable, especially if you are using a stabilized lemon curd.

Take a spoonful of the whipped cream and place it in the bowl with the curd. Mix together. This is called “sacrificing” in baking because you are sacrificing a bit of the volume in the whipped cream to loosen the curd and get it closer to the consistency of the cream.

Spoon all the loosened curd into the large bowl with the cream and fold in the curd trying to preserve as much volume as possible.

Use immediately or store refrigerated for up to one week!

To stabilise whipped cream, I add some mascarpone.  It stays whipped for days.  The trick is not to stir it once it’s whipped otherwise it becomes runny again.  Just dollop it onto whatever you would like to serve it with without stirring first.

Sooo simple and sooo delicious!  Always looking for deserts for my grandson and this one is a winner.  He loves strawberries so I gave him a few and a bowl of this and poof…he is a happy little camper.  I never knew this could be so easy.

This is the best whip cream I've made, it's so easy and I put it in my coffee and then just ended up eating it with a spoon lol. Ya I'm never buying store bought again, didn't realize it was that easy!
